      A lot of cooking is seasoning to taste. You don't really need quantities of ingredients. If he says to add diced onion, add however much diced onion you want. Same with seasonings. If you want more garlic powder, for example, add more. You really only need exact measurements when you're baking or whatever you're baking will get fucked up. Cooking doesn't require measurements, for the most part.

      It takes a bit of practice, as a home cook; and it results in a lot of spilled food on the stove, but, once you get the hang of it, for me, it is my number one "chef-y" trick to impress family and friends! "Golly, I guess he really does know what he is doing!" :D lol

    Love it when you involve your children. I LOVE cooking with my daughter and she loves it too. My daughter is 3 and if she hears or smells me cooking she comes down immediately and wants to help. Truly beautiful, and an important skill to pass on.

    Just did the pork with sweet-sour peppers and onion. And it was faaaaaantastic. The pork was pretty standard but that mix of veggies done in this style went so perfect with it. What an amazing combo!

    In order for me to do a recipe, it has to be easy and look good. That "crispy crackling" thing, sucked me in. I've done two of his before, and they were good. But in order to make my permanent recipe file, to make again, it has to blow my doors off. #3 Pork Loin with lemon and sage, did exactly that. The only issue I had was what he meant by "hot oven". I guessed 400F and, the internal meat temp was only 133 degrees after 45 minutes. My loin was about the same size as his or maybe an inch smaller. Ten more minutes took the meat temp to 147 which is optimal for me.. I will do 425F next time. The lemon imparted a lemon fragrance, and slight lemon flavor to the meat. The crackling didn't disappoint, and it was very tender. This was the best pork loin I've ever had.

      But is it actually doable, he makes it look easy but how much time and effort for the pork loin? I’d love to try that one

    6:15 the pork and peppers were sitting in a pool of oil. I've seen Gordon complain about that in Kitchen Nightmare restaurants all the time.

      Marcus Chai that’s awesome! Now try another way!
      One of my favorites is taking a pork loin, season the outside, take a very large pot and add a couple tablespoons of oil, sear the outside in the pot, add 2 cups water after the outside is seared well, turn down to simmer, add an onion quartered and a couple bay leaves, cover and simmer for a couple hours.
      Make some boiled potatoes or dumplings and use the gravy from the pork loin on them.
      Awesome traditional German dinner! The pork just falls apart.
