Tofu Scramble Recipe | Easy Vegan Breakfast (BONUS: How to Dice an Onion)

  • This is a nice easy one that every vegan should have under their belt. If family comes over for brunch or you just need a big breakfast, this one is sure to please!
    I know a lot of people worry about soy and it's many reported dangers. We've all heard of it's estrogenic effects, goitrogenic worries, high phytate content, fertility and testosterone reducing issues.
    Well, here is a well researched and cited article that explains all of that and actually shows that it is actually a very health promoting food that we shouldn't shy away from.
    Instead of posting a bunch of studies that are hard to thumb through, this article links about 25 of them.

    I like soy and don't doubt it's safety, but as with anything, keep it in moderation. Besides, even water can be bad for your health if you have too much.
    Ever wonder why there is so much bad press around soy? Ask the Meat and Dairy industry funded Weston A Price foundation. But don't listen too long, they will get you on a butter and lard diet before you know it. Free range of course.

    I love tofu scrambles! I add tons of veggies, turmeric, garlic powder, onion powder, pepper, paprika and nutritional yeast. So good and filling.

    Very close to how i do it, but only thing is that i add a little water right after i have cooked the tofu. It helps all that accumulated caramelization and turmeric at the bottom of the pan to come of. Guarantee your scramble will have a deeper taste!

    I heard you, no oil. I was not ready. Now I am cooking with no oil and loving it. It’s so Weird that even a pecan is oily and have cut down to a few a day. Thank you . You are making my transition fun and delicious. Keep up the great work you are helping many that have Been struggling with the old tired diet of artificial sweeteners and diet Coke and processed 100 cal snacks. You are my sidekick ..

    Beautiful basic tofu scramble. I have doing this for quite a while and it never gets boring as you can substitute anything for whatever you have at home. I really like to add ginger and a splash of soy.

    dropping by with a quick note about spices! i highly suggest adding the black pepper after the rest of the dish is cooked. heating black pepper makes it bitter. great recipe, thank you.

    Simnett - I would like to see you get into making some authentic, artisan whole-grain (I usually go for spelt or rye with some cracked grains and seeds) sourdough bread and getting into things such as dehydrating tomatoes to make sun-dried tomatoes.
    I usually go for organic spelt or rye with some cracked grains and seeds for the sourdough, and for the dehydrating component a conventional fan-forced oven with door left ajar works too.
    Sour dough bread + homemade hummus + sundried tomatoes + wilted greens... O.O
    It changed my world going to sourdough (genuine sourdough), and the symptoms I used to get with grains (bloating/gastrointestinal issues, lethargy, skin issues etc.) disappeared.

    I've been vegan for almost 8 years now, and although I use tofu a lot and I'm a fairly good cook, I have yet to make a scramble. I think I'll try this recipe though. The ingredients look not only delicious, but also simple. Keep up the good work! Your channel is definitely a big inspiration.

    I have got to try this out, I personally do not like kale that much hopefully i will find this taste delicious. Plus the onion chopping, so cool!

    I've actually made this before. :) But I don't put in hot pepper myself. Maybe a bit of sweet bell pepper. I do like adding a bit of fresh garlic and mushrooms to mine. I've also used spinach but I haven't tried Kale. It looks good... need to try it.
    Need to add a bit more water when cooking tho. Put the water in the pan right away and let the water heat up before adding the onion. That does look really colourful and delicious!

      The pepper wasn't a hot pepper. It might be good like that though. Yes, you are totally right about the water. I didn't think about it until after actually. It's hard filming a food video sometimes. Usually I just cook and don't think about much. Thank you.

      :) I just started trying to make test videos and I'm discovering how much your brain scrambles a bit when it turns on you. :)
      Never thought about coating the tofu with tumeric first. Someone just gave me some black salt., I'd never normally get it but since I have it I'll have to try it. I need to make this again, it looks fantastic! LOL Cheers!

    I’ve tried black Himalayan salt and it’s tasty as a tofu seasoning like sulphur but still love a pinch of curry powder in my scrambled eggz

    Hey Derek! Me and my partner Candance (both vegan) are huge fans of your channel and really appreciate your authenticity in a sea of a lot of pandering to people's egos. Anyways haha! I was curious if you used and aminos, natural Tamari, nutritional yeast(b12) or Himalayan salt for flavoring? We use it sparingly but as chefs it's become a bit of a habit. And of you don't use it why not? Obviously excessively i get it, but it has mineral benefits of used sparingly i thought? Thank you so much for sharing your message and light, much love ❤

    Love making a good tofu scramble. There are so many variations you can make with this. Great addition is starting of frying some brown chessnut mushrooms in the pan before adding the tofu, it really give the dish a lot more depth! Btw, why no salt? Adding salt realy elevates the taste of this aswel :)
    PS: that ending was amazing!

    I already make tofu scramble but I make it either with my own home made BBQ sauce or Curry seasonings (which includes tumeric) lol. I will have to try the kale in it though. Lord knows we can always use ore greens!

    If you want less of your nutrition burning on the pan from lack off oil add your water but then follow it up with a lid ontop. This will keep the steam flowing and reducing any burning of food sticking to the pan and overall collecting more nutrition.

Although it’s very delicious, it’s a bit too middle eastern in flavor for my liking… turmeric, cumin, etc… do you have a recipe that gives it a more neutral flavor? Maybe different spices?

    Excellent! And great description. Ironically eggs LOWER testosterone through a feedback loop- they are from hen ovaries so contain some estrogen. The human brain senses that estrogen in men and assumes there’s too much testosterone and it is aromatizing into estrogen and this turn T production down. I used to eat 2-3 eggs a day and had lower testosterone though no special symptoms. And I tried vegan for 6wks straight and retested and found T had doubled! Unfortunately I gradually let meet and dairy creep back in but now feel much more aligned with vegan eating and even was able to treat this way on a trip to nyc without eating meat or pizza. What a difference.

    If I do make it I will be using the black salt cause I do need it to taste exactly like eggs 😃😜 and I hear a lot of people say that you're supposed to use tofu that has been frozen and you're supposed to press it . I've tried that , doesn't make it taste any better to me so I guess I have to aquire a taste for it. Anyway I'm going to try this recipe cause I do love scrambled eggs and I don't use oil either when I cook so that is something we have in common.

    Derek, do you think soy has a special place in someone's diet?
    You seem to include flax seeds & turmeric (w/ black pepper) every day, because of their unique nutritional propertes; this would make Michael Greger VERY proud. Do you think soy deserves similar attention? Does it possess special properties above and beyond other legumes, possibly warranting daily consumption, or would getting protein from starchy beans and fats from nuts/seeds prove similarly nutritious? Might it have a special place in the diet of an individual looking to gain muscle?
    How often do YOU consume soy?
