I love that this is the first time making it on camera because this is what I (a home baker) looks like when I make a recipe for the first time. Even after reading the recipe 3-4 times before starting I always forget to add an ingredient or a step. I need to try this recipe.

Just so you know, fan assisted ovens are super rare in the US. So, recipe temps are always for a regular oven. Also, we never put brownies in the fridge, unless it's for an unusually fancy brownie. I've never had a brownie in the UK, but judging from the brownies they make on GBBO, they must be quite different.

I'm confused about the "freshly ground" yet "instant" espresso. 😮 I've used instant espresso powder before, but it's never "freshly ground", it's always already a powder, because it's "instant". Can anyone shed light? Thx.

They are two different things. Ground coffee is coffee beans finely ground to be used to make espresso, you drink the hot water flavoured with the ground coffee but you don’t eat the coffee grounds. Instant coffee is brewed coffee which is concentrated and dried. You just reconstitute it with hot water. If you use instant coffee you get the flavour of coffee but if you use ground coffee you are eating the beans themselves. I think it’s very fair to want to know which one because they seem very different but they’re a bit conflated in the recipe

Browned butter yes but too much cocoa and too little chocolate. Save yourself time and ingredients and make a different Jemma’s brownie recipe- they are absolutely amazing 😉
@ any other brownie recipe from this chanell is great(Jemma’s recipes) There is “100 hour brownie” recipe which the comments suggest its amazing, I haven’t tried that one though 😅
You can buy lots of fab egg replacers online and in most grocery stores now - just check the instructions open the packets for how to use for each egg 👌🏼
400 g isn’t a lot as this makes a large pan of brownies (9 x 13). Google popular brownie recipes (Nick Malgieri’s supernatural brownies, Claire Saffitz’ fudgy brownies, Sally’s baking Addiction, etc) and you’ll see this is quite a normal amount. In fact, it’s lower than many. People often get used to recipes for 9 x 9 pans, which require half the amount of ingredients, so when they see a recipe of this size they think it’s a lot. Brownies are just high in sugar in general.
You are welcome to change the ratios - we haven't tried changing them so can't say I that would work well. I will say you'd need to alter all the ingredients to cut down on sugar - in all honesty 400g isn't actually that much for the six of these brownies!

Most American home ovens don't traditionally have fans, so a recipe would never say that for home. 350°F no fan or 325° with fan

I agree!! I find that in most recipes it’s safe to cut 15-20% of the sugar without comprimising the structure of the bake. Just a little tip!
