I'm a new cook. Usually I stick to pasta since you can just buy the sauce, as well as simple stir fry and fried rice dishes. But this looked so good that I had to try it. It was challenging for me since I usually stick to minced meat and I have never used chicken thigh. But I pushed through. My husband complimented me on my cooking which is rare for him. I will be packing this for his lunch tomorrow as well. Thank you!

Hi Simshaddy, yes you can use shitake mushrooms but please note that the taste of shitake mushrooms is quite overpowering. You may want to opt for mild tasting mushrooms such as shimeiji mushrooms or button mushrooms instead. Hope this helps. Happy cooking!

hi. i tried cooking a few times, and my chicken unable to charred. instead it produce water. and also the colouring is not as dark as yours. kindly advise. i follow thru the receip.
Hi Xiuhui, you can perhaps try to increase the heat slightly. Another reason could also be due to the excess moisture in your chicken. Try to pay dry the chicken before cooking. As for the darkness of the sauce, it’s dependent on the brand of your dark soy sauce. We’re using KCT best grade dark soy sauce. Hope this helps.

I made another recipe of yours where it said 1 chicken thigh meat but I put two in and did not double the sauces but tasted fine. Can you please confirm how much chicken is there in this recipe.
