  • Okonomiyaki, sometimes called Japanese pizza or Japanese pancake, is one of the best dishes to make if you're a beginner japanese cook. It exposes you to a lot of classic Japanese ingredients, but it is very easy to make well and is very flexible in terms of what you put in the okonomiyaki.
    This recipe is inspired by my recent trip to Osaka (see link to my Osaka vlog below), and this particular style of okonomiyaki is a dish that Osaka is known for. It's the perfect combination of salty-sweet-umami-creamy...yum!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.     So an alternative to the fresh grated special yam: Otafuku brand makes a kit that includes the pancake mix, *yam powder packet* , the tempura crisps, and a dried seaweed topping. It actually makes such a delicious treat and the yam powder really and truly makes such a difference! I did notice they sell this on Amazon but it’s so expensive there but you can also purchase just the yam powder under same brand, Otafuku as well.
    Apparently, you can get variations of this kit and some don’t come with it and include the sauce and bonito flakes instead- so pay attention to what you are buying.
    You can also purchase just the flour mix - just the crunchy tempura bits and just the yam powder. Obviously you can purchase the sauce, the Kewpie mayo and the bonito flakes. For me- it’s worth getting the authentic ingredients first and try it- then see what you wouldn’t mind exchanging in flavour and texture for alternatives.
    I adore this so much this kit so much and I can get it in Nashville Tennessee in our larger Asian mart. So it’s probably in most other ones and particularly if you have one that specialty is Japanese foods.

    I am transported back to Takoyaki Gen, a restaurant in Los Angeles run by two sisters from Osaka. I went there at least twice a week for 4 or 5 years. I was destroyed when they sold their place. Thank you for bringing back beautiful, wonderful memories.

    I used to travel to Japan for business, and this was my favorite dish for dinner! It was so good and inexpensive especially in Osaka.

    I love mine with kimchi, cheese and some mochi, the chewy texture is really good! It would be really cool to see a Thai style okonomiyaki one day! 😏

    Everybody loves okonomiyaki, I totally see why it's referred to as the Japanese pizza. The only thing I dare not make at home is monjayaki, ha! Thank you for this upload and I hope everybody tries this recipe-- a big hit when cooking for kids and their friends too.

    omg, this is one of my favorite recipes of yours. have to wait to make it as I have to wait on amazon. my local asian markets didn't have everything.hoping you keep posting. you, helens kitchen and maanchi are my favorites. wish you well.weird that I couldn't find all the ingredients since I live in the asian district in Las Vegas.

    This was my “first favorite” Japanese dish. I am interested to see the use of Yama imo, dashi, baking powder and cornstarch, which I did not see done by my friends in Japan (but which I now want to try!), while we did always use egg mixed into the batter right away...ideally, one egg per person being served. (When we were cooking for a group of people on a budget we sometimes used 2 eggs for 6-8 people and just added more water.) Of course, we lived in Niigata prefecture so I’m sure it was a different version. When I make it here in the US, I just make a batter with flour, egg, water, salt and a little garlic powder. Then I start with lots of shredded cabbage and onion (round or green). If I have benishoga, I use that, but otherwise I use sushi ginger or even shredded raw ginger root, which is easy to get here, and better than powdered ginger (which is not the best, but I have used it when I had nothing else). I never had access to the Yama imo, but one of my Japanese friends used to use grated regular potatoes sometimes. She also would use leftover tempura “crumbs” if she had any from actual tempura she had made. We also always added cooked corn; nowadays I sometimes use frozen mixed vegetables, or at least shredded carrots (which add bright color, especially if you don’t have benishoga.) And I have often used cooked chopped bacon for the protein part, just mixed into the batter with the vegetables. When I serve it here, we don’t always have nori seaweed, katsuoboshi, or ground sesame seed, but we offer mayonnaise, ketchup and soy sauce which are among the toppings we had in Japan.     I would spice it up with green chili! And also noodles on the side. Woowww you are an amazing cook! I learn so much from you and love the way you explain the how and why of everything you do. Love from the Netherlands! I am going to make this today! Succeeded very delicious only I could not find tenkasu bits so the okonomiyaki was a bit heavy? Or maybe the batter was too thick I don t know.

    I’ve been obsessed with okonomiyaki since visiting Japan last year. It’s a Japanese food that really needs to be discovered in the rest of the world. I’ve made it a few times but you’ve got some great tips here I need to try! Did you get a chance to try Hiroshima style okonomiyaki? Instead of mixing the ingredients together they layer them and add noodles!!

    a good sub for the Japanese bbq sauce is good ole American bbq sauce mixed with soy sauce -- comes damn close. Great Video - I've only made this a few times myself (and had it here in Japan town).

    The Japanese (or Chinese) yam is incredibly versatile and delicious. You can just steam it as your carbo, or cut it into cubes and slow-braise with beef or pork. BTW I think Korean markets have thin-sliced pork belly. Buying a whole pork belly and slicing it is fine too.

    i remember seeing my aunt used to cut ladies finger into inch pieces and whisk it in a little water and with that the water gets all slimy and then she would strain and add that water to make the pancake mixture and this pancake is used to make Kunafa in Sri Lanka (it's a cuisine found among Moor muslim community)

    I think you could use cleaned and peeled Mexican nopales cactus paddles blended up as a replacement for the Mountain Yam, as the nopales has a very snotty texture and not much flavor.

    If I'm using bacon, I like to fry one side for a while, get some of that fat to render out and help flavor everything. Flip it over to the uncooked side, then add on the batter, then cook as normal.
    And if you don't have tenkasu (tempura crumbles) I use panko bread crumbs.

    Sadly i can’t do that recipe. I live in a region were japanese store is inexistant 😭 i could improvise 🤔but it would not be the same. Still, i love your vidéo.

    I dont know what to look for corn starch in Thailand, cus in Thai they only have แป้งข้าวโพด which I’m not sure if it’s corn flour or corn starch. Help please p pai

    There is YAM root in Asian food hving equivalent texture as the Japanese root. ( What'sname is this?).
