I love Rie and so many of these pie hacks I have incorporated into my own apple pies over the years. Found them through trial and error. Thanks, Rie! My mother always used tapioca as a thickener and I have never used anything else. I use a butter and shortening. I use a combination of white sugar and brown sugar for my apple pies, along with 1/8 tsp. ground cloves. (Cinnamon, nutmeg, cloves. My triumvirate of pie spices.) Also add butter and a bit of lemon juice to my apple slices. My apple pie is flavored to be served with whipped cream or ice cream, so I make it right on the edge of tart/sweet, with plenty of spice.
Would you please share your recipe ingredients by how many cups or grm you are using in your apple pie. Thank you

I use crisco butter flavored shorting instead of butter in my crust it has alot of flavor and comes out flakey everyone loves it

I never understood using the most tart apples possible and then having to load up on cups of sugar, when there are SO many naturally sweet apples out there! I almost always use fuji, pink lady, and honey crisp when I can. :)
Lots of good hacks here! The rolling between layers of wax paper, apple cider vinegar reduction, and tapioca flour will definitely be used from now on. 😊 Oh yes, and I always add cinnamon and sugar on top, SO good. 😋

*Very using hacks! I know some of them. But... I know much more now :)*
I've never done this myself, but I've heard of some bakers using lard in their pie dough, as it behaves like vegetable shortening but doesn't contain artificially hydrogenated oils.
My mom and grandma were excellent pie makers and they always used lard. Mom said it gave the best results.
Rie, the "rotate the pie dough with your hands" hack is not even required when you use flour! If you know anything about India [or you could ask Steven or Niki about this] we make roti and we don't even use our hands basically. All we do is we dump flour on a piece of paper [to save the rest of the unused flour] and then we take a dough baby [doughbie!] and a flat rolling pin [not the ones that bulge outward towards the middle]. The doughbie is squished into the flour and rolled evenly and with no force. NO FORCE AT ALL! What happens is that the flour keeps rolling underneath the doughbie helping it to spin without you using your hands to rotate it. The doughbie expands by itself too, so it becomes a roti before you realize. Just keep dredging the doughbie disc thing or it will stick and tear.
