    My next door neighbor goes to Hawaii 2x a year and brings what he caught back to Wisconsin. I have never even heard of this fish. He breaded it and deep fried it to a golden brown..It is the best fish I have ever eaten in my life....He uses the breading they sell in Hawaii... Awesome...

      The guy fillet the hard way turn the fish too much.. chance of cracking are high because the meat of wahoo are softer in compare to the other fish that we have in the Hawaiian water.

      +Pedro Portela All scraps and leftover fish is picked up by local fishermen for bait. Those orange totes are numbered according to which fisherman it is being saved for.

    The wasted belly fillets are very food when grilled.

      +Seth Stark It looks like a Victorinox Knife. From what I've heard its the trade standard for butchers

      Just look up your local butcher supply place and ask them if they have Victorinox knives

      He probably takes them home as one of the benefits of his job. I doubt they are thrown away. Most people know that fish collars are delicious. Someone in the business certainly knows.

      They waste zero meat. It's a business. Every ounce of that fish is being sold somewhere.
