Chorizo sounds amazing!!! And if he can get Sazon at his local grocer, surely he can get chorizo! It may not be the best quality, but it would still be good. I also think that andouille sausage would be amazing
I’ve seen & read that if you’ve ever noticed your “homemade” tortilla chips only staying crispy for a short amount of time & then getting rubbery that means there’s too much moisture in the tortilla’s prior to frying. You may need to first dry them out a bit in the oven @ 200 degree’s for a few minutes, then do the deep fry. Supposedly this keeps the chips freshly crunchy for much longer.
I saw this right before I went grocery shopping and got everything I need to make this this weekend, including the tortillas 👏🏽😋 thank you for sharing!
This recipe was a game changer. I make Rotel dip every Sunday as a reward for myself. I’ve being doing it wrong for so long. The Velveeta, avocado oil, Goya juice, and sausage was an insane flavor that I needed in my life.
The only thing I would do different would be to add the Goya ingredients into a blender and add 1 Tbs of Olive Oil and 1/4 cup of beef stock and blend until smooth. I would then add that to the dip mixture.
I'm from Louisiana. We LOVE everything with a kick to it. I must say your voice, attitude, and last but in no way the least your cooking skills are so relatable. You're a genuine southern country boy at Heart. OOH WEE, you most definitely Make It Happen!
I season the meat with taco seasoning, use Doritos instead of regular tortilla chips, use Mexican velveeta and hot rotel tomatoes and add a can of diced green chilis
Actually, the right way is not to make cut straight down make your cuts like numbers on a clock and then that way you won’t have to do the horizontal cut, which is dangerous for some people. So everybody’s making queso wrong he’s cutting onions wrong.
Love this recipe and can't wait to try it! Here's a tip - The Chipotle peppers that are not used can be blended down - You have to really blend the peppers and/or strain them to keep the skins out. (Unless you're making a big batch, you won't need the whole can of peppers - they can get very spicy) add olive oil, honey, salt, pepper, oregano, red wine vinegar and a splash of lime - you've got one great salad dressing!! Kinda a Chipotle salad dressing copy cat.
Yeah after watching this, I'm definitely gonna have to try it, mine is just usually basic but people liked it.. maybe this time they'll love it... thanks for sharing 👍
I always add a can of chili beans to my queso. I make it just like you did except for adding the can of chili beans. I usually use a can of hot chili beans for added heat.
Hey Matt, I've made this almost every bday party, NFL game, Thanksgiving, Christmas, New Years, you name it and every time it's a fing hit! I used to use your older queso dip recipe which is bomb but this one is even better!
I just made this with what I had on hand and it is amazing! Give this guy some respect! I am liking, following and sharing. You rock. Thanks for kicking off my day for my family.
I make mine almost the same way except I use Kroger brand jalapeño cheese it’s like Valletta but better. I use hot sausage also but add a can diced chilies and can of jalapeños. I put everything in my crockpot and WOW IS IT GOOD!!
@@olripper2700 I am familiar with Tajin. Still prefer straight lime juice. When the chips are still very hot it sizzles and doesn't "wet" the tortillas. Also a little goes a long way. I lightly sprinkle not soak.

@@MrGrandure smoked Gouda, Havarti Sharpe or extra Sharpe Cheddar Perhaps American cheese from the Harris Teeter deli department and they have a great Gourmet cheese selection.. I just don't like Velveeta
I’ve been making it similar to this for years lol. I use small Mexican velveta and large original 1 cream cheese and heavy cream along with same seasoning and spicy jimmy dean sausage and rotel 2 cans 1 drained all in a lined crockpot. If in a real pinch can use jimmy dean precooked crumbles
The seasoning blend he used is the exact same as what is in taco seasoning. He basically blended his own homemade taco seasoning. Paprika, chili powder, salt, pepper, garlic powder, onion powder and cumin are standard in every pre-packaged taco seasonings on the market. If I made this myself I’d probably go that route as well because it’s faster and easier than pulling down each seasoning bottle.
Looks so delicious! Gonna have to try this one. Also, what kind of saute pan are you using? I'm trying to find pots and pans to use that don't have the forever chemicals in them. Thank you
That looks amazing. I’ve used canned chili or hot dog sauce but I’m definitely trying this way. The flavors you have going in there made my mouth water. Thank you so much.
My recipe is very similar, right down to the Hot Jimmy Dean sausage. My extra add-Ins are 4 oz. Cream cheese & 1 can cream of chicken soup (no heavy cream in mine. Everyone asks for my recipe! Just subscribed & can’t wait to see your other recipes!
Mine is rather plain comparatively but I use 1 lb of hot sausage and only one Velveeta. No other cheese. But I then use two cans of rotel. Sometimes three. I love the thinner dip and the extra tomatoes.

Thx Matt, I wanted to thin the Velveeta but I thought the heavy cream would thicken the cheese. Also, how would beef chorizo pair with this combo?
YUMMMM!!! I found just the can of Chipotle sauce.. I always keep it on hand and I buy the Tabasco chipotle too..
Try using Mexican Chorizo in the dip it is awesome
Is there Canadian Chorizo?
He's in the Va. I don't think he has access to Chorizo

EVERYBODY IS SO CREATIVE!!!! Rotel dip is delicious because it is simple.
That crunch on the tortilla chip was on point!!💯
so good! thank you!
A little too thick for me. Chevy’s has the thinnest, best chips (and salsa).
I hate when people say you've been doing something the wrong way, if you're doing it the way you like it and prefer it then it's not the wrong way imo
YES! It's so rude. It isn't wrong it's just different.
