To clean the bone I boiling water first then put the bone in about couples minutes enough, then rinse out clean the bone 15 minute long for bone cleaning

I love bun rieu to a point that I have literally tried bun rieu at every Vietnamese restaurants that have this on their menu. If the restaurant does not offer the shrimp paste as an add-on, I cross that out as non-legit. Your recipe looks very premium; you are not going to get that kind of ingredients from a restaurant for sure - thus my self invitation above. I'm just too lazy to go through all that to cook at home. Thanks for sharing.
I always serve the fish sauce and shrimp paste on the side. Then everyone can customize their own bowls. That's how my family have always done it. Thanks a bunch!
This looks good , I am going to try it . On the plate with the red and green cabbage , what is the leafy greens ? Is that the morning glory (curly stem) , how do you get it curly ?
Nope. Add fish sauce and shrimp paste as condiments on the side. The real crab meat in the meatball gives it the sea/fish flavor already. That's how my family has always done it.
