  • BUN RIEU | SHRIMP CRAB PORK NOODLE SOUP
    Makes: 5-6 bowls
    SAUTEED TOMATOES
    1/4 cup cooking oil
    10 cloves minced garlic
    1 small onion, diced
3-5 roma tomatoes, cut into wedges*
    1 TBSP fish sauce
*if you like tomatoes, then use more or vice versa.
    DRIED SHRIMP
    3 oz dried shrimp
    5 cups hot water
    MEAT PASTE:
    14 OZ prawn in spices
    12-16 oz canned crab meat
    1 lb ground pork
    2-3 eggs
    ADDITIONAL INGREDIENTS
    2 liters of water
    1-2 lbs pork riblets
    1.5 tsp salt
    2 TBSP sugar
    1.5 TBSP tamarind powder
    1 TBSP shrimp paste
    Fried tofu
    FOR SERVING:
    Noodles
    Scallion, chopped
    Cilantro, chopped
    Cabbage, thinly sliced
    Morning glory, shredded
    Banana blossom, thinly sliced
Purple or yellow onions, thinly sliced
    SAUTED TOMATOES
    1. Heat up 1/4 cup oil. Once oil is hot, saute garlic til fragrant.
    2. Then add diced onions and saute til slightly translucent
    3. Then add tomatoes and fish sauce. and cook for 1-3 minutes. Not too long, tomatoes should still hold shape
    4. Set this aside
    DRIED SHRIMP
    1. Soak all of the ingredients listed under DRIED SHRIMP for at least 30 mins. After 30 mins, remove shrimp BUT RESERVE THE LIQUID
    2. Add shrimp into a food processor and blend
    3. After your shrimp has ran through a food processor, add it to all the ingredients listed under MEAT PSATE. Combine well and set aside.
    BROTH
    1. Combine 2 liters of water with the 5 cups of hot shrimp water. Bring this to a boil
    2. Once boiling, add blanched spareribs* and bring back to boil. Once boiling again, reduce heat and simmer for 30 mins.
    3. After 30 mins, add your SAUTED TOMATOES, salt, sugar, tamarind powder and shrimp paste. Combine well until ingredients are dissolved.
    4. Then add fried tofu and MEAT PASTE. When adding MEAT PASTE, add 1 large spoonful at a time. Cook this until the PASTE floats to the top.
    5. Your broth is now done
    6. Assemble your bowl with vermicelli noodles, scallion, cilantro and preferred veggies and topping
*spare ribs: I placed my spareribs/ pork into a pot and filled it with water, 3-4 slices of ginger and ~10 pepper corns. I brought this to a boil and then dumped the liquid and washed the pork clean. The ginger and peppercorn helps with the small of the pork.

@@someone-ji2zb "Publicly disrespects" ? Please, all she said was that she was mad at him, so she cooked something she enjoyed without taking his preferences into consideration.
This happens all the time when you live with other people in general, you won't always cook something that everybody likes. As long as they know you plan to cook something for yourself so that they can also make something for themselves it's all good, he's a grown adult he should know how to fix himself a meal if he detests tomatoes that much (and no judgement, I couldn't eat this either but for other reasons).
Was it a little mean-spirited? Sure, but are people not allowed to have arguments anymore? It's not like she was airing out his dirty laundry for everyone to hear, she made a great tutorial video on how to make Bun Rieu and it was funny too. This could be a light hearted joke, or real.
I'm against altering people's food without their consent, or purposely making food for someone you know they don't like/can't have. It's wasteful, and spiteful. So I hope it isn't real. Don't put garlic in before onions. You will burn the garlic long before the onions cook.
Onions first then garlic until aromatic (30-50 secs) then add a liquid to prevent them from burning.
The order for the first three should have been: onion (10 min, until caramelized), tomatoes, garlic then fish sauce.

This is similar right ? I rmb I went to my college roommate house and his mom cook some sour pork soup and with lotsa veggies tho it was so good. Might give it a try myself but don’t think there’s these Asian market at my area

    • @doodahgurlie

@@Forever18or21 No, it's not similar. I'd say canh chua (sour soup) would be similar if you're looking. But there are different versions of canh chua. Many are made with fish while there's also the version made with fermented/pickled mustard greens and pork riblets.
