Sometimes you just have to take a spoon and literally remove some of the water and one tip is never cover legum after u already squashed it cause that will make it make more water.
Half Haitian here I followed your recipe it came out pretty good but something is missing... I haven't tasted Haitian food in 20 years. I mean for me this came out bustin but something is off.. I wish I had a Haitian granny close to tell me what I did wrong... I followed your red beans and rice recipe as well and I'm guessing I messed up by using Walmart coconut milk. I forgot to get the food stuff from the Jamaican store. I also think I marinated my meat too long in the lime and vinegar solution. I cooked it long enough to make it tender but I feel like I taste the line a little too much. Honestly for my first time I'd give my food a solid 7. That freaking crappy coconut milk made the rice taste like it has a wax coating... If it wasn't for that I'd give it a solid 8
