    Sara Lynn Cauchon shares 3 new healthy one skillet quinoa recipes that are great for dinner.
    Asparagus, Chicken & Quinoa Bake
    Servings: 6
    Calories per serving: 427
    2 leeks, sliced
    3 garlic cloves, minced
    1 ½ cups quinoa
    3 cups chicken broth
    1 tbsp fresh thyme
    1 tsp dried oregano
    2 chicken breasts, cooked and shredded
    2 cups asparagus, cut into 2” pieces
    1 cup ricotta cheese
    2 lemons
    ¼ cup fresh parsley, roughly chopped
    1 cup parmesan, grated
    salt and pepper to taste
    2 tbsp butter
    In an oven safe skillet on medium-high heat add butter. Add leeks and sauté for for 2-3 minutes, or until leeks soften. Add garlic and quinoa and cook for another minute. Add broth, thyme and oregano and bring to a boil. Cover pot and reduce to a simmer. Cook for approximately 15-20 minutes, or until quinoa is almost cooked through.
    Stir in chicken, asparagus, ricotta cheese, the zest and juice of a lemon and parsley. Season with salt and pepper to taste. Top with parmesan and remaining lemon, sliced into rounds.
    Bake in oven at 375ºF for approximately 15 minutes, or until cheese is slightly golden and quinoa is hot and bubbly.
    Store in the refrigerator for up to 3 days.

    Turkey Quinoa Taco Skillet
    Servings: 8
    Calories per serving: 488
    1 lb ground turkey
    1 onion, finely diced
    1 red pepper, diced
    1 cup corn, fresh or frozen
    2 garlic cloves, minced
    1 jalapeno, minced
    1 tbsp chili seasoning
    1 tsp ground cumin
    1 can black beans, rinsed and drained
    1 cup quinoa
    1 14oz can diced tomatoes
    2 ½ cups chicken broth
    salt and pepper to taste
    1 cup cheddar cheese, grated
    cilantro to garnish
    oil
    In an oven safe skillet on medium-high heat add oil. Add turkey and cook until slightly browned and almost cooked through. Add onion, red pepper, corn and cook for another minute. Add minced garlic, jalapeno chili powder, cumin and quinoa. Mix well. Add diced tomatoes, beans and broth. Bring to a boil and reduce to a simmer. Cook for 15-20 minutes, or until quinoa is mostly cooked through. Turn the heat off and top mixture with cheddar cheese and put the lid back on. Allow cheese to melt and serve immediately with cilantro and salsa.
    Store in the refrigerator for up to 3 days.

    Garlic Shrimp & Quinoa
    Servings: 8
    Calories per serving: 315
    1 onion, finely diced
    4 garlic cloves, minced
    1 chili, finely sliced (deseeded if desired)
    1 tsp smoked paprika
    1 ½ cups quinoa
    3 cups chicken or vegetable broth
    2 tbsp butter
    2 cups broccoli florets
    1 lb raw shrimp, peeled
    1 lemon
    2 tbsp butter
    salt and pepper to taste
    green onion for garnish
    In a skillet on medium-high heat add butter. Add onion and cook for 3 minutes, or until slightly softened. Add garlic, chili and smoked paprika and cook until fragrant. Add quinoa and stir to combine. Add broth and season with salt and pepper. Bring the mixture to a boil then reduce to a simmer. Cover skillet and cook for 10-15 minutes, or until quinoa is cooked and liquid is mostly absorbed. Add broccoli florets and shrimp. Cover skillet and cook for an additional 5 minutes or until shrimp are cooked through. Season with lemon juice and garnish with sliced green onion.
    Store in the refrigerator for up to 3 days.

    Hello, I am from Bolivia, and I eat QUINOA since I was born, it is a very nutritional food and gives a lot of energy, as everyone knows it is a food originating in the ANDES in South America, that is where I live, in the ANDES.
    I consume Quinoa about once a week, and in the way that I like the most, it is to cook the QUINOA as if it were rice, and then make a sauce with onion, tomato, salt and yellow pepper, all prepared with oil in a pan and toast. this sauce for about 20 minutes, and to give it that delicious touch we put a little grated cheese on it.
    Hmmm delicious.
    Here sometimes we accompany this delicious dish with a little hot pepper, but that depends on each person.

    Having just used this skillet for the first time, ua-cam.com/users/postUgkxIst1DRMCWM6dgd9VjXMFXlH4HeElE6Mc to batter-fry some macaroni & cheese, I'm absolutely in love with it. The foldaway design means it actually fits in my very small kitchen, but it also makes everything crazy simple to clean. While the instructions say you should not deep fry in this, you can, but do it with your best judgment; in my case the oil didn't even reach the halfway mark.It's hard to see in the pictures, but the skillet itself has a lip in the corner. This allows steam to get out during cooking if the lid is on (so don't try to steam rice in it), and makes pouring out used oil extremely easy.Cleanup was a dream. After detaching the plug and control circuit, the unit is just three separate pieces: The skillet itself, the lid, and the base which may or may not need any cleaning at all (usually just the handles). Compared to a dedicated deep fryer I purchased in the past, where the heating element was suspended in the oil and everything was difficult to clean, the difference was amazing.I'm definitely looking forward to using this for more things in the future.

    I made the first recipe last night and it came out so so good!! I've returned to this video to make the turkey quinoa tonight and I'm so excited! And to all the people that are complaining about these not being healthy, just leave out whatever you think is unhealthy or substitute it. I only used 1/2 cup of ricotta cheese in the first one and didn't top it with Parmesan and it still came out awesome!

    The Domestic Geek, thank you for all the hard work you do! I'm 19 and was interested in cooking but kinda sucked at it, you changed that though. Your videos are awesome because they're easy to follow with usually easy cooking techniques that even a man child like myself can follow lol! And the fact that they're all healthy is even better!     Tonight we made the quinoa taco skillet. This was so good and so easy. We topped it with sour cream, cilantro, and tortilla chips. It was filling but light. The recipe made enough for us to have leftovers for another dinner. Definitely will be making this again.

    For all the people who claim this isnt healthy... compared to what? Fast food or eating out? A home cooked meal is always better than those. Me specifically am not trying to lose weight in fact im trying to gain it. Just learn to substitute geez. I seriously hate comment sections on youtube its always people with just negativity I personally really enjoyed this !

      There is nothing unhealthy in her 3 dishes.. people just need to eat less. As i am sure you would agree anyway, most "healthy" foods are massively processed, compared with the raw ingredients she is using here. Sadly you are fighting a losing battle against the marketing machine of the corporations selling "healthy" food, who convince people to eat the expensive processed stuff they sell. It is easier not to read the comments :-D

    I just made the taco skillet and it is SO GOOD! This is the first recipe I’ve made with quinoa and I am so pleasantly surprised. You can’t even tell there’s quinoa in it because it blends in so well with the turkey! Obsessed!

    These all look SO good! I might actually make every single one of these! Probably gonna swap out the asparagus for broccoli though (not a fan personally.) Or I wonder if I could do brussel sprouts? I'm a big sprouts fan.

    Just made the Garlic Shrimp & Quinoa recipe with my husband. He is a very picky eater, so it has been very challenging to find meals that we both can enjoy. At the top of our list is to learn how to incorporate. This meal hits all the high notes, fulling, tasty, easy to prepare. Thank you for sharing

    I made the chicken-lemon one tonight, but I swapped out the asparagus for kale. Last time I made it, I swapped for broccoli which was pretty good but oh my god, the kale was SO MUCH better! It's one of my favourite dishes to make, it's so easy and it makes such a big amount, it's great for meal prepping honestly.

      REKHA PANCHAL you can replace all chicken with vegan chickn strips, all the turkey in the recipe with veggie ground and the shrimp in the last one with vegan shrimp. You could also put in more seasoning... for ex: poultry seasoning in the first one

      REKHA PANCHAL I think the second recipe is perfect to turn vegetarian. the beans and quinoa give you plenty of fiber and protein so the ground turkey isn't really needed.

    I was under the impression that quinoa had to be rinsed before cooking. Do you cook it without rinsing?

      maryjanew20, yes it is important to rinse your quinoa thoroughly in a fine mesh strainer.

      Most brands available nowadays are already washed and rinsed, that's why most people don't bother. If it wouldn't be washed prior, it would have a really bitter unpleasant taste, almost inedible.

    I dont see how these recipes are healthy. Just because quinoa was used..? Not very good for health conscious people, especially that first dish with butter, ricotta and extra cheese on top🤦🏻‍♀️

      Butter is healthier than artificial fats loaded with saturated oils. I saw that butter helps you lose weight faster and keeps your skin softer.

    Made it today, replaced the turkey for Quorn mince and black beans for mixed beans. It was delicious! Definitely something I will have to make again. Thank you soo much for sharing this wonderful recipe.

    Replace the butter with olive oil. Cooking with butter is really bad for your heart and health generally.

      So you must strictly eat plain, bland tasting foods? Yes this has butter and cheese, but it's modifiable and even then he other parts of the recipe are fine too. Like Jenna said, it's healthier than KFC or any fast food restaurant. Way better than pop and chips or loads of pasta. The recipe has some very good nutrients too. Your caloric intake is what matters most. So long as you get the right nutrients and stay below your daily caloric intake you will be fine.

      I make all recipes vegan. And I need to half or quarter down most recipes as I live alone. I hate to eat the same food over and over.
