Getting ready to smoke some YT today. Been in the fridge marinading since yesterday. I usually make burgers which are killer!! Never smoked YT…only BFT & YFT…can’t wait to taste it!
It definitely will increase the salty flavor. It is a common technique to rinse when taking protein out of a brine. If you brine turkey for Thanksgiving, definitely rinse as I have learned the hard way. Nice job, Afran, those Cedros filets looked awesome!!!!!
1/4 cup sea salt, 2 cups brown sugar and 1 bottle of chardonnay wine. Marinate 24 hrs. smoke 3-4 hours. BOMBA!!!!

Hey I do my drying in refrigerator normally for salmon to form pellicle, this method oughta be ok for this as well right?
