How to Make Easy Chicken Noodle Soup Recipe

  • Recipe:
    3 tbs butter
    2 yellow onions (medium diced)
    3 carrots (peeled and cut into 1/4” moons)
    4 stalks celery (sliced into 1/4” pieces)
    4 cloves garlic (minced)
    12 cups chicken stock
    1 lb rotisserie chicken (pulled off the bone and chopped)
    1 stalk fresh rosemary
    10 sprigs fresh thyme
    1 bay leaf
    Salt and pepper to taste
    Parsley to garnish
    Heat a pot or Dutch oven to medium high heat and melt the butter. Add the onions, celery, carrots, and garlic and sauté for about 5 minutes or until the veggies begin to soften. Add the stock, the chicken and herbs then season with salt and pepper to taste. Bring to a simmer and let simmer for a half hour. Add the noodles and cook to al dente. Serve with a sprinkle of parsley over the top.
