The poaching strategy is interesting. We make about 3 dozen eggs Benedict for an annual get together and it is always 'slowed down' by the poaching. They sure did look perfect!

Two easy ways to clarify butter:
1) melt the butter and refrigerate for an hour, then scrape the solidified fats off the top;
2) strain melted butter through a coffee filter which is formed into a cone into a coffee cup. The butter drains into the cup, and the solids are filtered out.

You can put the hollandaise in a foam canister in warm water to keep it set and make it easily dispensable.

Molly, I'm old school on hollandaise which cooks the yolks, your's is really considered a mayo. Nice shortcut though. If u cook yolks using Dbl boiler method & incorporate ur method, perfect hollandaise!
Hollandaise is a mayonnaise, just hot rather than cold but it’s still a liaison sauce of eggs and fat, whichEVER way you make it.

I think she left out that the blender she used spins so fast it heats the ingredients. So it should be called Eggs Benedict for a crowd if you own a Vitamix.
I am so relieved I dont have to whisk the hollandaise anymore this is so much easier and also makes making the sauce and eggs benny at home a lot more accessible imo . sometimes bon appetite does a great job demystifying some dishes n provding alternate n more accessible techniques n i am SO HERE FOR IT !!!!
