    early is on time, on time is late. if you go to work with the mindset of making the guest feel as of you were hosting a dinner party @ your house, not thinking about the monetary gain.. just genuinely care about their experience. the money will follow.

    The best way to avoid the drama with staff in a restaurant (he is soo right, there's going to be childish drama going on at ANY restaurant) is to keep to yourself at first till you can get to know how your other coworkers are. This doesn't mean not talking at all, but simply don't say anything you wouldn't mind the whole restaurant knowing. Some may seem nice at first and you'll then get to know they aren't. Just be careful and stay professional!

      eye contact is very important and never roll your eyes when spoken to. This might seem a very simple common sense but I have experienced it a few times that some waiters/waitresses can be so rude.

    Don't forget to smile...
    a guest can sense your true mood. if your having a bad day, have personal issues outside of work. leave them at the door. talk to people like their people, not children. don't say "no problem" when they ask for something. it's your job, it shouldn't be a f****** problem. anticipate needs before they have to ask for something.

    Have just started work after 5 years being unemployed, in a restaurant, all of what you said has been my mindset, ironed uniform, connection with the customer, going the extra mile to make sure they have the service that makes them come back for more and yes I feel my co-workers dont like me, one asked me Why iron your uniform? I want them to like me and I want to be the best at my new job, I cant see a middle ground

      I just started serving not too long ago, but I’ve experienced great management and training - your coworkers are just that: your coworkers. While restaurants function better in a state of homeostasis and team work, they rarely are functioning at that state. Do not let yourself get caught up in the “work drama.” Cherish your good character, work ethic, and be genuine. Restaurant staff and patrons are similar in that they come from all walks of life. Do not let either of those groups make you feel inferior, and don’t feel pressure to be “best buddies” with your coworkers. If you want to, great, but I think the only requirements are working as a team with them, and doing what you can to make their lives easier without throwing yourself under the bus or into overload.

    As soon as you started to talk about the 2nd tip on the list, my mind jumped to Spongebob. Now, I don't know if you've ever watched the cartoon, but there's this one episode in which the spongy fry-cook has to act as a waiter in a fine dining restaurant. He's told to forget everything but fine dining and breathing, and when a customer asks his name, his brain basically explodes. Great video by the way. Very helpful for someone who hasn't had much experience in the front of the house.

    • @XavierGuillaume
      @XavierGuillaume 8 років тому +2

      It's been going really well. It is super fun, but I am always learning a lot. There are just lil things that still confuse me, like whether or not I should interrupt someone who has been speaking for 5 minutes and hasn't stopped, and I just want to ask the table if they want dessert or coffee. Or knowing the right queue of taking someone's plate because some people get really mad if you take their plate, or even if you ask if you can take their plate.

    • @TrueGritProductions
      @TrueGritProductions  8 років тому

      +Xavier Guillaume some people speak for 5 minutes, that's their thing and it's the table's job to shut that person up, or you can directly interrupt the person and say you wanted to see if they'd like dessert or coffee then run away if they say no

    • @XavierGuillaume
      @XavierGuillaume 8 років тому

      ***** Thanks. I'm learning to just interrupt them if I notice no one is going to stop them from talking. Interrupting seems less awkward then standing there at the table saying nothing while everyone ignores me.

    Great advice! While I don’t ever, EVER recommend lying or being dishonest to customers (no one else, either) it is easy and painless to make them feel special or “in on things.” If a customer asks you about a 6oz sirloin that you know is small and bland- tell them! :) Say something to the effect of, “The menu item is exceptional , however, it does shrink considerably in the grilling process and could be more flavorful- I recommend the 8 oz, peppercorn crusted version with some melted butter on the side instead.”
    Not only will you upsell and increase your earnings, but their satisfaction is increased- learning to kill two birds with one stone is an important thing to learn in this business.

    dont forget to close the deal. some customers like a friendly engaging waiter others dont mind a silent and stoic waiter who doesn’t seem too happy.

    • @TrueGritProductions
      @TrueGritProductions  4 роки тому

      There's a breakdown of those 2 types of people. On the one hand, there's the person who appears to be happy and bubbly. Some people are truly like that, while others are merely full of shit and if you as the guest don't respond back in a similar manner, this type will often turn aggressive towards the guest as the bullshit act is perceived as not being accepted. Then, there's the person who's legitimately happy and bubbly and no matter how the guest responds, they will still be positive. On the other hand, there's the waiter who appears serious, which can mean that they are just the quiet type, or it can mean they are unhappy. What it all boils down to is kindness, patience, and respect. Those traits will reveal themselves in time through interaction with the waiter and expose their character. This is why a guest will appreciate any type of server as long as the server is focused on serving the guest in the most diligent manner possible.

    • @TrueGritProductions
      @TrueGritProductions  9 років тому +1

      Could just be anxiety. Exercise and eating better helps me. As an extreme case one could get Xanax from a prescribing physician but only long enough for a person to see how they can be better and less anxious, then gradually stop using the meds. I've done that with Xanax before, not for serving, but used it for a period and then got rid of it once I realized in the end, you have to find your center and control your breathing.

    whoever said this was bad is crazy. More servers need to learn from you. Another tip: If you're serving people with teens or if you're serving young people, give them a to go cup of whatever soda they have (if it doesn't cost anything) when you give the check. This won't be good at some restaurants but if you can, it is appreciated by guests

    Ah well I see a dining experience as an opportunity to entertain someone or fulfill needs that they might not be getting fulfilled elsewhere. Little things like making a lighthearted joke or observation, feeling the table out and looking for ways to start a conversation- these are the things that raise check average and tip average. I used to see my job as a quiet ninja there to get them food, but now I see myself as a tv show host getting them the best food on the menu and heartfelt joy :-)

    I think the most important thing is to start serving, anywhere. Getting that experience, how to manage 3 tables at the same time while assisting teammates, is going to get you your waiter chops best. Then once you establish yourself as a competent server anywhere, then you can size up the playing field and start applying at restaurants which are a little better or expensive than the one at which you're currently working. Then just keep climbing that ladder to fine dining, big money

Also, I've worked in the food industry for 8 years and sexual harassment is a big thing haha. I personally have only seen one time when a co worker got in trouble with HR and was fired for that, but all the other times no one seems to be complaining about it because it helps us have fun and get through the day lol. I also agree with you about it being like 'high school'

      Syed Ahmad AlAttas As long as they are not hammered drunk, your goal is to keep them drinking. Make sure to card them of course, and do it tactfully. If you do it right people think you're saying they look good. Remember that drinks are where the money is because they require very little work and people will sit and drink all night under the right conditions.

      Syed Ahmad AlAttas Go to bartending school. Usually they cost a couple hundred bucks max, you get your liquor sales card depending on what state you're in, and then you have forced yourself to learn how drinks are made. After this, the trick is to cook for yourself more and start learning the base ingredients in most dishes, how food is prepared. This will give you a much deeper, functional understanding of the various beverages and dishes, rather than a rote memorization of them which your brain will then dump after cramming the info. Functional understanding of ingredients and how they work together will also help you down the line when your restaurant runs out of things late in the shift and then people want this or that, and you don't have it which puts you in a bad position as well as the patron/guest, so you'd want to be able to offer a suggestion for a substitution and with a functional understanding, you won't have to think hard about it.

      +TrueGritProductions I just started at a four diamond fine dining steakhouse last week. I love it and it was a hard job to get and I feel like I will do very well, but do you have any pointers specifically for my situation?

      Don't apologize to me, ever. The best thing for any good waiter to do is to start their own business and apply their customer service and business skills from selling people tailored and featured menu items, and apply that to a product that is in need by consumers. One idea... Why not run a doggy daycare and start by getting leads from Rover.com, that's just one idea. Or anything really, but the restaurant is a death sentence and you can't make managers be fair or co workers not be douche bags or cunts. Blessings

    That whole drama part was so true. The advice I would give is to just be nice to everyone and work hard and no one will have a problem with you.

      +Kylar Keaton I disagree, but then I don't see most waiters talking shit to you or coming at you for certain politically correct reasons. I personally worked very hard, was nice/neutral and kept to myself when not actively assisting other servers, and many of the female waitresses and trendy male waiters hated my guts likely because I didn't small talk them and they knew I was a better and harder worker. I could speak 3 languages and waited on English speaking, Spanish speaking, and Russian speaking guests some of which said I was the best waiter in Los Angeles. I quit waiting tables even at really nice restaurants to be self employed because I didn't want to deal with that, and the precipitating event like the illegal immigrant kitchen staff threatening one of our best food runners saying "I should cut you" after the illegal stole the worker's bicycle first, then got fired, then eventually, deported. But then I guess according to what you're saying, the food runner should have just continued being nice and working hard, and there would have been no problem, even though his only way of getting to work was stolen from him. I quit because of that, and the guy who got threatened quit a week later. He was one of the best, hardest working people we had, paid his taxes, and he had a college degree and was yet still working for minimum wage, and he couldn't even be safe at work. This is the real America that everyone is trying to cover up and silence. And by no means anywhere close to the first time I saw property destruction or violence at separate restaurants by immigrant workers. Many were deported, fired, or arrested in numbers far higher than any native born American worker there. To be honest I never witnessed an American worker stealing other employees' bikes, breaking the restaurant and its dishes to bits, or vandalizing the place because they didn't like something. Nope, that was all the south of the border crowd.

      +TrueGritProductions I didn't say what I said to argue anything you were saying lol I was just adding in extra advice. But for the stolen bicycle example you are right that being nice wouldn't help anything. But to be fair right now I'm mainly a busboy/host so me working hard means happy servers and whatnot. I would however say that if you are dealing with illegal immigrant coworkers that are stealing from you that there is no advice to give except quit lmao

    • @TrueGritProductions
      @TrueGritProductions  8 років тому +2

      Kylar Keaton As a busboy/runner being nice to everyone and working hard is actually a good thing and many servers will appreciate it. But once you become a server then the game changes and people start to become very competitive because now you're all vying for the best sections and shifts. Don't think being nice on that level is going to work automatically. And if your restaurant doesn't have an automatic tip sharing system you can count on servers not tipping out either. Being nice and working hard only works when there's not big money at stake/steak :) But yes one should work hard and be a good person, but the nicer you are as a server, the more other servers will never help you, and will expect you to do their jobs for them.

      Roman Sedano Well when you're a 6'4" white guy who doesn't go around kissing ass, minds his own business and works harder than most people in Los Angeles, some people are gonna hate you. I waited on Russians and Mexicans in their native language too. You're on my video. Go ahead guys keep believing that being nice is going to get you somewhere in this world.
