AMAZING VEGAN QUESO SAUCE RECIPE | EASY & HEALTHY!

  • As soon as I tried this store bought vegan Queso, I knew I wanted to create my own version and share it with you. So here it is! Using ingredients you probably already have in your house, this sauce is super easy quick and easy to make, healthy and SO DELICIOUS!

    Vegan Queso Recipe
    2 cups cooked cauliflower
    1/2 Rep Pepper
    1-2 Garlic Cloves
    1/4 Lemon (juice)
    2 Tbsp Onion
    2 (or 3) Tbsp Nutritional Yeast
    2 Tsp almond butter
    2 Tsp ACV
    1 Tsp of salt
    1 Tsp of paprika
    2 Tsp water
    1/3 Tsp Chilli Spice
    1/2 Tsp of cumin
    Blend until smooth. Should be good in the fridge for 2 or 3 days.

    Two things and maybe somebody’s already suggested this… The nutritional yeast’s flavour was probably enhanced by the amount of salt they used in the commercial product. And also I have found using roasted red pepper over just regular red pepper gives it more of a queso cheese flavour. Love your content!

    So I made this by roasting all the vegetables first, then I added more liquid and put it over pasta shells. It was super good! Even my non vegan husband approved!

      I will try roasting the cauliflower next time instead of boiling it…. roasting always creates a deeper more savory flavor

    Oh my gosh, this is the 2nd time I have made this and it's gets better. I chared the 🌰, 🌶 (I used Red, Green, Orange, & Yellow).
    I used low sodium vegetable broth, Mexican chili powder, and the rest of the ingredients you suggested, and it is 🔥.
    I made the sauce to add to my Jalapeño Poppers. It hit so dam hard.

      Hi. Super recipe. I've tried other nacho cheese recipe and I must say yours is the best. Even my cousin who is not vegan, loved it. I was so happy to see him so excited that he asked for a bowl full so he can have it with tortilla chips. Well done my friend, well done.😊

    Use sauerkraut or the juice from it to make things cheesier! The lactic acid is usually what vegan cheese sauce is missing!
    Also some sweetener, because dairy is slightly sweet from lactose.
    I also use doenjjang and umeboshi to layer different fermenty flavors.

      Yes! Makes a huge difference! I can never keep them on hand so I usually just halve some red peppers from the garden, stick them skin side up under the broiler until the skin starts to blacken, then peel it when it cools, totally yummy! To add more cheesiness try adding a touch of dijon and some miso.

    At lest here in Germany, the ingredients are ranked by weight. So even though nutritional yeast is low at the list, 3 or 4 tablespoons might be correct, because their density is super low. In order to make a difference in the total weight, there has to be quite a volume in there.

      @Curelia just look up the difference between "volume %" and "mass %" Just because something makes up the gratest mass of the whole, doesn`t mean that it makes up the gratest volume.

      I believe this is it! At production level, the measurements should be in weight. I'm here lamenting that he didnt put the ingredients in grams cuz that makes following recipes so much easier also lol

    I use queso sauce to make roasted potatoes, cauliflower and parsnips to make them yummy. I want to use it when my grand kids are over, but they are afraid of spice. I was so glad to find I can make it so it will be creamy not spicy for them. You're an angel, thanks!

    I just made this and it's surprisingly good. A couple things I did differently than you was I blended some chia seeds and almond slivers at the very start. I also added a spoonful of salsa. Then I added in everything else. I've never had this vegan queso before so I have no idea how close I got but it's good stuff! I didn't have any nachos so I just put it on some potatoes. lol

    Went straight to the kitchen to make this since I had all the ingredients! Absolutely loved it, including the nachos (I added some beans to mine and cooked the crumbles in taco seasoning). Amazing, my non vegan family didn’t know the difference! 🎉

    It will probably develope when stored, as most of the ingredients haven't had time to dissolve fully. They would have used industrial equipment and everything would have been almost powder by the time it went in, including yeast and cauliflower. Then it was maybe superheated prior to packaging which would cook ingredients together rather than blend.
    Who knows what goes on at production level.

      And what is natural about forcefuly breading(raping), genetically manipulating, growing in confinement, injecting with antibiotics (and suplements and hormones), slaughtering in an industrial line of production, cutting into symmetrical cuts (so you know, it doesn't look like what it is, which is a corpse), cooling or even freezeing (so it doesn't petrify like it does in nature within 24 hours), packaged and transported to a grocery store, bought and then cooked and seasons so it loses its natural taste (which is basically nothing + iron) and approaches as much as possible plant based seasons (vegan seasons), then heat it up throughly so it becomes none-lethal to humans and years later have to take satins to deal with blocking arteries (best case cenário) or chemo for colon cancer.

    I literally made this around 12:30 am. central time.
    I added onion and garlic powder and smoke paprika, and I added some 🥥 water.
    It was 🔥, I am going to play with it further. This was absolutely amazing.

    We are new to vegen (my husband had open heart surgery and a stroke so we had to do something we had never had soy curls but I air fried some like you said and we LOVE them I put them in everything and eat them by themselves thank you and I love all you videos

    Try blending chia seeds to powder and adding a bit-maybe a teaspoon. It will thicken and make it smoother.

    Derek! If you look at the ingredients list from the store bought one there are ALMONDS! I think that's the reason why it's cheesier and more creamy!

    I love making this queso sauce. It has great flavor. I did make one change that made it really creamy. I replaced the almond butter with a 1/4 cup soaked cashews. I really enjoy your channel. Your food looks and tastes great!!

    Our Walmart regularly carries that exact brand, but only in the smaller container. It’s found in the produce vegan section near the kombucha. I put it on everything! Super excited to try this recipe though!!! When I first read the ingredients, I also thought, “I have all that at home!” Thanks for being so determined in nailing this down😆

    I bet you the company cooks theirs and use a high speed blender. To make vegan cheese smooth and cheesy, yes the N.Y. but a high speed blender and then break it down on the stove top. Love the video

    Amazing! I remember finding this product at Target as well.
    Also perhaps maybe lightly toasting the nutritional yeast in a pan first for more cheesy flavor ? No more than 20 secs.

    I took note of what others said in the comments and it turned out very good.
    I removed the lemon juice entirely, upped the ACV and almond butter to 1 tbsp each, used 3 tbsp nooch, and added 2 tbsp raw cashews to sub for the almonds used in the original recipe. It's creamy and delicious and came out a great consistency for dipping or nachos.

    Tastes amazing! I had to use steamed frozen cauliflower and jarred roasted bell pepper but it tastes just like the store bought! 5 stars!

    Yes, get chia seeds and ground it up then add. Chia seeds does make a difference with creaminess.

    This looks amazing! You're like a friendly mad scientist with recipes I love it!
    Quick tip for cutting the red pepper: Have you tried holding it with both hands and pushing the stem in with both thumbs? The stem and all the seeds attached to the white part fall in. Then you just separate both halves of the red pepper with your hands and voila!

    I've been trying to recreate it as well since the ingredients are so simple! Thank you for saving me the hastle of yet another failed attempt 😅 also just a tip... for the red pepper if you use the roasted red pepper that come in a jar is better!

    Soaked chia seeds can be used as an egg replacement, so it would add a thicker/tighter consistency. Mustard, especially dijon mustard, can also be great for adding the piquant taste that's found in real cheese too. Still, great video!

    According to the label, the queso has almonds as the third ingredients PLUS almond butter further down the line. The addition of almonds plus the almond butter would make it creamier and more similar to real queso, but also higher in fat.
    I think I am going to make it exactly like the video to keep it low fat but roast all the vegetables to suit it my own taste. Thanks for an awesome recipe!

    Just made a version of this because I didn't have everything. I substituted roasted red pepper for the red pepper, left out the lemon juice, my onions were frozen, used garlic powder scant 1/2 teaspoon in place of fresh garlic, taco seasoning instead of chili spice, I added 2 Tablespoons of raw almonds that I soaked in water for about 15 min (this was in addition to the almond butter which I did use ) , and I used some frozen (previously cooked) cauliflower. We liked the final product. My husband is picky about the cheeze sauces but he liked this one. So if you don't have the ingredients, improvise! 😁 Thanks for the recipe!!

    The Costco queso has almonds as well as the almond butter - that could be why it is creamier. But I just found this last week and I’m obsessed with it so thanks for the recipe!! Yum. Just found your channel - loving it 👍

      I'm thinking those almonds would be best soaked overnight and peeled (an easy process) to add creaminess. Seems worth a try! I'll be making this later today, and thanks for your comment, I was going to skip the almonds.

    I wonder if baking the red pepper, cauliflower and possibly the onion would add a different flavour. Would also make blending it easier for people with blenders that might not handle the veggies as well. Just a thought.

      Roasting the bell pepper would add different flavor. That's usually what I do when I make sauces

    I've found that apple cider vinegar tastes closer to the cheddar cheese sauces than lemon juice does. Maybe try that next time? And a tsp of white miso would rock it.

      I made one with 2 tsp of miso ( bought at the local farmers market) today and it tastes like cheese sauce with beer in it. So weird, but I agree that the acv ones seem closer to tasting cheesier. My mission to the best cheeze sauce continues. Thanks again!

    Hi! My husband loved the sauce! Thank you. Just sharing a couple of changes I made. I didn’t have almond butter so I used Brazilian nuts. The paprika I used was smoked paprika. I added cumin and chipotle powder. The onion was a little bitter so I cooked the sauce adding water. I used agar agar to keep the creaminess. It turned out so yummy. Thank you!!

    I went plant based whole food eating in December 2020. I tried at least four sauces called cheesy sauce and I disliked all of them. I made a halved version of yours and it passed the taste test!! I used it on my bean and rice and veggie burrito for brunch and I loved it. Thank you.

    Oo I saw that queso dip at Costco too but thought it was too expensive and also way too much. Love that you've recreated this - I actually use a 5-minute Vitamix recipe from Jill McKeever and it's a serious mind blower. Base is oats! I have not felt the need to try any other queso recipe since discovering hers. I do love this product recreation idea though, hope to see more :)

    The sauce was the bomb!
    I didn't have almond butter so I just blended TBSP of almonds with some hot water to make kind of an almond milk. I left out the water in the recipe to compensate and it turned out so creamy and delicious! Thank you!!! 🙌🙌🙌

    The chilli + paprika will give you a close match to the cayenne pepper 😀

      Ahhh thanks. Yes, it had cayenne in the ingredients but I didn't have any that I could find.... so I guess I made it instinctively. Haha.

      hes pretty logical tho, and if you are adding almond butter thats JUST 100% ALMONDS, he may have just doubled the almond butter amt & figured that covers the addition of whole almonds too?

    Ground chia seeds may be the chia protein, maybe add more almond butter.
    This is basically a cauliflower and red pepper sauce. Thanks for all the helpful videos!🎁🌶 🙂

    Howdy! Couple of thoughts for you: 1) The peppers, onion and garlic in the store-brand recipe may well be cooked products (so, if you didn't try a version like this, you may want to and see if it gets closer?) and 2) Order of ingredients with regard to quantity, *I think*, tends to be by weight. This would explain needing more nutritional yeast/lighter product by volume. Great project, well done!

    The ingredients are listed in order by weight. Nooch is so so light that it makes sense that it's low down the list but volume is more than you'd expect🙂

    I got a lot of attention from the QUESO sauce since the first time you showed it in a video. I made a screenshot when the container appeared with the ingredients and tried to make it at home! 😜 I tried, but it didn't taste much like cheese... 🙄 It was something more veggie... Red pepper and cauliflower intense flavor... But it was very good anyway! I definitely have to try again, but varying the amount of the ingredients! I am happy to see that you also have thought on making it at home 😉! Happy summer 💚💚

    “Keep in mind this is not one serving of dip”.... oh, yeah, for sure. I definitely wouldn’t eat most of that in one sitting. 😂 Honestly, though, when it comes to yummy dips like this, I do have to serve out a portion ahead of time, or I will eat way more than I should. I’ve got to make those nachos! That plate is making me drool!

    Those nachos would be delicious with beans and lettuce... oh and pickled carrots and jalapeño... Some good oil free refried beans with veg stock, garlic, diced onion, onion powder, a little salt and pepper and chilis 🤤🤤🤤 you are so motivating me to eat all the plants.

    Just tried! Didn't have cauliflower so I used white bean... Extra nooch. And some salsa instead of peppers and onion. Also used tahini in place of almond butter. Not sure what yours tastes like but HOLY SMOKES this is good. 👏🎉
