Major bummer! Cheese is fat, salt and funky saturating something to hold it together. The nutritional yeast offers the funky, and then the fermentation which is really interesting. I’m sure you can find or create something cheesy that you’ll enjoy. I would consider cauliflower rice, white mushrooms, nutritional yeast, and maybe a vegan butter or frozen olive oil or something oily. If you’re into roasted garlic that would be creamy and funky with some nice natural oil too. Turmeric for more color. Have you tried some experiments?
She's got a nut-free cheese recipe with cauliflower, butternut squash, coconut milk, garlic, nutritional yeast and vegetable broth (along with some other spices). I haven't tried it myself, but a lot of people seem to like it. Hopefully you're not allergic to anything in that recipe.
I'm not vegan but I'm lactose intolerant so this seems like a good alternative for me. I really love cheese but I can't eat it. 😭 I will definitely try making it this weekend.

Yeah not everyone is good at fermenting foods. I really need to learn to do it as well lol. My grandma for example, ferments her fresh vegetables for the winter, and makes her own yogurt. She lives in Eastern Europe (Bulgaria), and people there are pros at fermenting, but mainly the people that live in houses do it with larger spaces and basements.
When I went vegan for a few months, one thing that I found really helped me was adjusting my expectations. At first I really didn’t like vegan dairy at all… but once I stopped expecting it to taste like the non-vegan alternative, it was a lot more palatable. I feel like it’s important to go into vegan versions of meals not anticipating something it’s not, but instead having an open mind and expectation of trying something new.
I was raised vegetarian, and my biggest recommendation would be to try foods that were intended to be vegan/vegetarian. Replicas of meat may help but as you said it won't meet your expectations.
I think my favorite replacement for cheese are simply olives. I know it's weird but if I'm ever craving cheese, olives will do the job for me and be satisfying

We all learned to eat things we had never tried, including our vegan and vegetarian friends because eating food made by others ment they ate recipes they wouldn’t have ever thought to make, and the food meat eater will make vegan is quite different than what a vegan will make apparently. None of us will ever forget how much fun we had and all the delicious food we shared. Because food is absolutely about love. Not everyone is going to act the same. Even people who believe exactly the same thing will act on it differently. It breaks my heart you have only met people who use being vegan to make themselves better than others… because that’s not what it’s about. It’s a personal choice, and it shouldn’t affect your life anymore than having a sister with celiac’s disease. There may be some accommodations you have to make when you eat dinner with them but… It certainly shouldn’t all your decisions or affect your daily life if you don’t live with them
Spicy hummus with vinegar and garlic paste also do great job with bread.... When I randomly mixed some stuff with peanut butter to dress my salad, it tasted like shawarma filling... We can do great stuff with plants🌱

Vegan ice cream, vegan/alternative meats, vegan yogurt, nut milks... those have all been pretty much perfected. But for some reason, cheese just cannot be recreated. Idk what it is about it but I have never had a good vegan cheese and I've tried so many. I just recently tried So Declious vegan cheese and Follow Your Heart vegan cheese. Literally could not even swallow them, I had to spit them out they were so gross.
Here in Finland there’s one grated fake cheese that I literally can’t tell the difference between it and cows milk cheese. It’s by Valio and is called OddlyGood Veggie Grated Original. I’m not vegan and neither is anyone I know, but noone in my family could tell a difference when I made them try one pizza I made with regular cheese and one with the Valio one! It melts and looks just like normal cheese, and is just as good ”raw” as it is melted. They make sliced cheese too, but unfortunately I find that that one tastes like every other vegan cheese lol. But if you can live with having only grated cheese (or go through the trouble of melting them into slices yourself) then try to get your hands on the Valio OddlyGood! Edit to add; I also have two friends who are super anti-vegan and they also couldn’t tell a difference when I made them cheese melt sandwiches 😈

I know this is bizarre but ever since I was a kid, I’ve always hated cheese. For as long as I can remember it’s straight up grossed me out. And I don’t think I’ve ever met anyone else like that 😂
When I was a kid, I could only eat melted cheese. Cold cheese was so disgusting to me. I'm starting to warm up to cold cheese, but certain kinds still gross me out.
I have a similar feeling towards milk. Grew up around cows and farming, so milk was always incredibly gross to me for some reason. Cheese was easier to tolerate since it at least looked different but the feeling of watching the cows get milked and then get offered milk was an incredible no for me.
Yes! Dairy in general was super hard for me to give up when I tried going vegan. Instead I turned to owning my own dairy goats and that was my compromise for being a sustainable vegetarian. Just knowing that I only get dairy from a good source with happy animals. Thank you for sharing your recipes, I’m excited to try this cheese!

I craved it for maybe two months and then it just revolted me. However, I have since tried nutritional yeast, almond milk, garlic salt and paprika as a pasta base and it is incredible.
I’ve accidently tasted something with dairy a couple of times since going vegan, but I was shocked I could tell right away because of the “rotten” taste. I think if more people gave up dairy for a few months they would not go back after tasting it with a clean palate

Target used to have this vegan cheese that tasted exactly like regular cheese!! It lasted like 3 months too ( but i was going through a vegan mac phase so no way was it lasting that long) but the only problem was it did not like melting Mixed it with avocado butter and high heat andnit would but ya
See if you can find "No-Moo" brand vegan cheese, it's one of the few that gives you the feeling of wanting to eat more and more of it, just like real cheese does.
@E B mm, i would agree that gmos have been detrimental to crop biodiversity but otherwise i don't agree. plus celiac disease, gluten intolerance, has always existed, the only reason why you may think the numbers have spiked is because it is much easier to diagnose and treat in the modern day. otherwise, please provide me with a scholarly source that claims that gmos are harmful for you.
In many cultures its normal to Ferment Things at Home and i have never heard of anyone getting sick. Just Look at the smell, colour and Texture before you eat and then you will probably still taste If its gone bad.

I’ve been doing something similar. Adding raw cashews, nutritional yeast, Himalayan salt, garlic/onion powder to a coffee grinder. I’ve found that this creates a nice grated Parmesan cheese flavor. I love it on top of a Cesar salad. I can’t wait to try this recipe. 🌱

I've had the hardest time going full vegan because I love cheese and I absolutely hate the taste of nutritional yeast. Even when it's just like a tablespoon or less in the entire recipe, it's all I taste and I'm in the minority that I just do not think it tastes like cheese at all. Anyways, it's been so hard trying to find 'cheese' recipes where nooch isn't in it. If you know of a cheese recipe without nooch, please share!
Try not thinking about it as cheese but as it's own thing, Im not vegan but I cook vegan stuff often cause it's interesting and I know it doesn't taste like cheese, but I still find it to be an enjoyable flavor regardless, now if the issue is that you just don't like it's taste then it can't be helped

Agreed...Vegan 27 years now and it took me about 2 years at the start to truly give up cheese. The cholesterol and flavor are hard to let go of. It is an addiction. What I noticed a couple of years ago when I did eat some Brie (my favorite) was that my brain got a bit foggy/heavy for a few days after until my body cleaned it out. That was my reminder of one of my reasons to become Vegan: wanted more clear thinking & receiving ability. Sorry if you don't like nutritional yeast. It does give the closest flavor to cheese.

I know this is bizarre but ever since I was a kid, I’ve always hated cheese. For as long as I can remember it’s straight up grossed me out. And I don’t think I’ve ever met anyone else like that 😂
You're not alone , cheese for me was super easy to "let go" of, i never felt too strongly about it lol
I used to love cheese but over a year I've conditioned myself to be disgusted by it, from the texture, the smell and the fact that its titty juice
When I was a kid, I could only eat melted cheese. Cold cheese was so disgusting to me. I'm starting to warm up to cold cheese, but certain kinds still gross me out.

I have a similar feeling towards milk. Grew up around cows and farming, so milk was always incredibly gross to me for some reason. Cheese was easier to tolerate since it at least looked different but the feeling of watching the cows get milked and then get offered milk was an incredible no for me.
Yes! Dairy in general was super hard for me to give up when I tried going vegan. Instead I turned to owning my own dairy goats and that was my compromise for being a sustainable vegetarian. Just knowing that I only get dairy from a good source with happy animals. Thank you for sharing your recipes, I’m excited to try this cheese!

I craved it for maybe two months and then it just revolted me. However, I have since tried nutritional yeast, almond milk, garlic salt and paprika as a pasta base and it is incredible.
I’ve accidently tasted something with dairy a couple of times since going vegan, but I was shocked I could tell right away because of the “rotten” taste. I think if more people gave up dairy for a few months they would not go back after tasting it with a clean palate
I made this with cashew butter and I love the taste so much! I even make fried rice with it 🤤

Target used to have this vegan cheese that tasted exactly like regular cheese!! It lasted like 3 months too ( but i was going through a vegan mac phase so no way was it lasting that long) but the only problem was it did not like melting

... and it's probably too acidic to allow them to grow. Aaaand there is oxygen involved. So dont be afraid. They can not live in there.
See if you can find "No-Moo" brand vegan cheese, it's one of the few that gives you the feeling of wanting to eat more and more of it, just like real cheese does.

@E B mm, i would agree that gmos have been detrimental to crop biodiversity but otherwise i don't agree. plus celiac disease, gluten intolerance, has always existed, the only reason why you may think the numbers have spiked is because it is much easier to diagnose and treat in the modern day. otherwise, please provide me with a scholarly source that claims that gmos are harmful for you.

In many cultures its normal to Ferment Things at Home and i have never heard of anyone getting sick. Just Look at the smell, colour and Texture before you eat and then you will probably still taste If its gone bad.
I've recently developed lactose intolerance (aging is fun 🙃) & cheese is something I almost lived on! I'll definitely be trying this!

I’ve been doing something similar. Adding raw cashews, nutritional yeast, Himalayan salt, garlic/onion powder to a coffee grinder. I’ve found that this creates a nice grated Parmesan cheese flavor. I love it on top of a Cesar salad. I can’t wait to try this recipe. 🌱

I've had the hardest time going full vegan because I love cheese and I absolutely hate the taste of nutritional yeast. Even when it's just like a tablespoon or less in the entire recipe, it's all I taste and I'm in the minority that I just do not think it tastes like cheese at all. Anyways, it's been so hard trying to find 'cheese' recipes where nooch isn't in it. If you know of a cheese recipe without nooch, please share!
I agree, nutritional yeast does NOT taste like cheese at all!
Have you ever tried another brand? Nooch can be made a number of different ways and each of these will heavily influence the flavor!
Try not thinking about it as cheese but as it's own thing, Im not vegan but I cook vegan stuff often cause it's interesting and I know it doesn't taste like cheese, but I still find it to be an enjoyable flavor regardless, now if the issue is that you just don't like it's taste then it can't be helped
I never was a fan of cheese and i absolutely love the flavor of nutritional yeast, so yeah i can confirm, it doesn't really taste like cheese, it has his own flavor.
Nutritional yeast taste very different depending on the brand. I love some brands. Others not so much.
If you watch behind-the-scenes dairy operations giving up cheese is a piece of cake. I wouldn't touch dairy cheese with a 10 foot pole. Watch the Fair Oaks Farms footage.

Agreed...Vegan 27 years now and it took me about 2 years at the start to truly give up cheese. The cholesterol and flavor are hard to let go of. It is an addiction. What I noticed a couple of years ago when I did eat some Brie (my favorite) was that my brain got a bit foggy/heavy for a few days after until my body cleaned it out. That was my reminder of one of my reasons to become Vegan: wanted more clear thinking & receiving ability. Sorry if you don't like nutritional yeast. It does give the closest flavor to cheese.

There's a brand here in the US called Darë cheese, that's also cashew based, and probably the best vegan cheeze I've ever had 🙌🏼
