Sadly, my mom made a version of this like 30 years ago - but she make ‘Chicken Chilaquiles’ this way which was layering the chips with a shredded rotisserie chicken and enchilada sauce with little cheese then finally topped with cheese and baked - it was pretty good - but NO milk or salsa or dumping cheese and then mixing it that’s even more lazy than what you started out with!

As much as I love your facial expressions when watching Jack do his thing- I think the Epicurious ones are my favorite reactions. It's quite surprising to me that the professional chefs make a fair few basic mistakes. This year, my big cooking goal is to perfect my homemade ravioli- I don't have a pasta rolling machine, so at the moment my pasta sheets are still a touch thick, and the dough is a little gummy after it's cooked. Definitely edible, but not fabulous either!
Happy New Year, James! I like the way you're able to dial back Uncle Roger from time to time, because he is so good at taking "Pot shots" 🤣 Adding your expertise in a way that is open to new things but still honest about basic cooking fundamentals is what makes your channel successful!
