      Regarding waste: I abolutly agree with you not just with food but with everything. Explaining this to an American... whoa good luck with that! The frist reation would be that it was an investment for the views, like, monetization or whatever. This bothers me so much!

    You hit the nail on its head. The worst thing about these "funny" gimmick tik tok videos are the food waste. As a kid I knew what hunger felt like and it absolutely disgusts me that I see people wasting so much food just to make a 2 minute video that no one really appreciates.

      I really hate people that say "chill it's just a video". I actually commented something similar on a tiktok trend where they wasted so much dog food for a stupid prank. Then showed that oh they just vacuumed the food to clean up...
      Was told to lighten up and take a joke. How can I take a joke when they are wasting so much food and there are families out there that are struggling to have 2 meals a day...
      And you know what, there are dog shelters out there that can't afford to feed the animals they have...it happened so much back home and they would even show on TV dogs in cages that were starving or that were being put down because they didn't have enough food to feed them.... All of them were appealing to people to either donate or come to adopt a dog so they don't have to kill so many...

      Growing up as a southerner in the south eastern United States this waste makes me angry and disgusted, when I grew up we used everything when we slaughtered our animals on the farm or when we hunted. Deer and other game leftovers (Hooves, eyeballs, connective tissues, etc...) went to the dogs so not to waste them, generally we'd boil the bones and cartilage/joints to make gelatin/paraffin...as I said we used everything and if something went bad/spoiled we composted it with the garden leavings to make fertilizer.

    My chemistry teacher made sure to tell us, everything is a little bit soluble, even when it’s not labeled as such to /some/ degree it is. Can you imagine what is being leeched from that Doritos bag into the food 🤢🤢 with all that heat and and the water

      On one hand we have the "5minute crafts" content farms owned by a handful of people, on the other we have theories that a lot of these bad cooking tiktoks are on some level of fetish. The awful ones also rely on outrage to get a lot of attention.

      unless it's a "natural" peanut butter, and it's left to sit for a bit. in which case the oil will have violently separated. and then you just mix it up, and it's nearly runny (depending on which brand).@@auroragb

    About the chicken, you ABSOLUTELY don't need 5lbs of butter. I think I used 1.5lbs of compound butter (didn't make a mess by adding oil) to butter a turkey, which obviously is MUCH bigger than that chicken.
    I think Chef Jean-Pierre used TWO pounds of butter in his whole turkey video a few thanksgivings ago (and he LOVES butter), and he slathered the stuff on the whole 27lb turkey with a spatula.
    To paraphrase Uncle Roger: if you use more butter on chicken than even Jean-Pierre uses on Turkey, you f*cked up.

    My grandma who was literally a mycologist always told me that you dont wash mushrooms but you clean em with a brush for example. That worked even well for the ones we collected in the woods.

      Clean them however you like. Even a five minute soak only results in insignificant absorption of water (Harold McGee, a renowned food scientist performed this test for The Curious Cook in 1990 and the mushrooms gained only 1/16th of a teaspoon of extra water).

    Chef James is sort of the anti-Gordon Ramsay. Ramsay will immediately scream and call these people morons and Chef James, even on the most absurd ones, is still somewhat courteous. "I don't think this is going to turn out nice at all" is probably the most gracious think anyone could say about that pasta dish. 😂

    I completely agree with you about the wasted food from these TikToks. I have always had a problem with people wasting food. It has always bothered me. Unless something is completely inedible I never throw it out, so it does bother me to see so much food waste on TikTok

      I commented on one of James other videos that he has a very good manner in pointing out when someone gets something wrong and politely suggests that they could have taken a different approach (i.e. the right approach). I think it was one of the Jamie Oliver videos when James was obviously trying hard not be too critical, while Uncle Roger was completely roasting Jamie.
      This is the first video I've seen where James is finding it really difficult to conceal his incredulity at what he's seeing, he didn't actually say WTF, but at least one point he definitely mouthed it.

    Regarding washing mushrooms, ive seen this put to the test, people have weighted mushrooms, absolutely drenched them, patted down and weighed them again. The result was effectively 0 water absorption. No problem with washing mushrooms, just do it before you cook them.
    The Doritos bag hack is even fishier then discussed: maybe its the light, but I think I see some browning in there. You would not get that at those temperatures, and in that wet environment. I also think it would have been a solid mass, not broken up like that. I think she performed this "Hack", then cooked something separately, put it in a Doritos bag, and said it was the results. Which would mean she tried to cheat to make the Dorito bag meal look good, AND THATS WHAT SHE MANAGED. WITH CHEATING.

      Oh absolutely. If she boiled the meat in a bag it would have been grey not brown and the onions would still be visible too as they would not have charred. But I already knew these videos were disgustingly fake so it did not surprise me.

      I actually do ground round in a vacuum bag in boiling water, the philosophy being, if I'm going to sauce it up and spice the daylights out of it, why bother browning it?
      Not going to notice the lack of flavor from a missing maillard Reaction, in that mess, right?
      But yeah, that's exactly how it comes out: A grey lump. Does make it easy to drain the grease.

      It wasn't really that the meat had browned. Remember that she threw a whole jar of queso and a bunch of taco seasoning in there. When you mix those together, it becomes brown. Then that prettyvmuch coats everything. Even the Doritos in there had kind of soaked it up. Only some of the eggs stood out and that's just because they hadn't been beaten before being added.
      That disgusting mess looks prettyvmuch exactly what I'd expect from those ingredients.

      Harold McGee wrote about washing and weighing mushrooms in his book On Food and Cooking. But even unwashed mushrooms start out full of water; thorough cooking removes it.
      Regarding the Doritos, I bet her grandmother also taught her to put salt in pasta water to make it boil hotter. Anyone can check that with a thermometer. A chemist can calculate how much salt it takes to raise the boiling point of water by a degree. It's a disgustingly large amount.

    Hi Chef! A lot of these TikTok hack videos are just rage bait so that people comment and interact more with the videos (Rick Lax has a company dedicated solely to this), and it's sad because of how much they waste. Being in Colombia a lot of people here can't even enjoy 3 meals a day and seeing this enrages me way too much. Either way, thanks for all the cooking tips!

    This came up on my FYP and I'm really glad. Your voice is soothing, you're incredibly kind, even when describing absolutely disgusting food, and i thoroughly enjoyed the video. After being with my husband for almost 23 years and seeing him cook at various restaurants during that entire time, it's refreshing to see someone who understands food safety make an informative video like this. I wish I could show my husband your videos but he passed away from stomach cancer last year...     There is NO WAY the beef got that brown being boiled in the doritos bag. Also, you could brown the meat and do the taco seasoning in a pan and then add all the other stuff by the time you'd get the water boiling and start the 20 minute timer for the bag.

    If those TikTok videos annoy you, might I recommend the UA-cam channel “how to cook that”. She has a ton of videos debunking those types of videos even going as far as replicating them and going into detail why it doesn’t work.

      Been a long time since I watched that channel, but there was one video that always stuck with me. Basically debunking someone turning hot caramel into some kind of candy floss using a hand mixer and using saran wrap as a guard to protect yourself from it. When she replicated it, the plastic wrap melted instantly and she went into detail about some people that tried to copy the video and got serious burns from the caramel being flung at them and sticking.

    I too was taught not to waste food intentionally. This was even more so with meat. I remember my dad saying, "An animal died so you can waste it." That has always stuck with me. I am not a vegetarian, but I am mindful of the lives of the livestock that were sacrificed so that I can eat. I am very hesitant of sending food back for minor things.

    I grew up poor and in my entire life money has never come easy. Food waste is personally infuriating to me because I've known countless times in my 30 years of life what it means to be not just hugry, but starving. My mother was a chef at a country club, cooking for people vastly more wealthy than she would ever be, and at home she struggled to put food on the table.
    People who waste food to this extent are genuinely despicable to me. It makes me wonder how privileged and entitled these people's upbringing must have been to be so grotesquely wasteful.

    the Dorito bag one: what you didn't pick up on was the browning. in no way could the meat have browned. so they must have cooked it outside and put it in the bag afterwards. I also highly doubt a Dorito bag can withstand any form of heat

      Here in the UK we always thought it was weird when we were kids but you couldn't get peanut butter so we didn't know. It's just fruit and nut, works well together. I do like peanut butter and honey on toast, never tried it with banana. I get the natural peanut butter that's 100% peanuts, it's not as sweet as other brands but honey is sweet enough

    Peanut butter is really good for different sandwiches: pb & strawberry jam, pb & honey, pb and sliced bananas (you can add a little honey or maple syrup to the bananas). Peanut butter also makes really delicious cookies. There’s a gluten free version that uses peanut butter, eggs, and brown sugar. They’re really soft and tender. There’s also fluffernutter sandwiches where you mix peanut butter with marshmallow fluff (the marshmallow mixture before it’s put in a pan and cut. Fluffernutter also is really good as a cake or cupcake topping.

      Came on here to say this, I'm sure you know this but for those who don't it's called a "break." I've known a few guys to call totally different stuff a "break," probably depends on what prison you went or the region it's in, what it is specifically can mean a few different things. One I know involves cooking ramen noodles together with Doritos and other miscellaneous stuff, but I've heard of guys using Fritos or something else entirely.

      I used to work in administration for a state prison system. Occasionally line staff would share offender recipes they’d encountered. The ones I’ve seen/heard of can be ingenious, but impossibly time consuming under more normal circumstances-like scraping the crème filling out of dozens of generic Oreos then mashing it up with peanut butter to make cake “frosting”. It works(ish), but if you have access to actual ingredients you’d never do it-except for a TikTok video, I guess?

    One of the worst things about these kinds of TikToks is that a lot of them are fetish bait. For example, the butter one where there’s a woman handling a white sticky substance, slapping the raw chicken, inserting things inside the chicken, etc. is definitely a prime example. I don’t know who’s watching these weird food “hacks” to get off to, but clearly it’s working for them because they get thousands of views. That plus the food waste is just disgusting to me.

      I totally agree. When it’s young women playing with food, often with a sidekick saying, “ohh woww,” it is clear it is not just a troll but meant to fit a _certain genre._ Some of these videos even have insane non-kitchen items that can be seen in a drawer or in the freezer. I’ll leave it at that.

    Feeding the dog in the second video or soaping the chicken in the third are prime examples of rage baiting. You see these things, get angry, leave an angry comment, send it to your friends, some platforms let you dislike; all of these are interactions and cause the video to be shown to more people.
    If we want them to go away, we have to ignore them😢

    The guy from La capital did the deep fried turkey thing and took several precautory measures, like calculating the displacement volume of the turkey using water prior to prepare the oil and shutting off the fire completely while lowering the turkey into the boiling oil, so far seems the best approach to this dangerous idea

    After going down the rabbit hole of bad cooking videos, I never realized how many people were absolutely horrendous cooks..
    It makes me so grateful to have grown up with a dad who is an excellent cook.. he kind of ruined me tho because most of the stuff he makes tastes way better than anyone else’s food and and better than restaurants so I don’t even like going to restaurants except for places that have food that he doesn’t cook.

    We have something in the midwestern US that we call "walking tacos," which is similar to the second video from this, except you cook the beef and THEN put it into the doritos/fritos bag (and normally a smaller bag) with cheese and jalapenos or whatever else you want to add.

      Yeah, it's just a "build your own taco" set up with meat and cheese and everything only instead of taco shells you have single serving bags of doritos/fritos/etc. It was quite popular when my niece and nephew were playing soccer as a post-game or post-practice meal because it was pretty easy to set up (just prep everything and put the hot ingredients into insulated carriers or a crock pot if you have access to power on site) and very little to clean up since you just throw away the bag when you're done, and the kids felt like it was a treat because they were getting to eat chips for dinner.

    James, I spent almost 20 years I. The industry (FOH though), and you're one of the most relaxed chefs I've ever seen. And that's on UA-cam watching tik tok "hacks". I'm impressed.
    Btw, I watched a video from Epicurious (I think) where they essentially boil mushrooms first to fry them. Works incredibly well and you need a lot less oil.

    In France, PB&J sandwiches are considered really weird. No one eats that.
    We eat jam mostly with simple butter ( salted butter in certain regions like Britanny). We also eat a LOT of spreadable chocolate, like a chocolate paste. I don't think it's very popular in the US but in France it really is. I'd say peanut butter is pretty rarely consumed.

      Cooking inability is what these TikTok clowns do. Ordinary people who aren't setting out to destroy food in new and creative ways generally just lack experience and some times patience. But anyone who isn't a malicious TikTok clown can learn how to cook. Start out with boiling, salted water, add pasta, wait ten minutes, drain water. Season to taste with ketchup. Congrats, you've made student pasta. You are now a better cook than 99% of TikTok.
      Next step, make a better pasta sauce than ketchup. Novice version involves frying some mince in your oil of choice (sunflower is fine) and adding Dolmio sauce. Slightly better version involves cutting onions and maybe a carrot and a bell pepper, frying that off first, then adding meat and letting that fry, then adding a can of kidney beans and two cans of tomatoes and some water, stir a bit, and letting that boil softly for half an hour. Skip the meat and add more beans and peppers for a vegetarian version. Cut some chilis of your choice if you want heat.
      And once you're doing this without burning anything, you're really at the point where all sorts of experimentation can happen. And the sauce works fine with a bunch of other things than pasta. Potatoes. Rice. Bread.

    One of the best turkeys I have ever made was lemon rings under the skin with lemon wedges, carots, onion, thyme, rosemary and sage in the cavity and then a gentle herb butter coat (very thin but even). The skin got a beautiful , even crusting and the flesh was incredibly tender and moist with just a slight brightness to the meat. The best compliment was from my aunt-in-law who said it looked like a Norman Rockwell painting it was so perfectly done.

    This is all just clout bait, chef. What's weird is that alot of these "hack" videos are made by people working for just one dude (I don't remember his name but he was working with some washed up magician too). Also, alot of this is "coincidentally" catered to people with wierd fetishes like that one lady who was making punch in a toilet bowl, she probably knows these people as well, it's like one umbrella organisation.

    To be fair to the fried turkey mess containment system, they were already doing it on their wooden deck 😅 not sure the extra tinder is gonna make it to much worse anyway.
    Speaking of poultry and fire hazards, the butter encased bird is actually somewhat dangerous. The meats got a ton of juices on its own and adding waaay to much fat is just asking for a spill into the oven when things start liquifying. I actually was renting a room in Philly when I was young, where one of my roommates wove bacon around their turkey that ended up causing a fairly bad fire when they bacon greese overflowed the pan.
    Pretty sure the detergent chicken was a troll but I still couldn't help but to grimace 🤢🤣

    Currently training to start working as a chef and you say the same things as my teachers do. It's more often cleaner, cheaper, faster and more healthy, especially if making batches for over 4 people. And if i add the tools i now have access to that would be an understatement... Loving your videos, good tutorials and a bit of a hug when it comes to social media foods...

    The creators of these kind of Tiktoks deliberately create disgusting recipes and do revolting stuff like letting animals touch the ingredients, etc, for the sole purpose of attracting hordes of outraged comments which creates engagement, thus bolstering the video in the algorithm.

    In the Netherlands we often eat peanut butter and chocolate sprinkles or cucumber on our bread.

    As a decent enough cook myself, i find it amazing that you have to talk people through some of these basic, "what not to do's"....the look of shock on your face when you see some of the methods is priceless, my personal fave is the salt in the boiling water outside of the Doritos bag 😂
    In all seriousness though it's worrying that these skills are not being passed down through families enough to the generations. And im only 43. It seems that has been totally lost in translation to some of the videos creators which we are watching
