I disagree! I do 1/2 cup salt, 2 cups brown sugar. You can leave it in the dry brine longer, end up with fish that's not too salty. I do the 50/50 ratio with bigger things, like a whole turkey. But lower ratio is right for the tuna, IMHO

equal parts goes for wet brine, was done right for dry brine
