You probably figured this out by now if you were bothered. But, for the benefit of anyone with the same question, the way I would do that is to create both textures. Then use a 3d gradient on the alpha with the y+ and - set to the same size as the falloff he used. Then keyframe it to match the falloff. There may be a more elegant solution but that ought to work.

Great tutorial! But how would I swap between UV textures like the bottle and can texture? I watched his video on changing textures but it doesn't solve that problem. I can't UV unwrap a lathe object, but if I convert to editable then I lose the entire transition effect. Anyone have an idea how to do this?

You're missing the "ribbles" cocacola bottles have, I'd add that with a displacer and a texture on that displacer for the ribbles.
