For the chicken gravy you’re missing the browning seasoning. When you cook chicken in a pan the brown bits are called “fond”. You might capture this in kitchen bouquet? I have never used it before. Also a tiny bit of sugar because the natural sugars are what cause the browning. If you cook your mix in a pan like a roux, brown it up a bit you may get the flavor you want and the color. Try it
You could definitely add something like that if you wanted. I was sticking with just shelf stable powdered ingredients and copying the Thrive flavors. I got close on the veloute with what I had to work with and I'm definitely happy with with the flavor. I expiremented with some sugar and some carrot powder while I was testing and I wasn't happy with the result. But the flavor and the ingredients are what is most important to me in this situation, that way it can be used as a substitute in my meal in a jar recipes 😊
You are so right…on the back of say McCormicks low sodium package mix it says the add some soy sauce. I’m going to try adding soy sauce powder and or Worcestershire powder… umami flavor is what’s missing.
I’d like to know if you put oxygen absorbers in the jars you put these sauce mixes in. Or if you vacuum seal them? I’m new to all of this, but now have the ingts and jars!

She called it salmon pea wiggle...she just added canned salmon and peas to a white sauce, seasoned with salt and pepper and we ate it over toast. I always loved it! She used salmon that my grampa caught in Alaska and she canned up and brought home, so it was probably a little bit better than store bought canned salmon!

I'm not trying to be mean but I think I would rather keep the ingredients separate and take out what I need when I'm cooking something then to go to all the trouble in making extra jars of the mixtures.

I too have considered reducing amounts to a single serve. But then. Left overs are nice to have sometimes.
All you have to do is divide the recipes in half or less depending on how many servings they feed!!😊😊

Great, I looked at my food storage and I found all three sauces that I bought in 2019.
On the beef gravy I would use potato starch instead of the corn starch and add homemade mushroom powder, onion powder, celery powder and carrot powder

I prefer corn starch to thicken sauces

Try adding maybe 1 T of the tomato chkn bullion to the chicken gravy. Or just tom powder. I think you will find the missing flavor

IF you are really looking fotr the color look for Kitchen Bouquet Browning & Seasoning Sauce a little goes a very long way

I haven't tried it but I understand it's a 1:1 substitute so I don't see why you couldn't.
