*psst* when making stuffed shells, lasagna, or manicotti there is no need to preboil your noodles. Add 1 1/2 cup water to your sauce and cover with foil. It will take longer to cook, but, especially with manicotti, so much easier.
It's so crazy that you posted this. I made your lasagna recipe for my family when I visited for yule and they all loved it! Even the meatiest of meat eaters. lol I've been craving it ever since and bought ingredients two days ago to meal prep another batch for my husband and myself. This look very similar but without the meat crumbles in the sauce (which I suppose you could add if you wanted). Anyway..anyone contemplating trying this..do it!!! The ricotta is so good and it makes it all so creamy and tasty. Man...I need to bake that lasagna soon. Should't have watched this hungry. lol ;)

OK, shallow shit over with: I had forgotten how much I loved stuff shells when I was younger until I made some with leftover pizza prep--tofu and sauce--a couple of months ago, when I unexpectedly found jumbo pasta shells, which are hard to find here. I have been looking for other recipes for future pasta shell finds, and this looks like exactly what I need, so TFP : )
I like the way to pronunce italian... pasta choice was good, just some advice from Italy to cook pasta, first boil the water, then you put the salt, then when the water boils again, you put the pasta. Anyway good job! Brava!
I love Stuffed Shells. In the summer i make them more as a Salad, creamy & chill...In the Winter, creamy & warm/hot. Lately I've been using tofu, rather than cashew cream, because it's easier to fool omnivores into actually eating tofu! I know, my bad. I like your recipe very much...

Have you ever tried this kind of recipe with like, mashed white beans instead of tofu? I find I don't tend to like the taste that lingers when tofu is in recipes but I'm hesitant to try swapping such a main ingredient 😔
