    Ingredients
    Scones
    2 cups (300 g) all-purpose flour
    ¼ cup (50 g) sugar
    1 Tbsp (15 g) baking powder
    ¼ tsp (1 g) salt
    1 Tbsp (6 g) finely grated lemon zest
    ½ cup (115 g) cool unsalted butter, cut into small pieces
    ½ cup (125 ml) whipping cream
    ¼ cup (60 ml) 2% milk, plus extra for brushing
    1 large egg
    1 tsp (5 ml) vanilla extract
    1 cup (160 g) fresh or frozen cranberries
    Glaze
    1 cup (130 g) icing sugar, sifted
    1 ½ (22 ml) Tbsp lemon juice
    Directions
    Scones
    1. Preheat the oven to 375 F and line a baking tray with parchment paper.
    2. Sift the flour, sugar, baking powder and salt into a large bowl. Stir in the lemon zest. Cut in the butter until the mixture is rough and crumbly but still small pieces of butter are visible.
    3. In a separate bowl, whisk the cream, milk, egg and vanilla together. Add this to the flour mixture and stir to just bring the dough together, turning out onto a work surface to complete bringing it together with your hands. Flatten the dough out and press the cranberries into the dough, folding it over and flattening it out a few times to incorporate the cranberries.
    4. Shape the dough into a disc about 10-inches across. Cut the disc into 8 wedges and place them on the prepared baking tray, leaving a few inches between them. Brush the scones with a little milk and bake for 20 to 25 minutes until the scones are lightly browned on top. Cool completely before glazing.
    Glaze
    1. For the glaze, whisk the icing sugar and lemon juice together and drizzle over the scones using the whisk or a fork. Let the glaze set for an hour before serving.
    2. The scones are best enjoyed the day they are baked.

    Anna, I hope you see this comment and accept sincere thanks. I'm 67, love and been making scones for years. They've always been bricks, no matter what shortening or ingredients I've added. I followed your recipe today, cold butter and employed your double method of mixing it in w fingers then smooshing w palms. And then gentle folding over...let me just share that I did not add sugar because I used extra sharp cheddar as an add-in. These scones, if I may say so, are remarkably fluffy, cheesy and I hope not to eat them all right away. Thank you so much, will try the cranberry lemon version next. A big fan...quik note: should anyone want to do a savory cheese version like I made, I added 1 tsp or dried mustard (Colmans)

    These are the lightest, fluffiest scones I have ever made. I used fresh blueberries, but I put them in the freezer first to harden before mixing in the batter. Delicious!

    I’ve been making scones for a long time. They were never great. I tried this receipe yesterday and I have to say....success, success , success. It’s the way you do the butter and folding it over. Soo delighted I’ve seen this. Thanks so much Anna..xx

    Just baked this with frozen blueberries! My husband and I loved it!!! - thank you. ❤️
    Used double cream though instead of whipping cream (thicker consistency than whipping cream), plus milk. Also added softened soft cheese to the glaze and it turned out amazing. x

    For anyone who’s confused about the flour part because in the video she says 2 cups of flour, and in the description it says 3 cups. I’ve tried 3 cups of flour every time and it is good, but this once I tried 2 cups and the dough was not thick and I had to add in another cup.

      I also made them with 3 cups. The dough turned out a little in the wet side, but the final product was perfect.

      When I saw it I just referred to other recipes and they all called for 2cups so I never tried the 3 but they’re always good 🤷🏻‍♀️

      I wish I had read this because I used just 2 cups and the dough seemed wet, but I proceeded. During baking I smelled smoke and the soft scones had leaked melted butter into the bottom of the oven. Oh my! Despite the 7 degrees outside I opened doors and windows! Brrrr!
      They were still tasty, but next time I’m definitely using 3 Cups of flour!

    I just made these and used dried cranberries and fresh blueberries. My home smells divine. The scones are very flaky and rose quite high. Still cooling but look forward to having for breakfast in the morning. Thanks for a wonderful recipe.

    Broke down and made these yesterday for Mother’s Day. Made a chocolate chip one because I was being pestered by the bf to make chocolate chip cookies all week. For myself I made cranberry blueberry with the lemon rind and a lemon glaze. Had to hydrate the berries first that’s how the chocolate chip one came to pass. As I waited on the berries made that one. These turned out really good. The bf who doesn’t like lemon actually liked them.
    I thought they both were great. Very glad I tried them. So much easier than individual cookies.

    OMGosh!!! This is my First Time making home-made scones and it was the First time my son HAS EVER eaten one. They came out so deliciously light, flaky and melt-in-your-mouth that we will NEVER eat any other recipe. I substituted the orange for the lemon and the bake filled my kitchen with the most awesome aroma that I thought I was on a cooking show, LOL!!! Thank you so much Anna.     These look so much better than what I see for sale in coffee shops and bakeries - which are closer to what we (Brits) call rock cakes ! Don’t confuse English scones with American scones, they are completely different. Both are delicious. Although I usually make the English scones my mother taught me to make , I am going to give these a try. Thank you for your lovely video.

    Easy and fantastic scones ! They came out fluffy and flaky. We all loved them and enjoyed them with our coffees.
    Your method of flattening the butter between your palms reminded me of my Hungarian mother baking a recipe from her mother, I’m thinking it was cookie based apple pie, and that was around 50 years ago! I had totally forgotten about it. Thank You Anna. So Yummy

    I just made these scones. Outstanding recipe! I didn't have fresh or frozen cranberries but used dried one that I reconstituted with orange juice; I zested the orange rather than use lemon zest because it's what I had. The house smells like a bakery and they are delightful. Thank you!

    I made these today, but used frozen blueberries instead of cranberries, and they were absolutely delicious. I went with the 2 cups of flour from what she did on the video, compared to the 3 cups she has on the printed recipe, and I think the 2 cups are just right. Thanks for the recipe, I never thought i'd make a decent scone in this lifetime.

      Just made these from the recipe in Anna's book calling for 3 cups of flour. Wish I'd watched this first. Agreed - too much flour and the mixture was very dry. I added more liquid but next (and there will be a next time!), I'll cut the flour amount and I'm sure they'll be perfect then. I also used a pastry cutter, but again, next time I'll do as she does in the video and flatten and "smoosh" the butter with my fingers/hands. But having said all that, they are delcious!

    Anna, I always turn to your channel for the proper method for various baked goods. Thank you for sharing your professional knowledge! I freeze cranberries at holiday time, and use them directly into scones year-round. I prefer orange with cranberry, so I use orange zest in the scones and the glaze. Lastly, I like to grate the cold butter into the dry ingredients, tossing as I go so it doesn't clump up. Hope these tips help others!

    A really great recipe! I thawed out blueberries on the first try- it added too much liquid to the dough. Second try I folded the berries in while still frozen. Perfect! Thanks Anna!

    Hello from Florida! Anna, I just made these scones. They are so light and absolutely delicious! I did not have cranberries, so I used blueberries. I added the milk in slowly, because the first time when I made it, the dough got too wet (different recipe, not yours, and it came out wrong). I used the reserved milk and brush that onto the scones. Thank you for showing us how to do it right and good!

    The written recipe reads 3 cups of flour. The video recipe says 2 cups of flour. I did 3 cups of flour and had to add a little more half and half and milk liquid.
    I also used a baking sheet silicone liner and they did terrific. They came out beautifully.

      I used 3 cups of flour. Add the liquid slowly. The first time I made it, I pour in all the liquids & it was a bit wet, and I had to add a little more flour, so it did not came out perfectly. But, the second time around, I added it slowly until combined like in the video.

      Hi M T. I used 3 cups for the recipe. I cup flour= 120grams (4.2 oz). So, 3 cups=360 grams. I don’t have a scale, but weigh is supposed to be exact? Just add the liquid in slowly. I had to watch Anna’s video several times to check the consistency. I hope this helps (from my experience), Anna is the expert of course.

    I used 3 cups of flour; the dough was somewhat difficult to pull together and I had to work at it quite a bit. The scones came out beautifully, though! Will definitely make them again!

    I have made these scones twice already, but instead of lemon I used orange and they turned out perfect!!

      Cranberry and orange do marry well, same with blueberries and lemon.

    i used my own recipe, but today i made some of my favourite scones better than ever because of your tips. i smeared the butter flat and folded the dough over itself when i shaped it. i never treated my scones as if they were pastries but that's exactly what they need. thanks for your help!

    Thank you, I had a professional baker scoff at me when asking if we needed to sift the flour-dry ingredients , that it was unnecessary. That using very cold butter was a waste of time harder labor. To use room temperature butter and put it in the walk in to freeze up. Which is a extra step I as of yet have not seen before.

    Made these today since I had sone cranberries leftover from Christmas and they were so scrumptious 😋 😋 I will definitely be making them again but I will try using orange zest instead of lemon zest just to change it up.

    I just made these scones they are wonderful. Better than anything I've ever purchased. I made a half batch because I'm the only one that's eating them. Which made approximately 8 nice size little stones. I'm sure they'll be gone by tomorrow. Thanks for the recipe.😁👍
