Guys, you won't believe what I did as a "hack" while I was frying my eggs, I put water and a lid over my pan to cook the egg
guys i did this amazing pasta hack where i boiled the water before i put in the noodles
the hacked burger tastes chewier because you mixed in the baking soda and let it rest. To improve the Maillard reaction you should just sprinkle it on the surface

Baking soda (at least a form of it) is used to make soba noodles, which is how they have that distinct chewiness.
And also not put such a gigantic layer of mustard

Maillard reaction forms a carcinogen, so maybe just don't do that at all.

well if you add the cheese on the burger in the pan, put a lid on it, speeds up melting even more because the heat stays
Yes and add a little bit of water before you cover it so the steam makes the cheese melt quicker (so the actual patty doesn’t overcook)

Before putting the lid on try pouring just a little bit of beer on the pan to make cheese melt even better and adds flavor. You also get to drink rest of the beer while eating delicious burger, which is nice.

I’d have also salted them before popping them back in the fridge. It gives it time to draw out moisture from the meat, then it resorbs into the patty over time, resulting in a fully seasoned burger.

The Maillard reaction is a chemical reaction between amino acids and reducing sugars that gives browned food its distinctive flavor.

It's fine if you ground your beef yourself. Doesn't have to be fully cooked
@@Yoreinowashinoka14 nooo if are making steak even if it rare it is safe to eat bc bacteria is gwnerally on the surface but when u grind beef the bacteria mixes in with thw mince which can cause diseases if not cooked through
whenever I see professional chefs make burger patties they always leave them bright pink 😭
The control burger looked way underdone, I don't usually let my burgers stay that pink. I do with steak though. I usually use the thumb hack but i might try putting the toppings on the bottom next time
Whenever you watch chefs make burgers they always look so raw. Like sure, it tastes better but I don't trust ground meat enough for that.

The reason you can eat steak rare but not beef burgers is because generally when you’re making burgers, you’re using beef that was already ground up from the grocery store. Ground up meat from the grocery store is more porous than a steak which means bacteria can penetrate it, so you have to cook it through completely to kill it all. If you grind your own beef and use it to make burgers right away, then you absolutely can safely make a less than well done burger.

Why do people comment about the fact they hate the pinkness? A lot of people like it and if you don’t, just cook it a little longer.
Love the ideas here! I'm skeptical of the baking soda application though.. If you don't brown ALL the ground beef then the baking soda won't completely react with the heat. This can give you a sort of soapy flavor in any meat left un-browned, which in this case would be the center. I love using this technique when making something like ground beef tacos, but here I'm not so sure.
Matt is the bravest guy in the history of tasty for eating that red patty. That, or he doesn't know it's uncooked

That’s called medium rare. Most chefs consider this the optimum temperature for beef.
Im late but it depends. For ground meat, unless you grind it yourself, it’s not completely safe my to cook it medium tare.
For steaks, it’s fibe

I've never tried but some say that eating your burger upside down prevents the ingredients to fall out of it
depends on the burger, since the toppings get pushed out as you bite into the burger.
Won't make a difference with a thin, soft burger. With a thicker one, you can hold your burger firmer, since people usually apply most of the pressure with their thumb when they hold it.

For me, i cook frozen burgers on very low heat with no oil. That way it gets a chance to get browned while the inside cooks through. And less chance of burning it.
I feel that he should have used the same type of bread on both, that changes the taste and adds variables
The ice cubes used were too big, I guess, that's why they melted too slow.

Do not do the fridge one it will make it cook uneven and when you cook it it will firm up the proteins and make it wayy lest tender.
For the ice cube hack you have to put it on top of the burger then you flip it so the ice cube is melting inside the meat and is directly on the cast iron and give it a try its definitely worth it !

This made me crave a burger.
I used to have a patty shaper that basically worked like the two deli containers hack. it was a tiny metal container with a lid and some lil holes in the bottom. So you pushed with the lid and then the holes made so it doesn't get stuck
Nice ideas. When I want cheese to melt on a burger, I put the cheese on a little before it's time to take it out of the pan, and cover the pan. Covering the pan as soon as you flip also insures melting in a grilled cheese.

In Germany, we mix the mustard in the patty and dont put in on the top.
I love pretzel buns! Brioche buns are excellent choice too. I like my buns nicely toasted buttered. And rubbed with little garlic after toasting.

1. Resemble the burger in reverse
2. Toast the bun in leftover fat

When mixing the meat, drip water while mixing can help meat preserves more water volume. It makes the meat juicy if so preferred.
One can also add drips of wine to keep meat tender. Don't over do it though.
Think I will cut the lettuce just right to cover the burger patty from the lower bun. As a barrier for the home made Teriyaki Sauce, will squirt it on top of the lettuce and place the beef patty there. 😎
For the ice to melt quicker, you need to cover the grill pan with the cover, so the trapped heat will do its work.
Think watching the hacks or quick fix cooking methods, it given me some ideas 😊

All those hacks are just the right cooking practices for burguers. Also you’re supposed to put a small piece of ice after you flip them or keep them covered for moisture
