I feel the same way, like when they say I made this recipe but instead of this I used that and instead of this I used this instead, well then you didn’t make the recipe you made your own, whenever I find a recipe that looks interesting, I always make the exact recipe, no substitutions, then if I make it again I may make some alterations and use this instead of that!

I was looking for a quick chicken noodle soup recipe yesterday to take to a church dinner after caroling. I’ve never had people ask who made anything that I brought before! I had so many people seek me out to ask questions! As I was leaving a lady said “don’t loose that recipe” so I came back to save the video and thought I’d leave a comment too.
I had to put it in a crockpot to keep warm while we were caroling so I wish I had left the noodles a little al dente since they had to sit a little while before we ate. Besides that, I made it just like the recipe except increased it 50%, and I added a little oregano.

My fiancé bragged about his mother's chicken noodle soup. He asked can I make some I told him I have no idea how. His mom is 81 years old. Bless her heart. She made him a pot. When he brought it home he couldn't wait to share so I could taste it. One bit & he took my serving and said he lost her touch. He looks like a little boy who' s world got crushed. I decided to make him feel better. I found this recipe and when I made it I told him it was soup from our local grocery store. He fell in love with it. When I told him I made the soup he asked me to make it every week. Thanks to America's Test Kitchen I was able to bring back his love for this soup. Even made it better than mom. Wink Wink.

I think your thoughts on celery are the same as the majority of people. My siblings and I hated celery, but now we all love it. I like it's diversity, because the root is a carbohydrate, the stalk is a vegetable, the leaves are an herb and the seeds are a spice. You can literally use the entire plant! It's a valuable addition to any survival garden!

*Don't discard the bones or the skin.* Use them for the soup. You don't need to buy broth. You just freeze the bones of the chicken pieces you eat. When you have at least the bones of 2-3 full legs (6 bones plus trimmings), or 6 chicken wings (plus the other little bones), you put them in a pot with 9 cups of water plus 1 tablespoon of vinegar, and simmer it for 2-3 hours. The cartilage parts will become edible at that point. Strain the bones, and you have a good broth useful for any recipe, including this one. You can freeze it in portions too. I have read that if you brown the bones in the oven, the broth will be golden and tastier, never had done it, unnecessary for my needs.
The skin, you simply dice it and add it to the soup. It's delicious, a bit fatty, it has collagen, it isn't poisonous. Unless you have a medical condition and have it explicitly forbidden, you can eat it. Enjoy!

This is a much better idea than using store bought broth! I don't get recipes like this, I might as well just buy the brand name chicken soup, add some herbs, and maybe some left over chicken if I have it. Adding the chopped skin I never thought of doing, but sounds tasty, and will add a lot more flavor. 👍✌

Crisp up the chicken skin in your air fryer. Put some frozen hash browns on the bottom and skin on the rack. The skin will give its liquid to the potatoes., keeping them moist and flavoring them as they cook. The skin will dry out and get crispy.
      Good stuff.

Also, I put in more carrots and celery, and use 1 onion. I boil
1 whole chicken with a onion, 2 carrots, celery for 45 minutes till

I agree the pasta can make the soup cloudy and far too starchy. I also use WAY more veg and don’t bother adding stock as the whole chicken creates that anyway. That said if one is using a few pieces like 3 here the stock will fill it out with water.

I have to say unless you are going to finish the soup that night the rest of the noodles will be soggy once you put in fridge. I learned that one a long time ago. I agree about the extra pot- but the whole soup will be wasted as a leftover if it gets soggy and blows up into your soup once in the fridge.

When I'm ready to serve, I put the pasta toward the bottom of the mug. I don't even have to reheat the pasta because the heat from the soup does it for me. Don't pre-cook too much pasta because it will turn sour within a few days.

Thanks for browning the chicken idea. Gives great flavor. I also add parsnips and cut up the veggies after simmering in the pot for 1-1.5 hours. Keep the skin on the onion gives great color and just cut in half. Fresh dill is a key ingredient. Wide egg noodles in the soup is decadence. Enjoy.

Well, now I've made the recipe twice, using a pair of chicken breasts. It's delicious! It also doesn't last long enough in the 'fridge for me to worry about freezing it - I end up eating it for lunch 3 or 4 days in a row, it's that good.

Grew up with home canned chicken ( the chickens gotten from the farm after the hens quit laying & MNom canned them) that provided the broth base as well as dried home made egg noodles. Also Mom put in more carrots & celery than this recipe. Finally we grated some pecorino romano or parmigiano reggiano on it after it was put in the bowl.

I'm with Julia on the celery transformation. I grew up thinking of it as a stringy vegetable with no redeeming values. And then, at some point, I developed the ability to _taste_ it.
Same thing with cucumber. I never really saw the point. Then I had a roommate who would often prepare sandwiches for himself, and always with cucumber. I started noticing the smell of the cucumber while it's being cut. It smells like melons. They're botanically very closely related, but my nose hadn't made the connection before.
Next time you want to make yourself a toasted bagel with cream cheese, lox, capers, onion, and dill*, add some thin slices of cucumber. Get the skin off first to really make it a treat. It is transformative. It takes something that was already stellar and somehow kicks it up a notch. And we're talking, like, you buy an average-sized cucumber, and we're using like 5% of that cucumber per bagel.
*I mean, that _is_ the point of buying bagels, right? Oh, except also there's pizza bagels. I love a Neapolitan-adjacent pizza, but I also love a pizza bagel. Come on.

Cream of Celery soup is awesome in the Summer, you can cook it early in the afternoon and let it cool, then ad your Cream or Milk just before serving, nice and cool and YUMMY. Celery boiled for 30+ minutes then blended with a stick blender there's no strings if you cut into 1/2" thick slices, and blend for a minute or two.
If the Strings in other Recipes bother you, use a paring knife on the small end and work the blade under two or three strings enough so you can put your thumb on the strings and squeeze them on to the blade, then then pull the knife toward you as you pull all the way down the stock until they come off...I'm sure there's a video somewhere if you need more info. DeStringed Celery was Mom's thing to do for those Veggie Ranch Dressing Platters that were popular at Party's, or the Celery Peanut Butter or Cream Cheese things.

And celery is a negative calorie vegetable. Meaning it costs more energy for the body to digest it than the calories it actually contains. If that can help giving you a positive opinion about it.

Learned a couple new methods today! Thanks! I've never browned the chicken first, and I don't know why not. Looks like it adds a nice color to the soup, plus it's got to add a nice flavor! I've never used spaghetti either, using egg noodles instead. I'll be trying both when I make the next batch. 🙂

great recipe. In my family and community we make soup in order to make a little protein [chicken] go a long way. I double the veggies, and I like to add leaks. and fill the pot to the top with water. Mostly we start with half a cup of 4 in one dried veg [black lentils, red lentils, split peas, barley] , or just half cup pearl barley; soak the dried veg for at least 20 minutes in 2 cups of tap water and then boil slowly for at least 30 minutes before adding to the soup.

Love this sort of simplified 'real thing". Going for it this week. Adding more veggies because I love them and cooking noodles on the side. I cook for myself only, so having fresh egg noodles--pappardelle are the bomb,i imo (I think adding some cooking water from the noodles might help though). I like that this is a managable amt of soup for one or two people. I see these guides using a whole chicken--just way more than I want to bother with. Also Julie is so much fun to watch, has a love of cooking and food that is so contagious.
