OMGoogness I did the same thing on Monday! I did my toful about half as thick and I basically took the tofu scramble recipe added a little water started up and let them soak on each side then I used some of the Tempeh beacon, half a slice of Chao cheese and English muffins they were fantastic 😍 I'm going to make another set of them this week for breakfasts My 15 yr old said You have done it again Mom!
I made this numerous times, without the tempeh because it is expensive where I live, or the vegan cheese which can also be pricy, and it was so tasty. Really great recipe. Super yummy with whatever whole grain bread you have; I used chipotle veganaise, greens, tomato and the tofu. Very healthy, but tastes like comfort food and is satisfying.
I made these for Sunday breakfast and held my breath until my family took their first bites. Winner!! Used firm tofu (I couldn’t find medium), black salt, veggie breakfast sausage and Daiya cheese. My family is omnivorous but as I’m head chef they eat my food to amuse me (and are thankful they feel great and have excellent lab results). You could add black salt instead of regular salt to the marinade for a more eggy taste and press the tofu disks in a tofu press for maximum marinade absorption! Super excited to try this recipe out, great stuff from Derek as per!
I've been doing this for about a month now with JUST Egg and Gardein sausage patties as well as Daiya cheddar slices. Hot sauce and a little bit of ketchup brings up the flavors quite nicely.

I like this mcvegan idea! A good hack for making tempeh taste a little more indulgent and more like bacon is to first brown both sides of it in the pan. Then once both sides are brown turn down the heat and you hit it with some tamari/soy sauce and maple syrup. You cook that until it becomes a glaze on the tempeh. Tastes great in a sandwich!
I have always stayed away from tofu but found some made with sprouted organic soy beans and non defoaming emulsifier. Been eating it everyday as an experiment and seems to agree with my system very well. Looks good Derek keep it up
Derek you can try using black salt(Kala namak) with the tofu to give it an eggy taste. i had a tofu egg(basically the same thing you did but with the black salt) and it tasted exactly like egg but with the tofu texture which was amazing :)
If you can find some black salt (I get mine from an Indian supermarket), it really adds eggy flavour. I also use white pepper instead of black. I laughed when I saw the maple syrup going in! Youse Canadians crack me up! 💚✌

Black Sea salt tastes/ smells like sulfur!! For any egg-like recipes, use the black salt in place of regular salt... Amazing!!
