    Girl Scout Thin-Mint Blizzard
    By: The Jaroudi Family
    Ingredients:
    Crust Layer
    3⁄4 oat flour
    1⁄2 cup raw walnuts
    5 pitted dates
    2 tbsp nondairy milk (unflavored & unsweetened)
    Thin-Mint Layer
    1⁄4 cup nondairy milk (unflavored & unsweetened)
    5 pitted dates
    2 tbsp cocoa powder
    1⁄4 tsp mint extract
    1⁄4 cup raw sunflower seeds
    Vanilla Nicecream (made in a blender)
    3 frozen bananas
    1⁄4 cup nondairy milk (unflavored & unsweetened)
    1 tsp vanilla extract
    Directions:
    Blend the crust layer in a food processor, once combined press crust into a small pan evenly.
    In a high-speed blender add all the ingredients for the thin-mint layer, blend until smooth.
    Add the thin-mint layer mixture on top of the crust layer.
    Freeze until solid
    Blend all of the vanilla nicecream ingredients together in a high-speed blender.
    Store nicecream in the freezer until serving
    Assemble the Thin-Mint Blizzard mixing in nicecream and thin-mint cookie in layers
    Optional:
    We love serving our Thin-Mint Blizzards in fancy dishes with a little bit of extra date paste or chocolate swirled inside the dish!

    Rather than adding the liquid to the frozen bananas, you can let them sit on the counter for 5-7 minutes to thaw slightly. Then they will blend to a smooth purée easily.

    I'll be doing the nice cream, the cookie bit and some berry and/or fruit nice creams like mango, peaches or strawberries. It's only because I'm not a big chocolate fan, but that's a good one for visitors for sure :)

    Great recipe video Brittany @ The Jaroudi Family. You can get your omega fats from walnuts and it's better than omega oil supplements because you are eating the whole food and getting additional nutrients not just the omega fats. I get most of my omega fats from a mixture of seeds and nuts.

    I would use Peanuts. I always loved them in Blizzards or Parfaits. I need some cute little dessert cups. This looks really good.

    Oh, I have some mint extract I got to put in my oatmeal cookies (sometimes). I never though of using mint in a nice cream combination. Thanks for the idea!

      @@robinlaycock3186 make extra crust and press one layer in the bottom of a pan then the nice cream then crumble the other crust on top and freeze

    Looks so good! My nice cream is real Creamy and I need to put it in separate dishes then freeze. It gets so frozen it needs to be out for awhile to soften enough to eat. Am I blending too much? You say you can just scoop it out from the freezer.

    I'll try this, but use my Yonanas machine to make the nice cream. I have the wide based vitamix, so I'm wondering if I should double the thin mint layer.

    Wish I could try it but I don't dare. I didn't lose any weight the first 3 years of my Whole Food Plant-Based diet and that was with very few desserts. I just finally started losing weight after the spices from Dr. Greger and I am too afraid to eat anything to throw it off.

      Hmm.. You could try a single serving dessert, like I've done one or two bananas frozen, blended, add some single-ingredient chocolate chips plus mint extract for mint chocolate chip nice cream! I'd say at least twice a week, sometimes 7 days a week, lol, that 2 to 3 of my fruit servings for the daily dozen come in the form of nice cream! Berry nice cream; tropical; mint chocolate chip; different flavor each day!

      @@massages_for_world_peace8909 Those sound good. Maybe if I actually lose weight I will try them. I didn't lose any weight the first 3 years of Plant-Based eating. I am losing weight now but I have just lost my first 12 pounds and have many multiples of ten to go. I still don't understand why switching all the way over to great big salads and vegan dinner dishes and oatmeal didn't result in weight loss. Portion-size and insulin resistance, for sure. But I am thrilled that suddenly I am losing 4 pounds per week without really needing to change my eating because I changed it 3 years ago and had gotten rid of desserts the year before that.

      @@wishingb5859 yeah, that sounds frustrating that it wasn’t an immediate change in the body. But hey you kept it up, good job! And now it’s paying off! Good luck on the rest of it! Walks were a game changer for me. :)

      @@massages_for_world_peace8909 Thanks. Yeah, I like walking. I have had to give up my no-oil hummus and other things. I just had the wrong expectations. I switched from pizza and ice cream and candy every day and thought I would lose weight eating big salads and vegan chili and things like that but I made mistakes like too much oil-free hummus and adding vegan grounds that were too high fat to the chili. But even after correcting for all of the mistakes I could think of, it just hasn't been easy for me to lose weight. So I don't dare add in anything yet.
