I love what u said about becoming a chef. My first time trying for a job in the kitchen was about 16 years ago. It was a small Italian joint and the guy asked me if I ever worked with dough. I lied and said yes he took me back threw me a dough ball and told me to stretch it out to 25 inches. Needles to say I had no clue what I was doing so he then proceeded to ask me to cut an onion. I knew how to cut an onion but not properly. He told me to get the fuck out and was PISSED. Anyways I'm a sous chef now at a high end steakhouse and am still climbing for the top. I want to open my own place sooner than later.

Have you ever tried getting lentil flower making a dough with water and bit of olive oil (Not to wet, not dry) little salt and making little croutons (How ever you spell it) baked in the oven...... they are quite good

It is so old that the name and numbers are rubbed off. I bought it years ago at an equipment auction. It's called a braiser or Rondeau. Good luck to you and your business MrS. Jack

Al, I use it a lot in many dishes Al., all steak dishes, marsala, etc. I have to make it weekly.
Al Doiron Besides the regular meals he prepares, I,m sure he gets veal bones by the box load. That’s how most of the restaurants do it anyway.
