    Good recipe. Works good for me. I smoked for 3 hours my tuna pieces.

    Looks good I will try. I’ve been looking for some recipes. This is similar to what I do with trout a few more condiments but I’m willing to try. Thank you.

    Waaaaay too much sugar, should be same amount as salt

      I disagree! I do 1/2 cup salt, 2 cups brown sugar. You can leave it in the dry brine longer, end up with fish that's not too salty. I do the 50/50 ratio with bigger things, like a whole turkey. But lower ratio is right for the tuna, IMHO

      equal parts goes for wet brine, was done right for dry brine
