I’ve seen & read that if you’ve ever noticed your “homemade” tortilla chips only staying crispy for a short amount of time & then getting rubbery that means there’s too much moisture in the tortilla’s prior to frying. You may need to first dry them out a bit in the oven @ 200 degree’s for a few minutes, then do the deep fry. Supposedly this keeps the chips freshly crunchy for much longer.

Actually, the right way is not to make cut straight down make your cuts like numbers on a clock and then that way you won’t have to do the horizontal cut, which is dangerous for some people. So everybody’s making queso wrong he’s cutting onions wrong.

Love this recipe and can't wait to try it! Here's a tip - The Chipotle peppers that are not used can be blended down - You have to really blend the peppers and/or strain them to keep the skins out. (Unless you're making a big batch, you won't need the whole can of peppers - they can get very spicy) add olive oil, honey, salt, pepper, oregano, red wine vinegar and a splash of lime - you've got one great salad dressing!! Kinda a Chipotle salad dressing copy cat.

The seasoning blend he used is the exact same as what is in taco seasoning. He basically blended his own homemade taco seasoning. Paprika, chili powder, salt, pepper, garlic powder, onion powder and cumin are standard in every pre-packaged taco seasonings on the market. Have you tried adding sodium citrate to tie-up the casein in the cheese? I use it when I expect leftovers. Makes reheating as smooth as the original. Even recipes with just parmesan, cheddar, etc. spill out smooth, and re-heat smooth. No curdling.

    Looks awesome!
I do have a question or 2. What size can if Rotel? Also, couldnt you start the mixing by spreading out the different ingredients BEFORE you back it?
    Thanks, love your vids!

Just made this tonight and my family smashed! It's really good! But how do you keep it from turning into a block of constipation after it cools? I put the heavy cream in it but when it cooled...paste.

I usually don't care for queso dip, but I'm sold on this one! I'm going to make it for a family gathering in early February. If Mr. Make it Happen says it's good, then damn it it's good! 😂
