Exactly! I used this Wilton quarter sheet pan, it's 9"W x 13"L x 2"H. amzn.to/3IbzUFZ The final dimensions with the icing and fondant are approx. 10"L x 7"W x 4"H.
I'm not sure what you're asking... I let them settle before I frost them because as the cake settles, it pushes the filling out of the sides a little. I like to let that process happen before I frost the cake. Or are you asking why I let it set up in the fridge before I put the final coat of icing on? I do that because it's easier (for me) to frost a cake that has a cold crumb coat so it's sturdier and holds its shape. If you're in an area with high humidity, unfortunately, cakes that are refrigerated will sweat a little. When it's hot and humid here in the Summer, I keep the air conditioning in my house on BLAST. It's cold in here, I have to wear a sweatshirt! And same goes for my car for deliveries. I keep it freezing!
