    Thank you Gemma! I just made this without sugar and it's great for me because I have to watch my sugar intake, so it is a great option! I can enjoy the texture of the whipped cream without it being too sweet.
    I also tried adding this to coffee and it tastes amazing!

    Gemma thank you for providing vegetarian alternative to gelatin, which the "other" video did not. I had seen that video before and wondered what else might work well. I have not played around with gelatin substitutes to know which and how much works best in different applications. Been avoiding anything containing gelatin for so very long, and want to try making some of them with a substitute, decided recently to purchase have agar agar but have not used it yet! Now thank goodness heavy cream is available here (how sad I feel for those who can't get it, so yummy!), but for those who need this, another informative (and thoughtful for Veg) video from BB! Thanks Gemma!!

      Remember that this is an alternative to fresh dairy cream. You cannot actually make dairy cream, this is made by cows! The alternative will be useful for some purposes. As a topping, in cheesecakes etc. it cannotfull replace the real thing! It would be a poor thing in Irish coffee for instance!

      I actually get requests for substitutes quite often. This is not meant to be a substitute for whipped cream in ice cream or baked recipes. It’s used more as a side or topping to desserts.

      @@browneyedpinai Because the fat content isn't enough for ice cream, that's why. Normal whipping cream has about 30% fat, but this is just set milk.

    I followed this. but Gemma I have to say by following exactly your measurements I couldn't get the cream to whip at all. it was not becoming thick at any cost. so finally I added more gellatin, 2 more tsp and found out it became thick in a jiffy and beating it gave the right consistency. I had to also keep an ice water bath while beating. care to throw some light regarding the same? however at the end I got a perfectly whipped cream.

      Hi there, the problem with this is that it cannot ever be real whipped cream, it is a substitute, a jellied milk as it were. It is not for anyone who can get real fresh dairy cream. So, I am not sure why your one would not whip up for you, this works for me. I am sorry :)

    Hi Gemma ! This is a really great idea ! But, I'm a muslim, and can't use gellatine 😢 However, I can use Agar Agar, but, I can't find it anywhere. could you allso make a recipe of making whipped cream without any gellatine ? that would be great !       Hi Fareena. Note that this will not work in my ice cream recipe, or recipes that require heavy whipping cream. This is used more as a side or topping to desserts and cakes. I hope this helps.

      Not so much curdled milk, but set milk, it is a cream alternative, not actually cream, cows make this! :)

    Whipping cream is only available in our country in large packaging. At least i could not find small packs but i only need small amount so i can make your ice cream.

    I just tried it, but I added a 1/2tbs of corn starch(don't know why). It resembled whipped cream but you could tell it was gelatin based. I liked it. In a pinch, you could sub this for whipped topping.

    If it works with agar agar it can be a great lower calorie substitute for cream !

    Hi Gemma, thank you for this video! Regarding agar agar, I was told that it must be boiled first in order to be activated (to set when it cools down). Is that true? Would it really work if I don’t boil it first and just add the agar agar powder to the cold milk? I really need your advice on this! I would like to make a nice desert this weekend! Thank you kindly in advance!!!

      Hi Jay, my understanding is that there are different forms of this. One form needs to be boiled, and used as you say. There is also an instant type, but I do not know how widely it is available. Carrigeen Moss is a similar thing, as is China Grass, ask in your store :)

    Looks promising! Question though, would you recommend this to frost a cake? Will the structure hold? Or better to use it just for toppings? Thank you!

      No! This is not real cream, it is set milk, useful for some things, particularly as a side dish for cold desserts and some no-bake cheesecakes. It will not work in my ice cream, butter or buttercream frosting recipe. The cream which I use for most of my recipes is fresh dairy cream. This needs to be at least 35% fat content to whip well. This is from cows milk. It is a liquid product found in the chill cabinet in your store. It will spoil in a few days, even when refrigerated. It has no additives, it is just natural cream, skimmed from milk.
      In some places, where there is no dairy industry, there are manufactured products, usually made with milk powders and fats. These are good for some applications, but they are not fresh cream. I am sorry, it cannot be actually made!

      This is a very special English treat, from Cornwall. I think it was probably a way to preserve cream prior to refrigeration.The cream is obtained by heating milk slowly, in a bain marie, and then allowing it to cool while the cream content rises to the top in coagulated lumps. These are the clots. This is served with small sweet scones and jam and is known as a 'cream tea' in Devon and Cornwall, it is absolutely delicious! :)

    Can this be used for icing cakes and if so will the decorations eg roses stay equally stiff as they do in case of whipped cream made from cream?

      NO! this is meant to be used as a side dish, or in cheesecakes, not really right for cake decorations. it is a set milk really, like a jelly :)

      Hi Jes. You can find heavy cream in Italy, just check the label. It should have at least 38% fat. This is used more as a side or topping to desserts, but it cannot substittue the cream in cooking or for whipped cream frosting. I hope this helps.

      Maurice Gatdula I guess it's because of the different fat content. milk does not have much fat compared to heavy cream. so more fat in the ice cream the softer and creamier it will be.

    Did you ever try it with flavoured gelatin? a cherry taste and color can look quiet nice, or lemon. What do you think

      No, I can’t say I have as this is used more as a side or topping to dessert, made to mimic real whipped cream, which are not usually flavored in anything than it’s natural cream flavor.

      Hi Ria! Agar-agar or Carrageenan Moss should work. Just make sure to read the packet first before use. Hope this helps
