    This turned out fabulous, i added olive oil, mixed Italian herbs, sea salt and chilli flakes & small bits of sundried tomato - absolute heaven on toast 😊👍

      Sorry.paneer is cottage cheese.i am an Indian and I live in India too.paneer is different from cream cheese

      +Fun with me Mithi We don't put that in a blender. we use just the solid part as is.
      I also heard that cottage cheese is different from paneer. Not sure though.

      Its not...theres a difference between cottage cheese (paneer) and cream cheese. Cream cheese is made with heavy cream and milk so that theres high fat content. The recipe shown here is very low in fat content and wont have the original creaminess

      It's not the same. You don't whip ricotta cheese AKA paneer cheese. It's made with 3 cups and one cup of heavy cream . And It needs to hang in the cheesecloth for at least 2 hours. That process gives it a much different flavor and texture.

    I tried this recipe.
    Works like magic.
    I used this recipe for her no bake oreo cheesecake and I could not tell the difference.
    I would recommend this recipe to anyone who has their doubts on trying this recipe.

    Thank you so much for the recipe!
    I used 3 cups regular milk and then half a cup of sweetened condensed (doubled fat) milk. It worked really well, especially since I wanted to use it in a cheesecake!

      How did you incorporate sweetened condensed milk? Did you add it before separating the milk curdles or later in the food processor?

    Soooo good. My little man and I enjoyed making the cream cheese and with the whey I made a smoothie for him as it was surprisingly sweet and you couldn’t tell that it included lemon juice. Even thought we can buy a great variety of cream cheese here in Germany we will go on making our own. Many thank for the recipe and your great instructions as always. Hope you and the little unborn are doing great. All the best for the birth and enjoy the time with your newborn, this is such a mariculture time.

    suggestion for your bold baking basic!
    1. puff pastry
    2. differences of flours and how it'll affect the end product and how you can tweak it
    3. types of liquids (such as oils, milk-cream, water), its differences and its substitute
    4. types of raising agents
    and like always its reallylovely and helpful.cuz cream cheese is really expensive in my country. having a way to make it yourself its a huge help!

      Traditionally it was known as Farmer’s Cheese, Fresh Cheese and in other cultures other names. It is the way all cheese starts, though what changes it is how it is cultured and the level of fat in the milk. Cream cheese made with cream and milk will be easier to cream too as the fat level goes up. Ricotta is made with what remains of the curd in the whey, or very low-fat milk. If you overstrain it will be dry and more tricky to cream. If you add back a little of the whey it will cream better for you. Paneer is a type of cream cheese too.

    8oz cream cheese:
    4 cups full fat milk
    3 tbsp lemon/lime juice
    drain
    let hang on the cloth for 15mins
    cheese cloth
    lasts for 7 days

      Debolina Kundu I think this is just a quick way to make it for recipes for her viewers who can't find cream cheese. Paneer is made exactly this way. Except it isn't blended, it's set and cut into cubes.

    In India we don't get cream cheese (atleast not readily available in most places) and have been doing this method since a long time. We call it "chhena". Today I came to know that it's the same thing as cream cheese :P

      @@dragndorf9 depends on what you are making. I made Oreo cheesecake using that chenna so I blended it with the cream of Oreos and other ingredients. I didn't knead it
      So it was exactly the same.
      And cream cheese is used to make cheesecake. So the process of both is same to make the same thing

      @@dragndorf9 try it it's amazing! Whenever I make it the entire cake is finished by everyone in under 5 minutes! Normally cakes last a week in my house. But not my Oreo cheesecake :P

    One suggestion to get a smooth consistency is to put the curd into gauge cloth to drain the liquid transfer it to new gauge cloth tie tightly in a bowl then lock it tightly to avoid transfer of smell and leave overnight or two days in refrigerator

      Hey do you double the lemon juice as well? And if you do, do you still add in increments of 1 tablespoon per minute over 6 minutes?

    I made this recipe using lime juice instead of lemon juice or vinegar. The cream cheese tasted delicious! I used it to make a no bake mixed berries and lime cream cheese.
    I would highly recommend it.

      @@nunyabiznes33 Both actually. The Asians are not very known for cheese. To them it's just a western thing that really doesn't fit well with their traditional food but even if it did you can't really use them because it's super expensive and pretty rare

    For my Indian folks, As an Indian living in America I can tell you that Cream cheese tastes more like cheese than paneer, imagine a cheese spread, that is what it tastes like.
    And also, Yes even though we call paneer "Cottage cheese" in India, the cottage cheese sold in US, Canada etc is very different from Paneer.

      From a resident indian to a non resident indian.
      Cottage cheese utilises an enzyme frm intestines of cattle or synthetic enzyme.
      Paneer in india is vegetarian prepared just like how Gemma prepared but without food processor step....that's y it tastes different...

      Tushar agrawal ..cream cheese is LTTLE sour side as compared to paneer ..so u can add more vinegar or lemon salt or citrus acid

    Usually i use raw milk for making cream cheese and I add one table spoon of cow mlik butter ,which gives more flavor and a perfect consistency to my cream cheese

      Paneer is another name for "cheese". In another country it might be called something else but if it's made like this then you should feel free to use it in all your cooking/baking needs that call for cream cheese.

    I want to clarify something here. Many people living in different countries dont have access to cream. If they dont have cream or its too expensive then how will they get cream cheese? People keep asking gemma to show alternatives and she showed her best recipe. So instead of complaining so much just make it in a small batch and see how it turns out.

      Honestly people aren't complaining as much as expressing their surprise to cream cheese basically being blended paneer(cottage cheese). Paneer is a very famous food in India.

      She said use full fat milk. That is the regular milk without any of the fat removed. I'm sure that's not hard to find

    Super useful thank you. I use cream cheese as a low carb thickening agent instead of flour for things like sausage gravy so seeing how easy it would be to make from fresh raw milk is very exciting.

      I learned that from my mom long time ago , but we not make cream cheese, after we drained we put it in the refrigerator, and in the morning we take some and poured some half and half ,then spread on tost with honey or jam.. now l know how to make cream cheese too 👍

      Actually it’s harder for Indians to tell the difference because stores here have very little variety. Compared to abroad where you have an entire aisle dedicated just for cheese or just for milk.

    Thank you so much for this recipe. I just made this. I didn’t have cheesecloth so I used the fine mesh coffee filter from my machine, and it then placed it on two paper towels to dry and it still worked perfectly.

    Thank you for the recepie and also i used calcium lactate (the chemical used to curd milk in industries) and it turned out fine and i think its a good option for someone who dont want that lemon flavour in their cream cheese

      U can rinse the curds under cold water as Indians do to remove the lemon. Then blend

    Excellent recipe. Thx. Tho it takes about a day, I make my own sour cream (cream and a couple Tbs of cultured buttermilk which I keep frozen) at home as well. The flavor profile difference over store bought is amazing even when using 'generic' milk.

    Wow! I never knew it is possible to make cream cheese at home and that also from milk. The same process we Indian do and we call it paneer. So when i process homemade paneer, it will become cream cheese. Thanks for the information!🙏👍

    I do it with home made yogurt in place of lemon juice.The same procedure first boil milk and here I use low fat milk for health reasons.If you a cup of yogurt start with boiling 4 cups of milk.You won't be getting lemony paneer and whey.

      Adi Xoxo paneer is an Indian name for cottage cheese or say cream cheese.You can drain whey in a sieve similarly and keep in a fridge still in the sieve for an hour to make small cubes out of it .Use as a tofu or make famous palak(spinach) paneer.
