I have watched more than 10 videos on how to cook lamb chops and none are confident to show how the inside cut looks like. I like how you give tips on the keep turning so it wont grey out the meat. Love watching your videos! You ARE a genius!

Marion, here in the US they are called lamb chops, cut from the rack. The ones that have the fillet attached are called loin lamb chops-so interesting is the differences in terminology! Before watching your videos I'd never heard of a chicken "Maryland," here we call them chicken leg quarters and they're very inexpensive, I love lamb, but it's expensive here, not as common as other proteins and in most cases not properly cooked in restaurants, Lovely recipe! GENIUS!!!!!!

I would replace to black pepper with lightly dry fried and crushed Szechuan pepper to really add some pizzaz.

I bought cooking wine but it says salted and I'm worried with soy sauce it will be too salty. Does it come in an unsalted version?
The recipe does come out to be too salty...I would say do 1-2 tbsp less of Soy sauce. Maybe increase the hoisin sauce by 1 tbsp.
