This Pumpkin Cake is filled/garnished with cream cheese filling and topped with roasted pecans.
A Dreamy cake roll.
Recipe (use a kitchen scale if you have one)
Ingredients for the roll:
3/4 cup (100 g) of all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon of salt
1 and 1/4 teaspoon of ground cinnamon
1/4 teaspoon of ground cloves
1/4 teaspoon of ground ginger
3 big eggs (room temperature)
3/4 cup plus 2 tablespoons (170 g) of granulated sugar
1 teaspoon of vanilla extract
2/3 cup (240 g) of pumpkin puree (homemade or canned) NOT pumpkin pie filling.
Cream cheese frosting:
2/3 cup (150 g ) of Unsalted butter (SOFTENED)
1 and 1/3 cup (150 g) of Powdered sugar
11 oz (300 g) Full fat cream cheese (we used Philadelphia)
1 teaspoon of corn starch
1 teaspoon of vanilla sugar or vanilla essence /paste
a pinch of salt
Topping:
10/20 chopped Roasted pecans

Directions:
Preheat the oven to 375°F (190°C).
Set aside (at room temperature) the butter for the cream cheese frosting.
Line a baking sheet or line a Jelly roll pan with Nonstick Baking Mat/reusable Teflon Baking sheet (these gave us the best results) The roll came out wrinkles free and was very easy to detach from the sheet.
In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground cloves, ground ginger, and salt. Set aside.
With a mixer, in a large bowl, beat the eggs and granulated sugar until triple the volume (about 4 minutes), then slowly fold the pumpkin puree.
Mix a third of the dry ingredients into the wet ingredients. Repeat 2 times. Don't overmix the batter.
Pour the batter and spread evenly in the prepared baking sheet or Jelly roll pan then straight to the oven. Bake for about 13-15 minutes depending on your oven or until the top of the cake gently springs back when touched with your finger. Do not over-bake.
While the cake is baking, dust a scent-free linen/cotton kitchen towel with powdered sugar.
Let cool for NO more than 3 minutes. Then carefully grab the baking mat's edgest to lift the cake out of the baking sheet/pan and turn onto the kitchen towel dusted with powdered sugar.
Peel off (carefully) the Teflon baking sheet and roll the cake tightly and then set aside to cool completely on a wire rack.
While the cake is cooling, prepare the cream cheese frosting:
In a medium bowl with a hand mixer, beat the softened butter until smooth.
Add the confectioner's sugar and beat at low speed until incorporated, then whisk at high speed for about 5 minutes.
Add the cream cheese, vanilla sugar, corn starch, salt, and beat again for about 1-2 minutes.
Fill a piping bag prepared with a star tip (we used Wilton open star tip 21) with 1/4 of the cream cheese frosting and leave the rest in the bowl then move both in the fridge.
When the cake is ready, unroll gently and spread the cream cheese leaving 1/2 an inch of the edges (long side and short sides) unfrosted. Use the towel to get a good start rolling it, leaving it with the edge underneath, then wrap it with cling film and chill for about 1 hour.
Before serving, cut the edges with a serrated knife and garnish the top with cream cheese frosting and roasted pecans. If the cream cheese is too hard to pipe, leave it at room temperature for 5 minutes.

Ingrédients (gâteau)
100 g de Farine tout usage
1/2 c. à thé levure chimique
1/2 c. à thé de bicarbonate de soude
1 1/4 c. à thé de cannelle moulue
1/4 c. à thé de clou de girofle moulu
1/4 c. à thé de gingembre moulu
1/4 c. à thé de sel
3 œufs (température ambiante)
170 g de sucre granulé
1 c. à thé d'extrait de vanille
240 g de purée de citrouille pas le mélange pour tarte à la citrouille
Crème glaçage au fromage:
300 g de fromage à la crème entier (nous avons utilisé du Philadelphia)
150 g de sucre glace
150 g de beurre non salé (adouci)
1 c. à thé de fécule de maïs
1 c. à thé de sucre vanillé ou d'essence / pâte de vanille
une pincée de sel
Préchauffer le four à 375 °F (190 °C).
Tapisser une plaque à pâtisserie ou Tapisser un moule à gâteau roulé avec antiadhésives cuisson Mat / réutilisable feuille Teflon cuisson (ceux-ci nous ont donné les meilleurs résultats) Le rôle est sorti sans lignes et était très facile à détacher de la feuille.
Dans un bol, mélanger la farine, Levure chimique, le bicarbonate et les épices, une pincée de sel.
Dans un autre grand bol, à l'aide d'un batteur électrique fouetter les œufs, sucre granulé, le vanille jusqu'à tripler le volume (4 minutes), puis incorporer lentement la purée de citrouille.
Incorporer un tiers des ingrédients secs aux ingrédients humides. Répétez 2 fois.Versez la pâte dans le moule préparé, étendez-la en une couche uniforme.
Cuire au four préchauffé jusqu'à ce que le gâteau soit cuit (le dessus doit rebondir lorsque vous le touchez) environ 13 à 15 minutes.
Saupoudrer sucre à glacer sur un linge sans parfum à vaisselle propre.
Laisser refroidir le gâteau pas plus de 3 minutes.
Renverser immédiatement le gâteau sur le linge saupoudré de sucre en poudre.Retirer délicatement le mat.
En commençant par le côté le plus court, rouler le gâteau et le linge ensemble. Laisser refroidir complètement sur une grille.
Pendant que le gâteau refroidit, préparez le glaçage au fromage à la crème:
Dans un bol à l'aide d'un batteur électrique fouetter le beurre ramolli jusqu'à consistance lisse.
Ajouter le sucre glace et battre à basse vitesse jusqu'à incorporation puis fouetter à haute vitesse pendant environ 5 minutes.
Ajouter le fromage à la crème, le sucre vanillé, la fécule de maïs, le sel et battre à nouveau pendant environ 1 à 2 minutes.
Remplissez une poche à douille préparée avec une pointe étoile (nous avons utilisé la pointe étoile ouverte 21 de Wilton) avec 1/4 du glaçage au fromage à la crème et laissez le reste dans le bol puis placez les deux au réfrigérateur.
Dérouler délicatement le gâteau; retirer le linge. Étaler le mélange de fromage à la crème sur le gâteau. Rouler de nouveau le gâteau; l’envelopper dans de la pellicule plastique. Réfrigérer 1 h.
Juste avant de servir, coupez les bords avec un couteau dentelé et garnissez le dessus avec le glaçage au fromage à la crème et les pacanes rôties. Si le fromage à la crème est trop dur à tuyau, laissez-le à température ambiante pendant 5 minutes.
Did you really let the cake sit for 30 min out of the oven before you rolled it? For most jelly roll cakes I thought you rolled it pretty quickly after removing from oven when it's still warm.
