Mary, I made the make ahead peanut butter cookie recipe with dry ingredients. Today i added the wet ingredients. I noticed the batter was extremely dry. So I re read the recipe thinking i forgot a wet ingredient but realized the recipe only called for 2 1/4 cups of dry ingredients instead of the 3 3/4 cup of dry cookie mix in the recipe! Now I'm trying to figure out how to fix it. I've added more butter and another egg. Please tell me what the rest of the dry ingredients were for and for everyone else, be careful not to use all the dry ingredients as it will ruin the recipe and read very carefully! I hope i can fix it because i used a lot of ingredients to make this...

EXACTLY she dont scary us away . She is great explaining realistic down to earth knowledge for advance and especially newbies. I love her calming warm voice, along with being able to find ingredients that are in a variety of everyday family household cupboards.
I would place a paper sheet over top of all these mixes ( cut coffee filter) to prevent small amts of flour causing the breakdown of your sealing device. The flour is light enough to rise with the suction action of your device. I learned this from a canning person.😊💖
Also because the food saver is out of stock alot, you can use a break bleeder to seal jars and works well too. Great video as usual. I refere you to friends all the time. Thank you for all your knowledge.

@Christine B I do the same, only use from 1/3 to 1/2 the amount of sugar in the recipe. I have never regretted it. I don't have that sweet tooth many folks have. As a suggestion, I would keep the chocolate chips and raisins out of the make ahead and add them when you prepare the cookies. The reason is that I like to make sure they are distributed well. If they are in a very large jar, they may not distribute well. However, if you are doing the mix in individual jars, you do not have the same problem. If you do the snickerdoodles in individual jars, you could put the topping mix in a small bag and place it in the top of the jar.

I was wondering if you could give me a suggestion on a less expensive sweetener, that I can use for everything from baking to fermenting. I've been looking at sucanat, maple sugar, and coconut sugar. I find $10-$24 for a 2 pound container is way too expensive. I have been buying regular white table sugar for $7.99 for a 10 pound bag. I'm trying to switch to more traditional cooking. Thank you!
Love you and your videos. I have made the chocolate chip mixture! Today my grandson and I made a batch but the mixture was dry. Did I miss a step? I ended up adding 3 eggs and they still came out delicious . They received the grandkids approval.
Question - I made chocolate chip cookies this evening (my own favorite recipe) and I used the Sucanat sugar in place of the white sugar. Do I need to run it through a blender before using, or is it okay to use as is? The cookies tasted great ~ just looked a little funny. Love your videos! Hi Johanna, That's a great question. There are various things I have used for my own family including things that I was given as a child and also things that I gave my son when he was young. I have a playlist of my various home remedies, which I link here in this comment but I am not a medical professional or a nutritionist...so when it comes to children, it's always best to error on the side of caution when using natural remedies and check with your pediatrician or other medical professional (possibly a naturopath) for the best advice. I have a few question for dehydrating and I’m praying you can help me answer a few; If I wanted to make a thicker (2 inches thick and 10 inches long) thick and crunchier sourdough bread (heck any bread at this point lol) I’m just trying to “get to know” my air fryer that comes with a dehydrator but their instructions are a bit vague.... Today at 2:14pm EST, marks a year since I received a very devastating call that my great grandmother passed away at the age of 98. I’m afraid that if I don’t busy myself, mind and thoughts I’m going to do something I’ll surely regret. You remind me of her on so many levels. Thanks for sharing. I love walnut chocolate chip cookies. Since they can spoil I think I'll make the mixture without them and just add them in before baking them. We've been mostly following the already completed live conferences from the school as we didn't have any internet that first week and we haven't been awake for the ones this past week but I'm not sure how they can tell that he has seen and did them. I emailed his teacher to ask that.

Hi Sharon, Thanks for the kind words!! Yes, you can definitely use that if you can find it. I’m just not 100% sure as to the proper amount as I have not used it. But there is plenty of room for it in the jar. See what the powdered peanut butter says about the equivalent of 1/2 cup peanut butter. Then to the large jar, add the equivalent of three 1/2 cup amounts. Hope this helps. Keep me posted on how it turns. Love, Mary❤️🤗❤️

I have the new one that is an air fryer and you can’t lower the pressure and I can’t seem to find a way to make it without breaking the gelatin I put it on for one hour and it didn’t work I slow cook it for six hours and it doesn’t work any tips????

Mary's Nest I don’t I gave up my crockpot. I have the knew insta pot that is a slower cooker, pressure cooker and air fryer in one. So I tried the one hour pressure cooker and the crockpot setting and it’s all gross. 😕. And I’m afraid it’ll forever not work because like you said it runs to hot.

That’s a great question. I am not familiar with baking with gluten free flours but I think they work better in cookies than they do when trying to convert cake and bread recipes. I think the oat flour might work. Have you seen Bob’s Red Mill gluten-free baking mix? I’ve seen it at my grocery store and I’ve often wondered if that’s a good substitution. If you have it, parchment paper is good for a funnel substitute Buy mason jars at garage sales. The hidden enemy is trying to stop us from storing food by creating supply shortages. Can’t find mason jars new for less than 40-50 dollars for a 12 pack of quart jars.
Hi Mary love your channel, I tried your recipes, but I have a question did the snickerdoodle recipe and had only 7 cups. I thought we were suppose to get 3- 3 cups jars, but I only got 2-3 c. Jars with 1 1/4 c left over. Was I suppose to get only 2-3c. Jars with leftovers? HELP
Hi Virginia, Great question. You should get about 2 batches of cookies with the snickerdoodles mix. During storage, the mix settles a bit and works out to be under 7 cups when you scoop it out so it should work out that you have enough for 2 batches. I will have to go back and watch the video, if I said 3 batches for the snickerdoodles, I must have mis-spoke. Love, Mary
How would some bread on top of mixture in the jar and then using the break bleeder or the food saver to seal the jar. Would it help w any moisture and help so the flour doesn't get up into device ur using....?
I think that might be a great idea. And yes, I learned that you should put something on top of the mixture to prevent it getting into the machine so that makes a lot of sense to try some bread. Love, Mary❤️🤗❤️
Can a silica gel pack be reused from other items you get in the mail. I know that shoes come with silica packs in them. They may or may not be food safe so can they be used in this fashion? Or can they be reused at all. BTW that sort of can opener is called a “church key”. Oh and by the way every time I watch your videos I leave feeling better than I did. You are not only encouraging but so sweet you make me smile!

Great question. Silica gel packs keep the moisture out. Moisture will make your ordinary sugar, and salt clump together. Moisture will also begin to degrade the whole grains. SO what about brown sugar and whole sweeteners like Sucanat? Generally, a bit of moisture for brown sugar is a good thing to keep it from getting hard. But overall, when everything is mixed together with flour, etc., the ultimate goal is to limit moisture as much as possible. Silica gel packs do a good job at limiting the build up of moisture and you will find that mixed with all the other ingredients, the Sucanat or other whole sweetener does not get hard. As a suggestion, I would keep the chocolate chips and raisins out of the make ahead and add them when you prepare the cookies. The reason is that I like to make sure they are distributed well. If they are in a very large jar, they may not distribute well. However, if you are doing the mix in individual jars, you do not have the same problem. If you do the snickerdoodles in individual jars, you could put the topping mix in a small bag and place it in the top of the jar.

I was wondering if you could give me a suggestion on a less expensive sweetener, that I can use for everything from baking to fermenting. I've been looking at sucanat, maple sugar, and coconut sugar. I find $10-$24 for a 2 pound container is way too expensive. I have been buying regular white table sugar for $7.99 for a 10 pound bag. I'm trying to switch to more traditional cooking. Thank you!

Question - I made chocolate chip cookies this evening (my own favorite recipe) and I used the Sucanat sugar in place of the white sugar. Hi Johanna, That's a great question. There are various things I have used for my own family including things that I was given as a child and also things that I gave my son when he was young. I’m afraid that if I don’t busy myself, mind and thoughts I’m going to do something I’ll surely regret. You remind me of her on so many levels. Thanks for sharing. I love walnut chocolate chip cookies. Since they can spoil I think I'll make the mixture without them and just add them in before baking them. Hi Sharon, Thanks for the kind words!! Yes, you can definitely use that if you can find it. I’m just not 100% sure as to the proper amount as I have not used it. But there is plenty of room for it in the jar. See what the powdered peanut butter says about the equivalent of 1/2 cup peanut butter. I have the new one that is an air fryer and you can’t lower the pressure and I can’t seem to find a way to make it without breaking the gelatin I put it on for one hour and it didn’t work I slow cook it for six hours and it doesn’t work any tips????

Mary's Nest I don’t I gave up my crockpot. I have the knew insta pot that is a slower cooker, pressure cooker and air fryer in one. So I tried the one hour pressure cooker and the crockpot setting and it’s all gross. 😕. And I’m afraid it’ll forever not work because like you said it runs to hot.

Thank you for these make ahead mixes they’re great! Any ideas how I might make them Gluten Free (GF)? I’m thinking about trying GF whole grain Oat flour and GF whole grain brown rice flour.
My husband has gluten sensitives, so I’m trying to convert to a tradition GF foods kitchen.
That’s a great question. I am not familiar with baking with gluten free flours but I think they work better in cookies than they do when trying to convert cake and bread recipes. I think the oat flour might work. Have you seen Bob’s Red Mill gluten-free baking mix? I’ve seen it at my grocery store and I’ve often wondered if that’s a good substitution. Hi Virginia, Great question. You should get about 2 batches of cookies with the snickerdoodles mix. During storage, the mix settles a bit and works out to be under 7 cups when you scoop it out so it should work out that you have enough for 2 batches. I will have to go back and watch the video, if I said 3 batches for the snickerdoodles, I must have mis-spoke. Love, Mary

Can a silica gel pack be reused from other items you get in the mail. I know that shoes come with silica packs in them. They may or may not be food safe so can they be used in this fashion? Or can they be reused at all. BTW that sort of can opener is called a “church key”. Oh and by the way every time I watch your videos I leave feeling better than I did. You can make a sachet bag with fabric(washed) and fill it with dry rice to absorb moisture.

Does the silica gel make the sugar and salt harden in the mix?
Great question. Silica gel packs keep the moisture out. Moisture will make your ordinary sugar, and salt clump together. Moisture will also begin to degrade the whole grains. SO what about brown sugar and whole sweeteners like Sucanat? Generally, a bit of moisture for brown sugar is a good thing to keep it from getting hard. But overall, when everything is mixed together with flour, etc., the ultimate goal is to limit moisture as much as possible. Silica gel packs do a good job at limiting the build up of moisture and you will find that mixed with all the other ingredients, the Sucanat or other whole sweetener does not get hard.
