  • The traditional dessert Onde-onde (Ondeh-ondeh) is now being one of the top-selling inspired cakes in Malaysia. Onde-onde is a sweet pandan rice ball filled with aromatic molten coconut sugar we all know and love. Have you ever imagine transforming it into a delightfully version of mini buns? I’ve spent countless of trials and errors, and now it is finally the time to share it. This recipe is specially dedicated for all the muslim friends who are celebrating Hari Raya Aidilfitri. It would be a perfect breakfast or dessert to serve guests at home.
    These Mini Onde-onde Buns are made with everything fresh and natural ingredients from colouring and palm sugar (Gula Melaka) to the mixture to remains its authenticity. The first bite will create that burst of melty and juiciness from the caramelised shaved coconut sugar, while having a soft yet lightly chewy buns on the outside.     SWEET STIFF LEVAIN
    60g Flour
    60g Starter/ levain
    15g Water
    15g Sugar
    allow to rise for 4-5 hours @ 28C (use at PEAK)
    YUDANE
    40g Bread Flour
    40g Hot Water
    MAIN DOUGH
    210g Bread Flour
    30g Glutinous Rice Flour
    All of the sweet stiff levain
    All of the yudane
    12g Milk Powder
    24 Sugar
    3g Salt
    30g Egg
    20g Pandan Extract
    40g Milk
    40g Coconut Milk
    25g Butter
    GULA MELAKA COCONUT FILLING
    200g Fresh grated coconut
    2 Pandan leaves
    40g Water
    130g Coconut palm sugar (Gula Melaka)
    Pinch of salt
    NOTE:
    ⚠️ Bake at 180C @ 15-18 mins or until lightly golden brown
    ⚠️ If you are unable to make fresh pandan extract, substitute to 1/2 tsp of artifical pandan extract
    ⚠️ You may substitute glutinous rice flour to bread flour
    ⚠️ Add 5-10g of milk if the dough is too dry
    ⚠️ If you cannot find coconut palm sugar (gula melaka), just use regular brown sugar

    Hi, may I ask if it is possible to substitute fresh grated coconut with dessicated one?

      In my opinion it will be less moist and juicy, but should work! Feel free to try it

    Hi abby, is it possible to omit the glutinous rice flour altogether? Any modifications to the recipe?

      Glutinous rice flour helps to achieve a uniquely chewy texture and mild-sweetness to the dough. However, if you can't find it feel free to substitute it with bread flour.
