    I am a home bread baker for more than 50 years. I have baked and steamed (my favorite process) many kinds of bread. This process of "baking" in a frying pan is new to me, and I have not had success in my few tries. It doesn't get done in the middle. Perhaps it is because I live at an altitude of 7500 feet. Anyway, I was inspired to cook half a recipe in the pan at one time, and the results are just about perfect, and of course it took less time. So for those who are having trouble getting the bread done in the middle, you might try altering your process as well. It's got great potential.

    • @OHlookSHINYthing
      @OHlookSHINYthing Рік тому +12

      Did you split the dough and make two batches, or just halve the recipe and do one smaller batch? I want to try this, but I was a little concerned about it getting done in the middle. We love to camp and have no oven at the cabin where we camp, so this would be great if it works out.

    • @virginiavoigt2418
      @virginiavoigt2418 Рік тому +14

      @@OHlookSHINYthing I made a full recipe and "baked" two pans of it. Half a recipe should work just as well if you want half the quantity. On another subject, does your campsite have electricity? I have recently bought and begun to use a counter-top induction cooking unit. I love it. If you love to cook, you could look into these. You do have to use cookware that is compatible with them though. If a magnet will stick, it will work well on an induction unit if it has a flat bottom. I have a cast iron frying pan that would work beautifully if it didn't have a small rim on the bottom perimeter, but I do have others that work. I wish you great success whatever you try.

      @@virginiavoigt2418 we were just talking about this bread today, after we came home from camping! We don't have electricity at camp; it's VERY rustic and what I call a real camping experience. LOL We do use a propane camp stove, at least - not always cooking on the campfire. But I think this would work over the campfire with the skillet, if I can regulate the heat.

    This is the bomb! I added 3 cloves of chopped garlic, parsley flakes and dried oregano when i mixed in the flour. This cooked perfectly if done following the timing. After it baked and cooled down i made thick slices and fried it with very little butter. Made awesome garlic bread to go with pasta!

She fried slices of it for my siblings and I on Sunday morning as part of a cooked breakfast with bacon, sausage, black and white pudding and tomatoes. I tried to find the recipe for this a long time ago as I had forgotten how my mother made it. I am going to try and make it myself once again as it tasted wonderful in the past. I use a griddle pan + olive oil, flip when toasty and add pizza sauce, and Moz. cheese. My 9-year old asks for it every day! It is YUMMY! Thanks. Good recipe!

    • @virginiavoigt2418
      @virginiavoigt2418 Рік тому +2

      @@theclumsyprepper Faffing sounds like a fun word although maybe it is not supposed to be. I am unfamiliar with the term. Making bread in a straightforward manner would be just right for many people, but for some, increasing the number of steps just makes it more fun. Some think play doh is fun, some think bread dough is fun. One thing I did learn recently is that if there is a substantial amount of fat (usually in the form of butter) in the recipe, it can hamper the development properties of the dough. That's one reason there are a number of enriched bread recipes that call for adding the fat after the dough has been essentially created and allowed to develop somewhat. It seems there is always more to learn.

    Did this one today. My first ever baking anything. No accurate measuring in an aluminum pot so...sticky. Your biggest enemy is wet dough, you need to add flour as needed so it can form a tacky but somewhat firm ball. I did some kneading though since it's kinda fun. Also my fermentation and final proofing times were much longer.
    Very happy with the results both the rise and the browning. It's like a gigantic piece of pizza crust which I happen to love more than pizza. :) It tastes and smells very good. Thanks for the video and certainly worth a try.

      Wet hands also work well with sticky dough. That is my go-to since I don't want to add extra flour. Experience is your biggest helper. Stay with it.

      @@jamesvoigt7275 Wet hands indeed help with the initial mixing and working the dough. What I really found crucial is not to over hydrate the dough in the first place. You won't be needing to add too much flour later and kneading is way easier.
      Stuffing this "thing" with cheese, mashed potatoes and/or sautéed veggies is what I am experimenting with at the moment. :)

    Be careful of the temperature setting you choose. I followed the recommendation (down in the comments) of setting the knob on 5, which is a medium setting instead of a low one. The bottom burned after just 9 minutes, so I flipped it over and reset the knob to 2, and let it cook for 15 minutes. With 8 minutes to go, the loaf smelled of the heat being too high, so I turned it down to 1. Once having cooked for the allotted amount of time, I set it on the cooling rack, cut off the burnt parts, and attacked it armed with a full butter knife. The flavor is good, but the recommendations of adding garlic and seasonings would make it better. Next time I will omit the olive oil, for I think it contributed to the scorching, and use parchment paper in a dry pan. Also, I will cook it on between 1 and 2 from the start. I'm still in the experimental stage, for I am adapting the recipe to my stovetop. But this is usually the case when following any new recipe.

    The nice thing about bread is that it's almost impossible to screw it up. The proportions and method of heating almost don't matter, as you will still end up with something resembling bread. The texture or flavor might be off, or you may have a raw center or something, but you can still eat it.

    This turned out very good. The only difference for me was I prefer activated yeast, so I sprouted it with the warm water and sugar, then combined with the rest of the ingredients. I also prefer this to let the yeast grow a little before it mixes with salt since salt can kill it or slow it down. Very tasty and easy!

    I just made this! My family marvelled at the first bread they ever saw baked from a pan. There were 2 doubts I had while making it:
    1. For the flour, I used a weighing scale to the exact amount of 280g and a measuring cup for the water. After 1 hour of rising, my dough was really sticky compared to the dough in the video. It's written that we have to add "some" flour, which looked like a tablespoon of flour shown in the video. My dough still didn't look solid, matte, and didn't form a ball like in 1:33. Mine was still gluey and shiny. Dough was stuck all over my metal spatula.
    I ended up adding more than one tablespoon in an attempt to reach the same matte look. At that point, I didn't feel confident, and I wondered if I messed up, as over-adding flour can lead to underdone bread and will take longer for the insides to cook.
    I read on the Internet that the as we knead dough for 7 minutes or so, the dough will eventually get less moist. So maybe I should have kneaded it longer before adding flour.
    2. For gas stoves, I didn't know how low is "low heat," so I kind of winged it. I think I did a medium-high for the first side and checked it cautiously at 15 minutes before flipping it over for 7 minutes. When I turned it all the way to the lowest heat level, the second side didn't brown up even after 7 minutes. So, I turned it to medium and kept checking it.
    3. I wanted a neutral tasting bread for the whole family to enjoy, whether with something sweet or savoury. So, instead of using olive oil, I smeared unsalted butter on the base of my 8.5-inch pan.
    I might try putting less butter or no butter at all next time because with a non-stick pan, it didn't seem like it even needed greasing. It was easy to flip over.
    4. The bread browned beautifully. The first side that was cooked was crispy like a baguette. The second side, not so much. I think it's because I handled that side with very floury hands.
    5. The bread was actually spongy and bounced back like in the video!
    6. The insides of the bread were a little too moist but had air pockets like in the video. I should have let it cook longer with lower heat and again, not added too much flour.
    Thank you for sharing this recipe!
