Written instructions: Instructions In a saucepan on low heat add 250g unsalted butter, 250g dark chocolate, 180ml coffee (use part hot water if you must). Stir constantly until melted, if it looks like its separating thats normal. Set aside to cool. In a large bowl break up 4 large eggs. Whisk in 150ml buttermilk (or sour cream) and 3tbsp vege oil. Add the chocolate mixture slowly as you stir constantly. Add 430g caster sugar.Sieve in 150g of plain flour and self raising flour, 60g coco powder, 3/4tsp bicarb, big pinch of salt. Fold in. If it looks lumpy just gently whisk it, trying not to overstir. Pour into three 8" tins. Level out the thick batter. Bake in 170C (fan forced) for 22 mins, make sure you test each cake. Let them cool for 5 mins ONLY before turning them out of the tins onto baking paper. Gnache 100g butter and 200g chocolate (~50%). Because we want it thick straight away we melt the chocolate and butter first, then add the cream. Melt 30 seconds at a time till melted, stir in 100ml double cream. Leave to sit. Buttercream Whip 125g soft butter till very pale and fluffy. Add a pinch of salt. Combine and then beat in 225g icing sugar in two lots (so it doesn't get everywhere). Fold in 80g melted chocolate. Construction Use a bread knife to flatten the cakes totally. Stick down the first layer of cake to the board with a small blob of buttercream. Make sure the butter cream is soft (microwave it for a few seconds if needed), and add on each layer. For the last level of the of cake, flip it upside down before placing on the cake tower. Spread the gnache over the cake using a palette knife and a cake smoother.

I have a tip! (For chocolate cakes) If you don't have spray for your pans and you're going to butter & flour them- don't use flour. Use coco powder. This will keep the edges brown rather than them having spots of white flour. (Sift the coco into the pan to get a good distribution and then knock it all around like you would to flour it). Works really well and if you're doing a "naked" cake, it makes sure your layers are really beautiful.

Just made this cake! I'm a baker and have tried countless recipes but THIS ONE HITS DIFFERENT. Its so chocolatey, rich, I used espresso roast coffee and it makes the batter taste divine
@@catherinechristy9763 you could do a baileys buttercream or brush some baileys on your cakes when stacking. Adding Baileys to the cake batter wont really do anything taste wise but it will muck up the consistency of the cake.
I've found that any cake batter that is thick when poured into baking tins will be too dry when baked. I prefer somewhat thin to near watery consistency when pouring in tins. Resulting cake will be very moist.
This batter starts thickening the minute you leave it on the counter! Has any of you found the result a little too crusty? The edges break when I cut out the top part! 😢
omg i made this yesterday and it was so successful and delicious, best chocolate cake recipe ever i made buttermilk using milk and 2 tablespoons of white vinegar and used half the amount of sugar and it still turned out quite sweet tysm for this recipe! xx

I made this yesterday and it came out wonderfully delicious! I went for the 3 layer 8 inch option and it’s still huge 😎 When I made the butter cream I felt it was way too sweet so next time I’d put less sugar. This time I added some double cream (50ml) and it did the job while keeping the cream spreadable. If you do the three layer option keep in mind it will take 3-5 minutes longer in the oven.

I do quite a lot of baking and have to say, hands down this is the best chocolate cake recipe I have ever made. Dense, deep chocolate flavour, not over sweet, not dry, like so many chocolate cakes and the ganache is gorgeous. Without doubt this will be my go to chocolate cake from now on.
I've not baked a cake before, but I dived in with this! 2 layers had to be redone because they stuck to the tin and my first ganache split but 8 hours later it was finished and lovely :) very proud of it thank you for the guide
im a baking instructor and i have to tell you this is the best one ive make so far from youtube, ive tried other 2 chocolate cake from different youtube channel, and this chocolate cake is the one im gonna turn into belgium chocolate cake. the taste is just so chocolaty and moist. i baked it at 200C for around 28minutes. and for the tip, if you dont want your cake to have a dome, let them out while they are still hot and kinda press the dome and it will flattened after they cool down.
So I just finished making this cake and it truly is AMAZING! But as Jemma said, the buttercream truly is very sweet, if I made it again I’d definitely use the ganache as the filling as well as the glaze! Love this recipe!

OMG, l tried this recipe just today. Infact l just finished baking it about 5 minutes ago. Its my daughter's birthday tomorrow. Initially l was a bit unsure because it was a bit liquidy and was tempted to add more flour. I said to myself to hell with it, am going to do as the recipe says. Made this cake for my daughter's birthday and instead of the chocolate buttercream between each layer I added a peanut butter buttercream in the middle. Went so well with this delicious cake. Even better, the cake leftovers were still moist and delicious after a week in the fridge. This is going to be my go-to chocolate cake from now on.

I was just about to ask how to adjust the oven temp and timing for a two layer cake. I've tried twice with the reduced recipe in 2 x 8inch pans at the same temp but left it in for longer longer. The second time I turned down the temp a bit but came out dry both times. So thanks for this comment. I am going to try it at 160c. Hopefully that works.
@@jones8928 I don't trust domestic ovens so always have a clip on oven temp as well! They run hotter and have uneven heat spots. Oh and my tins are smaller in height as well. I ended up making 4 layers with SMBC and choc drips. Was so moist.🧡
Thanks@@rubykeiss1540 . Yeah I use an oven thermometer as well. I turned it down to 175c according to the oven thermometer on the second try but that obviously wasn't low enough. The cake would be fully baked but the middle would still be wet and by the time the middle is done the whole cake is dry. Yeah I also need to play with the chocolate ganache. A bit too bitter for my taste so I might add some milk chocolate to that. I put caramel between the layers but I might try the SMBC.
just made this !!! did two 10 inch pans, put the ganache in the middle and cream on top with some strawberries to make it more fresh! tasted amazing will be making it again for sure!

This is a great cake! I waited until I’d made it before I commented. I made a mr men cake for my son’s bday using this recipe (minus the ganache) & it was A+++ Everyone thought it tasted amazing, so this will now be my go to cake for bdays! I’m no baker so I made it a few days in advance and froze each layer separately & defrosted the day before decorating to save my sanity & it was so so good! I used greaseproof paper on one and butter & flour on another layer and the greaseproof was better . And as a NON coffee lover I was a bit dubious about the cup of coffee in the mix but there was zero coffee taste. Not even a hint! Honestly, if you need a great cake that is easy & tastes amazing, don’t bother looking for another recipe, this is it! I tried another cake from another UA-camr but it wasn’t good at all (like I say I’m no baker) but this and the cupcake recipe from these guys are perfection and are mega easy too! It has taken me nearly 11 months to get to making this but did it last night. Made the following stupid mistakes: Did not let my cakes cool enough so one cracked, put 3 cakes on one shelf so one was a little under cooked and sank, did not make enough butter cream, did not use 35% cream in ganache used only 10%, so my ganache was a little too wet but it worked perfectly on the drip! Used sour cream and the coffee, Outcome....the cake was friggin awesome! Seriously thank you Sally, Jemma and Sam! I know why you have so many views, but I had the video running on a loop, this was extremely helpful. I kept saying WHAT Sally, wait what!!. I made this as my birthday cake and it was a hit even though all of the mistakes. I will perfect this recipe and include a photo for the next one.
Delicious cake! I made for a birthday celebration. I loved all the different elements, cake, filling, frosting. I used 2 9" pans instead and put all the buttercream in the center as filling. I will definitely increase the amount of ganache for the frosting. It could have something to do with the 9" pan size but I really can't imagine there would be enough ganache to frost 4 7" cakes. When I make it again (which I will!!) I will make a recipe and a half for the ganache.
I made this cake on Sunday (just the sponges I made my own buttercream) as I was making my Granddaughter’s birthday cake and oh my goodness how delicious!!! It’s light, moist and tastes wonderful (you definitely can’t taste the coffee). This will now be my go to chocolate sponge x
After watching this video 100 times, I baked this cake and it was a massive success. I used 4 10-inch cake pans by multiplying the recipe by 1.6. Two of my cakes did crumble as I took them out of their tins so for the next two I baked, I left them in their tins until they were completely cool and they didn't crumble. I suggest you also leave your cakes to cool completely before taking them out of their tins. The coffee in the cake was undetectable to my partner who hates coffee, but our friend who loves coffee and baking could taste it. The salt in the icing between each layer definitely makes a massive difference; the cake had a perfect balance of textures and flavours. I ended up making a massive cake as my first ever tiered cake and it was a huge hit! I will definitely be trying more of their recipes!

Really good recipe, I baked 3 "8 layers. Not very high but the quality of the sponge is definitely showing. I froze 2 layers and we ate one as a test for upcoming birthday. I'll definitely bake another batch to make a taller cake. I've also made milk & chocolate ganache, we prefer the milk. Good luck everyone.

That does look like a perfect chocolate cake :) I used to have a baking book, that I have lost, which had a recipe for a pudding that separated into a layer of sauce on the bottom and sponge on top. It gave variations for lemon upside down and chocolate upside down sponge cakes. I remember that incorporating fluffy whipped egg whites was key to creating this wonderful pudding. (You didn't make the sponge and sauce separately; they separated while cooking). It was cooked in a casserole dish, rather than a cake tin. It was one of the most delicious cakes I have ever baked. I would love to know how to make this, again.

If anyone else needs confirmation, you really can't taste the coffee like this in chocolate recipes. And it really does boost the flavour. Oh, and for a buttermilk substitute, just get natural (unflavoured) yoghurt and water it down slightly - say, 3 parts yoghurt and 1 part water

How many people are here because they made this cake for Valentine's Day? It was far simpler than I had imagined. Lots of bowls but the cake was perfect, even from my dodgy oven. The ganache was great and the buttercream ethereal and I managed it all with a hand whisk and spatula!

I tried out this cake in six inches pan with three layers. This was the best chocolate cake recipe I have ever tried out. Top was bit crispy and crumbled, however cutting off the top most bit made it perfect. This cake was so soft, moist and has an intense flavor of chocolate. I topped with strawberries as a decoration and the finishing was perfect 👍 thanks Sally for sharing this wonderful recipe!!
@@durrgashinisirijayan4698 Hi, I used the measurements mentioned for the 4 x 7" tins. divided the batter into three 6 inches pans and made a three-layered cake. It came beautifully :) however, the chocolate icing used within the layers was a bit too much for this if made with 125g of butter. Better to reduce the measurements of it and make a smaller quantity of chocolate buttercream.

How does this compare to the devil's food cake that you have done please, i.e which is moistest as i need to do a chocolate birthday cake and not sure which recipe to use?
I would never add eggs to each other or the MIXTURE without putting them in another container, checking them & giving them the sniff test. Never do I see anyone in the demonstrations, CHECK THE EGGS FIRST - or warn to do so.

2/3tbsps cornstarch in your icing sugar before adding it to the whipped butter, reduces the sweetness😊

I do quite a lot of baking and have to say, hands down this is the best chocolate cake recipe I have ever made. Dense, deep chocolate flavour, not over sweet, not dry, like so many chocolate cakes and the ganache is gorgeous. Without doubt this will be my go to chocolate cake from now on.

I've not baked a cake before, but I dived in with this! 2 layers had to be redone because they stuck to the tin and my first ganache split but 8 hours later it was finished and lovely :) very proud of it thank you for the guide
im a baking instructor and i have to tell you this is the best one ive make so far from youtube, ive tried other 2 chocolate cake from different youtube channel, and this chocolate cake is the one im gonna turn into belgium chocolate cake. the taste is just so chocolaty and moist. i baked it at 200C for around 28minutes. and for the tip, if you dont want your cake to have a dome, let them out while they are still hot and kinda press the dome and it will flattened after they cool down.
So I just finished making this cake and it truly is AMAZING! But as Jemma said, the buttercream truly is very sweet, if I made it again I’d definitely use the ganache as the filling as well as the glaze! Love this recipe!

I made this cake over the weekend for a friend's 50th birthday. Never worked with ganache before or covered a cake as normally stick to cupcakes. It looked great and went done well, none left!!! Thank you Sally Dells for a great tutorial!!!

OMG, l tried this recipe just today. Infact l just finished baking it about 5 minutes ago. Its my daughter's birthday tomorrow. Initially l was a bit unsure because it was a bit liquidy and was tempted to add more flour. I said to myself to hell with it, am going to do as the recipe says. The final product : moist, not too sweet, spongy, chocolaty and no hint of coffee! I mean what more could I ask for? Cupcakes Jemma is my go to for cake recipes! Thank you.

Made this cake for my daughter's birthday and instead of the chocolate buttercream between each layer I added a peanut butter buttercream in the middle. Went so well with this delicious cake. Even better, the cake leftovers were still moist and delicious after a week in the fridge. This is going to be my go-to chocolate cake from now on.

Anyway luckily I lined them high, baked on 160 deg for 45 mins. They've turned out. Thank you. Tins are NOT created equal especially in supermarkets like the height. I was just about to ask how to adjust the oven temp and timing for a two layer cake. I've tried twice with the reduced recipe in 2 x 8inch pans at the same temp but left it in for longer longer. The second time I turned down the temp a bit but came out dry both times. So thanks for this comment. I am going to try it at 160c. Hopefully that works.
@@jones8928 I don't trust domestic ovens so always have a clip on oven temp as well! They run hotter and have uneven heat spots. Oh and my tins are smaller in height as well. I ended up making 4 layers with SMBC and choc drips. Was so moist.🧡
Thanks@@rubykeiss1540 . Yeah I use an oven thermometer as well. I turned it down to 175c according to the oven thermometer on the second try but that obviously wasn't low enough. The cake would be fully baked but the middle would still be wet and by the time the middle is done the whole cake is dry. Yeah I also need to play with the chocolate ganache. A bit too bitter for my taste so I might add some milk chocolate to that. I put caramel between the layers but I might try the SMBC.

just made this !!! did two 10 inch pans, put the ganache in the middle and cream on top with some strawberries to make it more fresh! tasted amazing will be making it again for sure!

This is a great cake! I waited until I’d made it before I commented. I made a mr men cake for my son’s bday using this recipe (minus the ganache) & it was A+++ Everyone thought it tasted amazing, so this will now be my go to cake for bdays! I’m no baker so I made it a few days in advance and froze each layer separately & defrosted the day before decorating to save my sanity & it was so so good! I used greaseproof paper on one and butter & flour on another layer and the greaseproof was better . And as a NON coffee lover I was a bit dubious about the cup of coffee in the mix but there was zero coffee taste. Not even a hint! Honestly, if you need a great cake that is easy & tastes amazing, don’t bother looking for another recipe, this is it! I tried another cake from another UA-camr but it wasn’t good at all (like I say I’m no baker) but this and the cupcake recipe from these guys are perfection and are mega easy too! It has taken me nearly 11 months to get to making this but did it last night. Made the following stupid mistakes: Did not let my cakes cool enough so one cracked, put 3 cakes on one shelf so one was a little under cooked and sank, did not make enough butter cream, did not use 35% cream in ganache used only 10%, so my ganache was a little too wet but it worked perfectly on the drip! Used sour cream and the coffee, Outcome....the cake was friggin awesome! Seriously thank you Sally, Jemma and Sam! I know why you have so many views, but I had the video running on a loop, this was extremely helpful. I kept saying WHAT Sally, wait what!!. I made this as my birthday cake and it was a hit even though all of the mistakes. I will perfect this recipe and include a photo for the next one.
Delicious cake! I made for a birthday celebration. I loved all the different elements, cake, filling, frosting. I used 2 9" pans instead and put all the buttercream in the center as filling. I will definitely increase the amount of ganache for the frosting. It could have something to do with the 9" pan size but I really can't imagine there would be enough ganache to frost 4 7" cakes. When I make it again (which I will!!) I will make a recipe and a half for the ganache.

I was making my Granddaughter’s birthday cake and oh my goodness how delicious!!! It’s light, moist and tastes wonderful (you definitely can’t taste the coffee). This will now be my go to chocolate sponge x
After watching this video 100 times, I baked this cake and it was a massive success. I used 4 10-inch cake pans by multiplying the recipe by 1.6.
Two of my cakes did crumble as I took them out of their tins so for the next two I baked, I left them in their tins until they were completely cool and they didn't crumble. I suggest you also leave your cakes to cool completely before taking them out of their tins.
The coffee in the cake was undetectable to my partner who hates coffee, but our friend who loves coffee and baking could taste it.
The salt in the icing between each layer definitely makes a massive difference; the cake had a perfect balance of textures and flavours.
I ended up making a massive cake as my first ever tiered cake and it was a huge hit! I will definitely be trying more of their recipes!
100% agree on adding the coffee!! This is very similar to my recipe, I will have to make this with my boys.

Really good recipe, I baked 3 "8 layers. Not very high but the quality of the sponge is definitely showing. I froze 2 layers and we ate one as a test for upcoming birthday. I'll definitely bake another batch to make a taller cake. I've also made milk & chocolate ganache, we prefer the milk. Good luck everyone.

I have tried so many chocolate cake recipies before but I never ended up liking them because I dont like very sweet chocolate cake. Srsly I always tell myself cupcake jemma recipies NEVER disappoint. I used to have a baking book, that I have lost, which had a recipe for a pudding that separated into a layer of sauce on the bottom and sponge on top. It gave variations for lemon upside down and chocolate upside down sponge cakes. I remember that incorporating fluffy whipped egg whites was key to creating this wonderful pudding. (You didn't make the sponge and sauce separately; they separated while cooking). It was cooked in a casserole dish, rather than a cake tin. It was one of the most delicious cakes I have ever baked. I would love to know how to make this, again.

If anyone else needs confirmation, you really can't taste the coffee like this in chocolate recipes. And it really does boost the flavour. Oh, and for a buttermilk substitute, just get natural (unflavoured) yoghurt and water it down slightly - say, 3 parts yoghurt and 1 part water

I love this cake. It's the ultimate chocolate cake. I made it minus the buttercream as I'm not a fan of it. But the cake itself it's amazing. It fulfilled my chocolate craving at the first bite. Can confirm… 12/10… best chocolate cake recipe. I was very skeptical about the coffee, but I trusted sally, it was amazing. I used decaf instant coffee, that I let sit for a while in the microwave (I was told that letting it sit makes it taste stronger)… it was amazing. I shamelessly had 5 slices yesterday 🙃

It was far simpler than I had imagined. Lots of bowls but the cake was perfect, even from my dodgy oven. The ganache was great and the buttercream ethereal and I managed it all with a hand whisk and spatula!

I tried out this cake in six inches pan with three layers. This was the best chocolate cake recipe I have ever tried out. Top was bit crispy and crumbled, however cutting off the top most bit made it perfect. This cake was so soft, moist and has an intense flavor of chocolate. I topped with strawberries as a decoration and the finishing was perfect 👍 thanks Sally for sharing this wonderful recipe!!

@@durrgashinisirijayan4698 Hi, I used the measurements mentioned for the 4 x 7" tins. divided the batter into three 6 inches pans and made a three-layered cake. It came beautifully :) however, the chocolate icing used within the layers was a bit too much for this if made with 125g of butter. Better to reduce the measurements of it and make a smaller quantity of chocolate buttercream.
