500ml white wine vinegar1 tbsp peppercornbunch tarragon3large free-range egg yolks200ml melted and skimmed unsalted buttersqueeze lemon juice

I always add dash of Tobasco and a dash of truffle oil...but basically this is how I do it.
Why not try the whisk tip on an immersion blender. Let the whisk do all of the work..works like magic..give it a try

Tarragon vinegar
Apple cider vinegar works great well too if you don't have it.

Don’t leave the sauce over the heat to keep it warm, it scrambles the eggs
