Happy watching you survive and thrive after the surgery, Jack! I love seeing you cook at the restaurant on a burner that's set up to be *HOTTER THAN A $2 PISTOL* and then at home on a weak little electric stovetop. (=Not a lot of people can make that transition!!!) Home cooks have to worry about little splatters while commercial chefs just tear through to turn out the product and *Let the good times roll!* Had my bypass operation a month after this video and I'm about to sit down to sausage and waffles breakfast on a Saturday morning here in the South. LIFE IS GOOD!
You got that right! All the best to you and your recovery! I always use electric at home, gas is the best for restaurant cooking. Nice to take your time at home and not worry about fumes, OOgMandino! Kitchen Condition, working out, and a good balance of rest/ activity is helping me through. Changing eating habits and exercise is where its at. LIFE IS GOOD, indeed, my friend!

I love the flavor of jalapeños, but the seeds are too hot without flavor I believe. I also don't like later 'remembering' I ate jalapeños.
