    Haitian Vegetable Eggplant - Haitian Legume
    Meat:
    1. Clean the meat use lemon rinse under warm water. Add Haitian seasoning, garlic salt, seasoned pepper, tomato sauce, extra virgin olive oil, thyme, cilantro, parsley, and water.
    2. Cover the pot for 45-50 minutes on low until it is cooked.
    Legume Recipe:
    2 cups of water
    Virgin olive oil
    2 eggplants
    1 pack water crest
    2 cup spinach (optional)
    2-3 carrots
    1/2 head of cabbage
    3 tablespoons of tomato sauce
    1/2 teaspoon of garlic salt
    1/2 teaspoon of seasoned pepper
    1-2 tablespoons of Epic (Haitian Seasoning)
    Thyme
    Cilantro
    Parsley
    1. Clean eggplant under warm water. Peel and cut eggplant into small pieces. Place in separate pot. Add 1 1/2 - 2 cups of water. Add water crest, spinach,cabbage, tomato sauce, Haitian seasoning (epis), and extra virginia olive oil. Cover it and let it cook for 10-15 minutes.
    2. Place carrots in a separate pan, add butter or extra olive oil and let cook for 5-10 minutes.
    3. Combine carrots into pot with eggplant and mash all ingredients together.
    4. Add your meat to eggplant pot and stir all ingredients together.
    Haitian Rice and Beans
    2 1/2 cups of water
    16oz yellow or white rice
    8oz red beans (any kind)
    Extra virgin olive oil
    Scallions
    Onions
    Cilantro
    Thyme
    Parsley
    Maggie
    Garlic salt
    Haitian seasoning
    1/2 cup coconut milk (optional)
    Place beans and water in a pot and add baking soda. Place fire on medium and let it cook for 20-25 minutes. Once cooked, strain the water from the beans (SAVE THE STRAINED WATER). Take the same pot, place the fire on medium low and add oil, scallions, garlic, and onions. Let it cook for 1-2 minutes then add in beans, parsley, thyme, cilantro, garlic salt, Maggi, epis, and hot pepper. Add the drained water from the beans back into the pot. Cover the pot and bring the water to a complete boil. Once the water starts boiling, add in your rice. Let the rice and beans come to a complete boil. Allow all of the water to dry out before covering the pot. Once all of the water is dried out, cover the pot for 25-30 minutes.
