A bit too late but for those who see this: for the boiled eggs place them vertically not horizontally. If you place them horizontally, the yolk will be on one of the sides. If you place them vertically, the yolk will be right in the middle.

I didn't know you could add water to keep the eggs from sticking! The texture was dense, but they retained their richness and didn't lose any flavor. I fried with minimal added sunflower oil, because I generally cook without oil. (Not because I'm greasy, but because oil overpowers the rich flavor of the dish). By the way, scrambled eggs would taste much better with white onions!

Very good video. Just as a tip, I recommend watching videos of Jacques Pépin’s and Heston Blumenthal’s videos on boiling and frying eggs. These two gentlemen in my opinion are the kings of cooking eggs. Monsieur Pépin was a very close friend and chef collaborator of Julia Child and videos of them cooking together are quite humorous. He will be 85 this year and is still going strong with his lovely wife Gloria.

RECOMMENDATION: Try cooking the egg in a Wok instead of a regular flat pan. It produces such a unique flavor, even if cooked with just oil - the fried egg is crispy on the outside and soft on the inside (drool). Thai people fry their eggs this way and its my favorite way to eat fried eggs. You will be blown away.
