    My mother always made cornbread on the stove. In a cast iron skillet and no sugar (it’s cornbread, not cake!) She passed away before I was able to learn her recipe, but I imagine it was very close to how you make it, Mr. Ken. Looking forward to trying it myself. Thanks for your channel!

    STOVE TOP !!! I buy the Jalapeno Corn Bread Mix, put 1 egg & 2/3 cups of milk, and stir... pre-heat 8 inch skillet and put butter and non-stick spray. Setting should be on LOW, I mean real low. Pour batter into skillet & Cover w/lid for about 8-10 minutes, until you see batter on top is dry. Turn over for about 4 mins, and that is it!! After corn bread is baked, take out of skillet and put on plate. Pour a little honey and brush it in....... I hope this helps someone. Thank You.

So I came up with my own recipe that is very similar to this one. It is delicious and looks like oven baked bread. The recipe passed the family test for they thought it was oven baked. It's not greasy....just crispy, if not using the lid after flipping. Hi Ken. I've baked cornbread for years in the oven. I did not believe your recipe at first, but I tried it in a cast iron skillet on a hotplate, and I had delicious results! The cornbread did not stick to my cast iron and was easy to flip. You're right it's not as thick as oven-baked, but actually it's THE perfect size for two or three people. I really like your recipe because it's a little thinner than oven-baked skillet cornbread. I added chopped onions to mine. Delicious! Thank you for sharing your tip! :)

    I make small individual ones I don't use flour but I add onions. I fry mine in a regular fry pan with butter and oil. I like it better fried than the oven kind. Thanks for showing me your version. I am gonna try yours.

    I grew up eating fried cornbread. My mom would pour the cornbread batter onto a hot cast iron griddle like pancakes. What we didn’t eat for supper we’d eat later as a snack with jelly. Love the idea of fixing this in a skillet♥♥♥♥

      Stovetop recipes like this don't circulate the heat the same as in an oven. Oven is much better but by adding a little more baking powder, it will help in rising the dough. As you can see, even with the extra baking powder it still isn't as high as in the oven version but still "fluffier" than the corn cake or corn pancake. Still great with syrup or fruit!🤗

    I'd call that a pancake. That's all it is, and that was made a lot by the Canadian Indians.

    • @LaurieSwenson
      @LaurieSwenson 3 роки тому +3

      The size and shape and height are quite like pancakes (cornmeal pancakes, hoecakes, etc.) but as soon as he cuts into it, I see cornbread. Native Americans/First Nations people have made both stovetop cornbread and cornmeal pancakes (www.recipezazz.com/recipe/cornmeal-griddle-cakes-choctaw-native-american-19722); the former is cut into pieces, and the latter is generally served as individual rounds. Perhaps this is kind of in between, since it's flipped the way a pancake is flipped, but it doesn't look like a pancake inside. That said, if I was making skillet cornbread, I'd fill the whole pan!

      Did the Canadian Indians call it a 'pancake' also? Cornbread doesn't 'TASTE' like, and never has tasted like a pancake.
      Call it whatever you like though, I'll stick with cornbread.
