I wanted to give you guys something a little different, so heres my cheesy vegan stuffed squash, super tasty, indulgent & festive. The perfect #VeganChristmas food. long comment! sorry :) my whole life I was never into food, and I was absolutely not into cooking it. I could live on rice and tinned tuna in Uni, and my first attempt at going vegan I lived on instant soups and bournville chocolate. Over the last 20 years people have taught me enough that I could pull a meal together. The first thing i learned was I should stay in the kitchen for at least ten mins (yes I had to learn this!), the second was to play some music to keep me in there. I went vegan in January and lived off fake meats and bread until I found your channel. I have both of your books and I am slowly getting into the kitchen and f*ckin loving it. I've made the lasagna, the spicy and sweet broth, even made Seitan!!! honestly I'm even looking up whats the best chopping board to buy! this is the longest comment *EVER* but...TANKS!

get a nice big chopping board, i prefer wood, and a nice big sharp knife like he uses, don't worry so much about the blade but make sure the handle is comfortable (for me, fat not thin), and learn to chop safely fast ie the correct way with your fingers tucked in, it's super easy once you've mastered it and doesn't take long and i'd say it's the one skill i learned working in kitchens that really was lifechanging - if you can chop fast, you can cook most stuff in minutes not hours and it's not a hard slog it's simple:)

Could you do a video on vegan cheeses please? Which do you use for different purposes.
Seconding that idea. I like nooch, but I haven't found a decent cheese replacement yet.
It looks like the cheese he used might be Follow Your Heart parmesan (in the U.S., anyway), which is the only vegan cheese I've tried so far that tastes very close to the real thing. Other cheeses I've tried are bitter and taste like coconut.

So delicious shredded cheeses are great! Using the mozzarella kind on pizza! Yum!

other uses, standard roasting, or you could roast with/without a light crumb/batter then use it in salads, mix it in with a potato for mashing (roasted sweet potato and butternut mash is awesome), hmmm I'm sure there are few other things too

Absolutely amazing recipe
For those that are on keto or other all natural diet & don’t appreciate flour in sauces, you can just warm some cream with shredded 🧀 and fold in the squash. Comes out just as yummy.

I made this for Christmas dinner with friends and we all loved it! I even saved the seeds, which I'll be planting with hopes to have an excuse to make more soon, lol.
I had 1/2 a squash leftover that didn't fit in my toaster oven for this event. So days later, I made some more filling for another one for myself, except this time, I ditched the sauce pan (out of laziness to avoid having another thing to wash). I just scooted the leek mixture to the side, and sautéed the onion (since I love the flavor of fried onion, and the frying pan still had enough oil coating in it) before adding the milk and other ingredients. I wasn't able to add as much milk, since a frying pan doesn't hold as much, and the end result was even a creamier filling after the cheese melted! This worked out well, since I was only making 1/2 a squash, but next time, I'll just ditch the frying pan and fry the leek mixture directly in the saucepan, since my saucepan is non-stick anyway.
I was wondering what is the best way to serve this at a potluck where there will be a lot of food and 1/2 a squash per person would be too much, since slicing them would come out messy (which is what I did at this Christmas get-together, but it was among close friends so messy was ok). I thought about selecting bigger squashes and presenting them with a spoon in them so that people can just scoop them out. Let me know if there's other suggestions.

I've not seen anyone else leave the seeds in to bake. Good tip, easier to remove and since the seeds are already roasted I can add straight into my required recipes. Thank you.
