Just made these, and my first time baking my own bagels. Followed the recipe to a Tee and they're perfection. They are chewy, crisp, and soft all at the same time! The flavour's bang on, they're not overly sweet.

I followed the directions of this recipe precisely except that I used half of the ingredients which made four in total...and WOW! I topped them with garlic (my favorite). I wish I could show you the end result. They came out beautiful...bagel store quality. THANK YOU SO MUCH for making this video! 😃
Just made these and they came out good. Simple instructions and ingredients. I used regular sugar. I did put salt in the boiling water additionally to the baking soda and sugar.

OMG!! Made bagels before but I'm always open to try a new recipe. I am so glad I did. They are utterly perfect - and the inside!! Does not sit in your stomach like a lead balloon but a fluffy texture - with LOTS of salt and seeds. THANK YOU, thank you, thank you.

I made these yesterday to have for this Sunday morning. The taste is very good! I used the brown sugar in place of the malt. I made the mistake of storing them in Tupperware so they ende up losing the crispy outside...even after toasting them. Still, they are so delicious! Thank you John for this recipe 😊
And not only mixing is it good. It gets the flour all over on the counter. It’s a good idea mixing it before you start the electric mixer. I’m gonna be making those bagels tomorrow morning. I worked in a bagel shop when I was younger. My favorite topping was sesame, plain and cheese. We would boil the bagels, board them up and COVER them in Colby cheese. Since they were covered they would be a little more chewy than the others after they baked. They were the most popular. Also, pumpernickel bagels were good with cream cheese and smoked salmon . yum!!

Love this recipe! First time making bagels and it came out perfectly. One thing to note that it took a lot longer for my stand mixer to get the dough right. Though I am also using a kitchen aid bowl lift instead of a head tilt. I had to increase the speed to 3 as opposed to 2 mentioned in the video. Bagels took a little longer than anticipated but delicious!!
These are freaking delicious and surprisingly easy to make, just a little time consuming, but hey it's well worth the 2.5hrs. I've baked these twice and made plain, everything bagel and dill weed. I cannot wait to make them again and try other flavours. John is my go to for recipes that I do not have and well lets face it, I've switched out some of mine for his lol. You can never go wrong John's recipes. Thanks John!!!!
My favorite bagel is a different kind of "everything bagel" made by a local bakery. I love strawberry cream cheese on mine, so no onion or garlic, just sesame seeds, poppy seeds and sunflower seeds. The sunflower seeds give it some extra crunchy goodness. Yum! Give it a try!😋

Barley malt isn't that hard to find around here, you just have to go to a brewing supply store. They sell it in various grades of "malt", light to dark. It is a syrup that looks like like dark corn syrup.

I started going to culinary school last year because I didn't know anything, but of course wanted to learn, and compared to recipes that I find online, yours are always perfect. That's an incredible track record! Yesterday, I made bagels based off of another person's recipe, but the dough was so wet and sticky, no matter how much flour I kneaded into it, it wouldn't develop enough gluten. Needless to say, my bagels came out deformed 😓. I should've known better and followed your version instead... So next week, I'll try again!

If you further process the malted barley, you can extract the sugars, thus malt barley syrup. If the active enzyme is kept in, you get “diastatic” malt powder, which has the power to chop big carbohydrates into sugars, thus “digesting” the flour more. Long answer, but yes and no, it’s the same malt that’s in beer, just a different form..

My family loves these bagels! They didn't last 24 hours! If, like me, you only have instant yeast and think "it's close enough" and the bagels end up too tough when cooled, they're great cut in half and toasted! The blog post in the description gives tips on what to do with instant yeast, like don't bloom and have the first rise be only 20 minutes.
Hi John I weighed out my bread flour using a kitchen scale as well as measuring cups for 4.5 cups. I scooped each cup and leveled them, and dropped them into a bowl over the scale but, I ended up with 677 grams . Using a stand mixer, I mixed on low and got really dry dough. I added an extra half cup of luke warm water to it then it was too wet so I added about three tablespoons of bread flour to it and mixed for another 13 minutes and it finally came together. I don't know if your written measurement for cups to grams is incorrect but yeah it yielded not 540 grams but, 677 grams of bread flour. This was the second attempt and I got the same result
I'm glad you said this. I only used 4 cups and some change and my dough is just wayyyyyy too dense. I've never made bagels before, but I'm pretty experienced at baking and I can just tell the dough doesn't feel right.

I did it mine were not perfectly round but I did jalapeños and cheese, and sesame with roasted sesame oil drizzle. It was a win. I gave some away so I would not over indulge
I want to thank you for your recipes. I have tried a number of them so far with great results. Never knew that adding sour cream could make soft and moist muffins and cakes. I want to try making bagels but wonder if it is possible to add caramelized onions for onion bagels or cinnamon and raisins for cinnamon raisin bagel to your bagel recipe . These are my favorite ones and where I live here in Canada are almost impossible to find. Looking forward to seeing new recipes.
I love your videos, you always have great recipes. I love making bagels but I shape them a little differently. Typically I roll a piece of the dough like a snake and before connecting the two ends I roll twist the dough in opposite directions. I find it produces a better texture to the bagel in the end, but your punch hole method is a lot easier.
i've been binging vids on how to's for bagels, i narrowed down my faves to yours and one other guys, i couldn't decide which to follow so i incorporated what i liked most from both lol, i've never been a huge baker but have been craving fresh bagels for a long time. they just can't be had locally, sadly. i hope i did it all right ;)

I'm glad you said this. I only used 4 cups and some change and my dough is just wayyyyyy too dense. I've never made bagels before, but I'm pretty experienced at baking and I can just tell the dough doesn't feel right.

I did it mine were not perfectly round but I did jalapeños and cheese, and sesame with roasted sesame oil drizzle. It was a win. I gave some away so I would not over indulge

I want to thank you for your recipes. I have tried a number of them so far with great results. Never knew that adding sour cream could make soft and moist muffins and cakes. I want to try making bagels but wonder if it is possible to add caramelized onions for onion bagels or cinnamon and raisins for cinnamon raisin bagel to your bagel recipe . These are my favorite ones and where I live here in Canada are almost impossible to find. Looking forward to seeing new recipes.

I love your videos, you always have great recipes. I love making bagels but I shape them a little differently. Typically I roll a piece of the dough like a snake and before connecting the two ends I roll twist the dough in opposite directions. I find it produces a better texture to the bagel in the end, but your punch hole method is a lot easier.
I use the same and 4 oz portions. Make dough, shape, proof overnight, then bake.
@@minouchka5655 Made and allowed to rise on a Monday, prof overnight to bake off Tuesday morning. Repeat every day.

i've been binging vids on how to's for bagels, i narrowed down my faves to yours and one other guys, i couldn't decide which to follow so i incorporated what i liked most from both lol, i've never been a huge baker but have been craving fresh bagels for a long time. they just can't be had locally, sadly. i hope i did it all right ;)
So incredibly good!!! ❤ after we boil them can we freeze them and when ever we want fresh bagels, take them out of the freeze and bake? 🙂

I got a kitchen aide for Christmas and used it to knead my dough. Boy was she working overtime BUT it worked beautifully. Bagels were delicious
