Just an extra tip - before putting the pita in the oven, put some water or milk on the top, it stops the pastry from drying out in the oven, keeps it nice and soft and not too crusty. My yiayia taught me this trick.
Tyropita and Spanakopita are always big hits at the Greek festivals, during the summer (Both are good, but I prefer Tyropita). That goodness just melts in your mouth, when you eat it hot.

Here in Australia, we have great feta, but we pay dearly for it, meanwhile, we have relatively cheap ricotta and cottage. To be honest I will blend feta with one of the other cheeses in equal proportion for economies sake, and use a couple more eggs to bind the softer blend . This blended method is straight out of my Mother's hand written cookbook. This is the only Greek cheese pie that I have ever known. @@augustbliss Rhodes is a beautiful small island, stunning in fact. You could get round it by car in a day probably! I love Greece, I've been to a few islands/areas now. Luckily I live in England so it's not too far to travel to Greece for us, couple of hours and I'm there.. 😍🙌 You must visit someday, you won't regret it. Crystal aqua waters, beautiful scenery, great culture, lovely people and wonderful food! What more could you want! 🇬🇷♥️
I went to Athens in January and had this in a coffee shop. The trip was amazing but this dish was a highlight, thank you for the recipe cant wait to make it and relive a piece of my trip.

How the heck did they used to make filo dough by hand. Now with machines it seems simpler, but back in the day they had to roll it paper thin by themselves. Seems like a lot of work, but it is so worth it. Thanks for this video.

My grandmother would make her own filo dough. I’d watch her as she stretched it out on a chair and aid olive oil and butter. Incredible. She made it look easy. Grandma was a Macedonian Greek while grandpa was a Macedonian Slav. They came from Strumisa. Her Moussaka with eggplant and ground beef was first rate. No one in the family could make better.

Thanks for the great question Cherokee! The main difference is the tyropita is made with a feta egg mixture that’s baked while the feta wrapped in phyllo is straight up cheese and fried.

My yiayia from Thraki used to make it extremely special and twirl the filo in to rolls in a round tapsi and then bake it. We would love it ☺️ so since we are isolating now I told my husband Ill make it tonight and see how we go, got all ingredients on hand 😄

Actually there is such a thing as too much olive oil. Tyropita and any other pita should not be soaked in oil, the fyllo must be relatively dry or otherwise it lies heavy in the stomach and is kind of gross. It's a matter of taste though, just expressing my opinion, you did a very good job in explaining. Χαιρετίσματα από την Ελλάδα!
