Today I present to you an amazing pasta recipe with aubergines that you can enjoy both warm and cold! This fresh and very tasty pasta recipe is an ideal solution for hot summer days. You can prepare it for lunch or dinner and your family will love it! Recipe light, delicious and suitable for vegetarians. Ingredients:
- 250 g (9 oz) rigatoni pasta
- 1 aubergine
- 20 cherry tomatoes
- Half a clove of garlic
- A generous bunch of basil
- 100 g (4 oz) of robiola or other fresh cheese
- A small glass of water
- Cheese to taste (I used mature pecorino)
- Olive oil
- Salt, pepper, oregano

- 250 ml (1 cup) of tomato puree
