Hey Jemma. If I were to reduce sugar in the recipe, do I need to also reduce flour or any other ingredients? If I do, do i reduce it proportionately or there’s a specific way to reduce the other ingredients? Thanks 😘
The sugar is adding to the texture and stability of the muffin as well as contributing to taste. I've found you can generally reduce the sugar by about 1/3 without making too much difference to most recipes, but don't reduce the flour as that is also interacting with several other ingredients. If you do reduce sugar, probably eat the muffins the same day you make them as they won't last as long.
Would you consider making a coconut cake? I can never find a good recipe online, so end up buying a Morrisons boxed version. But I’d love to make my own!!

I believe they use a french butter brand called lescure. They use room temperature butter so it's softer but not melty. Then they whip it for a while. Only after it turns white do they start to add in the extra stuffs. I hope this helps~ I can't find the butter they use around me so I just use what I can. It looks the same but I'm sure the French style butter tastes wayyy better.
I've used expensive to cheap butter. I can get mine white, light and fluffy just by making sure to cream it a good amount of time. Know this is going to sound nuts but creaming butter and sugar is one of my favorite parts of a recipe, lol... 🤷♀️

They look so good! I have a question though why did you use baking powder and not baking soda since you have already added buttermilk?

No! Ditch the premix!! You won’t be able to use the creaming method with it. Bake from scratch always! 😃

We wouldn't recommend reducing just the sugar - you'd need to alter all ingredients, otherwise the texture and rise of the muffins will be way off.
