- Question: Does anything say "SUMMER'S HERE!" better than a fresh cold Mojito? Answer: YES, a MOJITO CUPCAKE! But to be honest we would choose both if we could. This zesty cupcake sponge is infused with fresh mint and topped off with a delicious Rum buttercream, and if you wanna go all they then top them off with crystallised mint leaves (and make some extra so you have a little snack whilst you work). If you whip up a batch of these Minty, Limey, Rum-y cupcakes we promise you will invited to every party there is this Summer.

For 12 Cupcakes
Preheat oven to 175C (fan assisted)
125g Caster Sugar
125g Self Raising Flour
125g Softened Unsalted Butter
1/4 tsp Bicarbonate of Soda
Zest of 2 Limes
2 Eggs
1.5 tbsp Mint Milk (see below)
For the Buttercream
250g Softened Unsalted Butter
400g Icing Sugar
1-2 tbsp Minty Milk (see below)
1-2 tbsp Rum (for a non alcoholic version use all milk or add some lime juice)
Demerara Sugar and Lime Zest for decoration
For the Minty Milk
200ml Whole Milk
Big Bunch of Fresh Mint Leaves
For the Crystallised Mint Leaves
12 Mint leaves
1 Egg White
Caster Sugar

I made two dozen of these last night and took to work, for my lovely colleagues - it’s autumn here, cold and dark, and for our group a working the weekend at night. I suggested they put one of these into their faces and dream of tropic beaches.
We drive trains all around southern Sweden so we have very diverse break times, yet all two dozen were gone within 4-5 hours and were the talk of the whole shift.

Mojito reminds me of going to Nikki Beach in Miami ( they make the BEST mojitos) They serve it in a ice cold pitcher, with lime wedges, mint and of course rum 🍹Amoretti makes a beautifully balanced spiced rum extract, for people who can’t or don’t drink.

I just took my batch out and tried half of the cupcake without frosting. I was a bit surprised. These are pretty sweet. Anyone else find this to be the case? Usually your cupcake/cake batter doesn't taste as sweet as those here in the states. I'm making SMBC to frost with (can't stand ABC regardless of the final flavor). Next time I make these I'm going to use less sugar. Can't wait to taste the final bake... 😋

I haven't been this early in a long time. So excited for this one. Just one question. I already took a look at the ingredient list. I'm out of self rising flour. What do I need to add to my dry ingredients? I'm assuming baking powder but you know what they say about assuming, lol... 😟
yeah add baking powder to plain flour. there’s a tuesday tips video on how to do so😀
For every 150 grams flour add 10 grams bakingpowder (2 teaspoons)

Just until the are cool all the way through. Kinda depends on the room temp but about 30 minutes

New cupcaker here. Trying to make these for a Macmillan coffee morning tomorrow. I have followed the recipe but I seem to have less volume going into the cup. Also, I've got volcano tops - they are not flat. Nothing important - just wondering how I avoid the volcano tops for future coffee mornings. 🙂
